  1. Just a word of caution on rice noodles, most of them contain wheat. But there are rice noodles and I think you would certainly find them at the Asian market that do not contain wheat. Just be sure to read the label.
  2. If you're having a problem with even the lactaid milk you might not have a lactose issue but maybe a casein issue. We recently discovered that this is my husband's issue and he's not celiac disease or gluten sensitive.

  7. So my husband found it a relief when he met me because he had always thought he had problems with milk. If he drinks a glass of milk or has a milkshake or a soup that's made primarily with milk he has bad tummy issues. He said he even tried the lactaid milk and still had bad tummy issues.   13. Yes. I have a life insurance policy through State Farm and my premium is twice that of a smokers because I disclosed that I have celiac disease. However, if you have it and do not disclose it, that can be grounds for them not to pay out on the policy.   18. I think the only reason to do it right now is if you need to claim some sort of resulting disability or work accommodation. I came out incredibly ambigious on all my testing except food sensitivity (which shows wheat rye barley oat amaranth millet and hops - so I have something a little more broad spectrum than just gluten going on for whatever reason)....

  21. I've pureed things like corn or green peas or broccoli and stirred it into the mashed potatoes and added cheese. I'm so glad I read this thread.. some of the previous suggestions are really good ones like the fruit jello and fruit ice cream cubes.
  22. Okay so what is everyone's opinion on Goats Milk instead of cow's milk? I know there's the lactose intolerant crowd and the caisen sensitive crowd and supposedly goat's milk is okay for caisen sensitive? I haven't looked into this yet, it's just what DH was telling me because he thinks he is caisen sensitive.

They have a very difficult job trying to sort out what is safe and isn't safe for a celiac because it is probably difficult to find someone who is just a celiac and doesn't have other sensitivities also and not all celiacs are the same as we know from here.
