  1. I can tell my son has been contaminated when he falls asleep early in the evening. It's usually a fight to get him in bed but when he has been "glutenated" he will fall asleep on the couch around 6 p.m. Or, on the weekends, he will take an afternoon nap. His reactions happen within hours. He was eating Lays potato chips for lunch almost everyday during...
  2. My son has a Class 3 peanut allergy according to the RAST. April explained the RAST test perfectly. While he has never had anaphylactic reaction he does have reactions. Most of his reactions are internal. He very rarely gets rashes or hives on the outside. All of his reactions have been internal. He gets rashes and hives on his esophagus. So, please...
  3. And I totally understand your frustration. My son's second biopsy showed he still had damage and we figured it was from the foods that "are processed in a facility....." so we cut those. We also cut out all Frito Lay products (except Lays Stax) since I read on this forum that those cause problems in many Celiacs. I hope someone else has suggestions for...
  4. Getting tested for Celiac (or gluten sensitivity) will be pointless if you are not consuming gluten. It's my understanding that the Celiac bloodtest panel is the only test that would show gluten sensitivity so I'm not sure what test you would want your doctor to run to see if you are getting indirect exposure to gluten. I guess there is the stool test that...
  5. Make sure you are eating gluten prior to your testing. I believe it's equal to 2 slices of bread for at least 2-3 months, but if that is wrong I am sure someone will post and correct me. I was gluten "light" for 10 weeks prior to my testing and I am sure that's why my bloodtests came back negative. No one told me I had to stay on gluten for the test to...
  6. It was at Montarra Grill in Algonquin, Illinois.
  7. one more mile: I totally agree with you that allergies/intolerances can be brought on by trama to the body. I have had IBS symptoms since I was 14 but it never made me miss out on life. After my second C-section last August is when I really got ill and was living in the bathroom after every meal. My doctor found complications from my first C-section and...
  8. I was watching my local news this morning and they aired a story about a couple who left a $1000 tip for their waitress. They wanted her suggestions for a gluten free meal and she was very helpful. Wow! Now that might motivate other waiters/waitresses to learn more about gluten free foods!
  9. I made something like that for dinner tonight. I put chicken breasts in the crockpot with BBQ sauce. I shredded it and put it on corn tortillas with shredded cheddar. In the crockpot you can make a ton and freeze it.
  10. I am sorry you had such a frustrating experience with your daughter's school. I teach first grade and it makes me sad that the principal was so short with you. I can understand your desire to make sure your daughter is safe in school. I am very lucky to teach in the same school that my Celiac son attends so I am always checking on him during the day. ...
  11. It's a huge lifestyle change and I think that's why a lot of people are afraid to get tested. It's crazy that people would choose crappy food over good health. In dealing with your family, I look at it this way. Your daughter has a serious disease. You have to keep her safe and healthy. You are her mother. It's your job and responsibility to keep...
  12. I don't cook either so I feel your pain. I use my crockpot a lot. Just tonight I threw in chicken breast and BBQ sauce and served it over rice. Very easy. Amy's makes good frozen, gluten free meals. I keep Lara bars in my purse. I eat plastic wrapped sweet potatoes often. They are already washed and ready to heat and eat. I buy veggies that steam...
  13. I looooove sweet potatoes! I put butter and sour cream on them. My one year old could eat them for breakfast, lunch, and dinner.
  14. I overbuy but only because I live so far away from any stores that sell gluten free food. We have a natural food store that carries some flour and crackers and our Schnucks has gluten free pasta and cookies but that's it. It takes me 45 minutes to drive to the closest store that has a good gluten free selection so I stock up.
  15. I also had stronger reactions to pasta, especially 100% whole wheat pasta. 100% whole wheat bread bothered me too. I would have to run to the bathroom within 30 minutes of eating. White breads and pastas did not bother me as much but I would still get ill after eating them. I do not have Celiac, but I do have gluten intolerance.
  16. It's not too hard to have a completely gluten free home. I think it's much easier, actually, to have everyone gluten free. There is only one meal to cook and all food in the home is safe. There is no worry of cross contamination. The kids can get crumbs anywhere and everywhere and you can clean up after them and not have a worry. My one-year-old enjoys...
  17. Yes! I believe I am a perfect example of that. My blood test was negative but I have had the classic symptoms of Celiac most of my life. Plus, my son has Celiac. My allergist said that people get false negatives all the time. I feel 100% better since going gluten free.
  18. Eating out is hard. I have only done it a few times, when it was necessary. I usually get a potato, fruit platter, or salad. I have an allergy alert card for my son that I now use for myself too. Even though I don't have an allergy, it explains the things I can and can't have and the precautions that need to be taken in the kitchen. You can also do research...
  19. marissa088- That sounds like my story. All of my tests have been negative yet I have had a very positive response to the gluten free diet. My advice is to do the diet. It is so worth it. I feel better than I have in years.
  20. I'm sorry everyone had such terrible experiences with allergists. My trip to the allergist was my saving grace! She was great and was much more knowledgable about Celiac and gluten intolerance than my primary doctor. She told me bloodtesting is not always reliable and there are many false negatives and I sounded like one of those. She listened to my entire...
  21. Don't give up! When faced with a difficult situation (example - eat gluten vs. don't eat it) I find it helps to talk my way through it. I went back to work yesterday (I am a teacher) and there is always a TON of food at school. Parents are always bringing in treats for us. When I walked into the teacher work room there were lots of goodies and everyone...
  22. Tsunami - You are welcome. This forum has been such a huge help for me. I am glad I can give a little back!
  23. I love Emergen-C! I work with children and I drink that stuff everyday during the winter so I won't get sick. I'm glad to hear the orange flavor is gluten free. That's my favorite.
  24. My son had his adenoids removed because of ear infections.
  25. It's great that the cafeteria manager is willing to help you and your daughter, but, like everyone has said, the risk of CC is too great. I work in a school and lunchtime is CRAZY! They mean well but accidents can happen when there are so many children in one spot all hungry and talking and spilling things and well, you get the point. I pack a lunch for...
