ARCHIVED Ground Beef & Turkey
Amyleigh0007 replied to cymrudenver's topic in Gluten-Free Foods, Products, Shopping & Medications
I always wondered about the "natural flavor" added to the ground beef from Walmart so I emailed them a few weeks ago. They use Cargill Solutions as their meat provider. They emailed me back very quickly and said the natural flavor is a rosemary tincture and it is gluten free. -

Many of you take B 12. What does it do for you? -
ARCHIVED Pizza And Bagels: Can Non-gluten Types Compete?
Amyleigh0007 replied to celiachap's topic in Gluten-Free Recipes & Cooking Tips
Andrea's Fine Foods makes awesome gluten free pizza. She is based out of St. Louis but she has a website and delivers all over. Her pizza is by far the best I've tasted and my very picky son agrees. I have to drive 45 minutes to get it but it's worth it. -
ARCHIVED 2 Year Old With A Gluten Allergy?
Amyleigh0007 replied to Luvbmr's topic in Parents, Friends and Loved Ones of Celiacs
Even if you can't see the damage it can affect you. My son has Celiac and many food allergies including wheat. We had no clue he had the food allergies because he has never had an outward reaction (swelling, difficulty breathing, hives). When he had his first endoscopy in March the GI said he had a rash and hives on his esophagus due to the food allergies... -
ARCHIVED Distended Belly
Amyleigh0007 replied to jcnfc's topic in Parents, Friends and Loved Ones of Celiacs
It took a few months for my son's belly to go down. We are 4 months into the gluten free diet and I would say it's almost gone. He has gained 7 pounds. -
ARCHIVED The Gluten-free Kitchen
Amyleigh0007 replied to Hummingbird4's topic in Coping with Celiac Disease
Your co-workers comment was rude. My house is gluten free and my family is not suffering. It's so much easier not to have to worry about CC. Plus, I only have to make one dinner. We are even raising our 11 month old daughter on gluten free food. We are eating so much healthier now, many more fruits and veggies and whole food. My son doesn't have to... -
ARCHIVED Does Anyone Else Feel This Way?
Amyleigh0007 replied to Amyleigh0007's topic in Coping with Celiac Disease
I feel like allergy testing is a last ditch effort to discover what is wrong with me. I realize that Celiac and allergies are two different things. My son has both Celiac and several food allergies so I thought that if he has them I might too. It might be a part of the puzzle that I'm missing. I also think IBS is BS. It's what doctors tell you when they... -
ARCHIVED Diagnosed Myself-am I Right?
Amyleigh0007 replied to tonyabeth's topic in Coping with Celiac Disease
It does sound right! I have IBS and would have never known about a gluten free diet if it wasn't for my son. He was dx with Celiac in March and after seeing how much his health improved decided to give it a try with him (plus having a gluten free house is so much easier). I have been gluten free for one month and my IBS symptoms are gone. I have had one... -
ARCHIVED Playdo
Amyleigh0007 replied to Nathan's mom's topic in Parents, Friends and Loved Ones of Celiacs
If my 8 year old son wants to play with dough I give him a gluten free clay such as Crayola, Klean Klay, or Model Magic. I gave my son's classroom teacher and art teacher a list of safe art materials and said if they have those it's great, if not, I will supply it. But, I work for our school district and I know that they will happily purchase the gluten... -
ARCHIVED Need Simple List Of Common "no-no" Items For Preschool Teacher
Amyleigh0007 replied to sixdogssixcats's topic in Parents, Friends and Loved Ones of Celiacs
Watch out for projects that use cereal. I teach first grade and I know that early childhood teachers do many projects with Fruit Loops, Cheerios, etc. You can always give the teacher a box of gluten free cereal for your daughter to use. Here is a list of gluten free art materials: Modeling Clay: Crayola, Klean Klay, Model Magic Glue: Elmer's and... -
ARCHIVED Does Anyone Else Feel This Way?
Amyleigh0007 replied to Amyleigh0007's topic in Coping with Celiac Disease
Thank you all for your encouraging words. I need to get over my lack of confidence and stick up for myself. I've been a doormat all my life though so that will be hard to change. I have no problem being assertive when it comes to my son's diet and I need to transfer that energy to my own life. I am having allergy testing next month so I hope that helps... -
I feel like since I am self diagnosed with gluten intolerance that I have no right to tell others they must change their ways to accommodate me. If I had an "official" diagnosis I would have been upfront with my dentist and told him I need gluten free materials. I have not eaten out since I started eating gluten free for fear of sounding "nutty" or "difficult...

ARCHIVED Two Steps Foward, One Step Back
Amyleigh0007 replied to Amyleigh0007's topic in Coping with Celiac Disease
Thank you for all the positive words. It helps so much to be able to vent to people who understand. -
I was doing so well. Only one month into the diet and I felt great! Last night I was so sick! It felt just like old times, before going gluten free. I didn't eat anything unusual, there is no CC in my house. The only thing I can think of that was different yesterday is I went to the dentist and started a box of Crest Whitestrips. Did the dentist use...

ARCHIVED Can Test Be Negative But Still Be Celiac?
Amyleigh0007 replied to jewlesD's topic in Coping with Celiac Disease
Wow! Your doctor sounds like a dream! When my test came back negative my doctor didn't want anything to do with me anymore. -
ARCHIVED Celiac - Gas, Bloating
Amyleigh0007 replied to Sawdust's topic in Coping with Celiac Disease
I was dx with IBS when I was 14 and have suffered the symptoms for 19 years. The only thing that helped me was a gluten free diet. It's only been one month on the diet but I can already tell a huge difference. Good luck! -
ARCHIVED Looking For Motivational Improvement Stories
Amyleigh0007 replied to Live2BWell's topic in Coping with Celiac Disease
Going gluten free has changed my life. I had never heard of Celiac Disease until my son was dx in March. He was a sick little boy but we didn't realize how sick he was until he started the gluten free diet. He has gained 7 pounds and grown many inches (I'm not sure how many but he has outgrown his jeans) in only 4 months. A few days ago my son and I were... -
ARCHIVED And So The Saga Continues.....
Amyleigh0007 replied to Robynhood's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Your story sounds familiar. I have had classic symptoms all my life (dx with IBS when I was 14) and when my son was dx with Celiac in March a light bulb went off and I thought that's what I had. I was CERTAIN I had Celiac. My bloodtest was negative. I decided to go gluten free anyway since my son is and what a difference! I feel like a different person... -
ARCHIVED My Baby & Husband Have Celiac... Need Advice
Amyleigh0007 replied to gatakat's topic in Parents, Friends and Loved Ones of Celiacs
My 11 month old only has two teeth so the foods I give her must be easy to chew (gum) also. I bought a food grinder and she eats almost everything that we do. She really likes mac and cheese (Tinkyada elbow noodles, Velveeta, milk). I cut the noodles in half. I also bake sweet potatoes and let them cool. Then I press the inside into little balls so she... -
ARCHIVED Ok I Give! I Actually Do Need Help
Amyleigh0007 replied to DeLina's topic in Coping with Celiac Disease
Living Gluten Free for Dummies is the best book I have read! It is by Danna Korn. She is funny, informative, and makes you feel like it's going to be okay. I felt much better about the future after reading her book. -
ARCHIVED Villi Damage-could Severe Food Allergies Cause It Or Only Celiac?
Amyleigh0007 replied to kmps's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
My son has Celiac and several food allergies including wheat, egg whites, peanuts, corn, and soy. His GI told us that the villi damage can only be caused by Celiac (not food allergies). My son's food allergies cause rashes and hives to form on his esophagus and the GI told us only food allergies can cause that (not Celiac). -
ARCHIVED Gluten Free Meats
Amyleigh0007 replied to echard's topic in Gluten-Free Foods, Products, Shopping & Medications
A few weeks ago I emailed Walmart's ground beef supplier, Cargill Solutions, and asked about the "natural flavor" they add to the ground beef. They said it is a rosemary tincture and it is gluten free. -
ARCHIVED Grrrr.......blood Test Results
Amyleigh0007 replied to ohsotired's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
My doctor did the EXACT same thing! The office called to tell me my tests were "normal" and when I got a copy of the results found out he hadn't run all the tests, only two. I called him back to see if he would do the other tests and he said there was no reason (even though my son has Celiac and I have all the classic symptoms- I'd say those are two huge... -

ARCHIVED How Long Till Improvement Shows?
Amyleigh0007 replied to my3monkees's topic in Parents, Friends and Loved Ones of Celiacs
For the first few gluten free days my son had an upset stomach (which he did not really have pre-dx) and had to run to the bathroom frequently. Then, everything was fine. It has been 4 months and he has gained 7 pounds and all of his jeans hit him on his shins. I told him today he has grown more in the last 4 months than he has in the last 4 years! This...
