My allergist dx me with gluten intolerance based on my family history (son has Celiac), symptoms (severe stomach pains and D after eating, fatigue, headaches), and a positive response to the gluten free diet.   12. My son was very picky. He had his 10 foods that he ate and they were filled with gluten (mac and cheese, chicken nuggets, cookies, crackers, etc.). Since he has been gluten free and his body is healing he is much more open to different foods.   15. Yes, symptoms can be different. My son's symptoms and my symptoms were totally opposite. Mine were all gastro and his were slow growth (no growth, really) and leg cramps. He was tested for Celiac around age 3 but tested negative. He was tested again at age 8 and was positive. I think he had Celiac back when he was 3 but it was too early to get a positive...
  16. Welcome to the false negative club! I'm not sure about the accuracy of Enterolab, but bloodtests for Celiac are wrong often (false negatives). I would say that if the diet works for you then follow it. If you eliminate gluten and you feel better then that tells you that you have a problem with gluten (according to my very wise allergist).   17. Yes! Fatigue was one of my biggest symptoms! I would go to sleep around 8. I would also take naps as often as I could. It's totally different now. I have much more energy.
  18. I had the scratch test done. It did not hurt although not touching the spots where the oil is would be hard for a toddler. I just got my statement and it was $280.

  20. I am doing somthing similar for my school's teacher dessert auction! I am making gluten free chocloate chip cookies. I branded it as "The perfect treat for somewith with Celiac, gluten/wheat intolerance, or allergies." I hope it brings in lots of $$$ because no one has made a "specialty" dessert before.
  21. I think rice cereal is easier to digest. I was always told that if you give babies fruit first they develop a taste for sweet stuff and they are more prone to reject veggies and other not-sweet food. I haven't given my daughter (12 months old) any other grains besides rice. She is gluten free along with the rest of the family.
  22. I am just venting to people who understand.... In the school I work, the school nurse sends out a list of all students who have medical issues so everyone on staff is aware. It's a pretty detailed list. My son was on the list (he attends the same school) and all it said was Celiac disease. There was no mention of his food allergies or his strict diet...
  23. Like Lori, my Celiac and allergy tests were negative. My allergist suggested I stick with the gluten free diet. She seemed to know much more about Celiac and gluten intolerance then my regular doctor. I feel better then I have in years. And, like Lori, I "tested" myself by eating chicken strips about 3 weeks into my gluten free diet and I will never do...
  24. Gluten free bread can be so gross! You really have to experiment and try several different brands. I like Kinnikinnik brand white bread. It doesn't crumble as much. I toast it and that seems to help it hold its shape a little better.
  25. If you or any of your family have Celiac or gluten intolerance use your/their experience to help your friend. Tell her your/their symptoms and what the gluten free diet did for you/them. People are so closed minded when it comes to Celiac and getting tested. I think it's because of the huge lifestyle change and they are scared. When people hear success...
