Amanda, There's no point being paranoid and then going and finishing the ice cream. I understand the paranoia. I've only been at this for 2 weeks. I told my husband that I feel like I have self imposed OCD...I worry about where I set a spoon down when I'm cooking, since we are trying to have a "blended" kitchen. Actually, the kitchen is supposed to...

ARCHIVED I Didn't Have Any Symptoms
Beth in NC replied to Green Eyes's topic in Coping with Celiac Disease
A great site for support re: hysterectomies is www.hystersisters.com I had one three years ago and they helped me prepare greatly. I had a prolapsed uterus, but the reason they removed the uterus was because of a fibroid...that caused the prolapse due to the weight of it. I would get a second opinion though...it isn't a piece of cake. At least it wasn... -
ARCHIVED I Didn't Have Any Symptoms
Beth in NC replied to Green Eyes's topic in Coping with Celiac Disease
You must of had SOME symptoms or they wouldn't have done an endoscopy? Why did they do that? Maybe you mean you didn't really have GI symptoms. I have dealt with chronic constipation for as long as I can remember, but never though it was a symptom of this. Three days gluten-free and I have not needed any extra fiber or herbs to get me going and I was... -
Sooooo...what do people plan to do? Just buy stuff from companies that are geared toward Celiacs? I'm lost...if that is the case, then it could be the butter substitute...but I have been using the spray the whole time, so maybe not. When do these laws take effect? Will most of you end up calling the companies? Will they even tell us if they are...

BTW, my son is up your way this week at Mountain Top Youth Camp, just the other side of where the fire was on Sauratown Mountain. Not many times you hear of someone from Pinnacle online!

ARCHIVED Does Anyone Else Feel This Way?
Beth in NC replied to Amyleigh0007's topic in Coping with Celiac Disease
Amy, If it makes you feel any better, some people think we're nutty even WITH a diagnosis! I don't say that to discourage you but to just let you know that many times it is pure ignorance that you are dealing with. I know people with allergies to chocolate or other things and they KNOW they are allergic without having a blood test to verify it.... -
I haven't been able to go a whole week yet, without something getting me. Ugh! Around bedtime last night I started getting a headache and tossed and turned throughout the night...sinus congestion despite Claritin D as well. This morning I had nausea, gas like I hadn't had since going gluten-free, achey, weak (kept dropping the hair dryer). The only...

ARCHIVED Lactaid Pills - Kind Of Ranting!
Beth in NC replied to Sweetfudge's topic in Related Issues & Disorders
I woke up this morning feeling awful, just like I did a week ago (not even) when I got glutened from some crackers that I thought were ok. The only thing differently I did yesterday was Lactaid...my first one. And the pharmacist at Target even called them FOR me! I guess I'll have to search elsewhere for the culprit. I guess sometimes we just never... -
ARCHIVED How Do You Start gluten-free
Beth in NC replied to Gutbomb's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I can't remember if this was suggested or not, but keep a food diary, right down to the brand name. I'm also keeping a journal that briefly states my symptoms, or lack of them, each day as well. It will help you pinpoint problem areas. -

ARCHIVED How Do You Start gluten-free
Beth in NC replied to Gutbomb's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Amanda, I'm not quite two weeks into my new diet and I can already tell a difference in how I feel. I will say that the first few days after diagnosis I was a panic attack waiting to happen! My anxiety level was sky high and it wasn't because my meds weren't working. I was grieving the loss of how I loved to eat, of the easy lifestyle that was soon to... -

ARCHIVED Rice Milk .002% Gluten From Barley

Which of the Hemp milks would you put over cereal...Rice Chex...I was just loving getting a cold bowl of cereal when I realized the lactose intolerance. Original or Vanilla? -
ARCHIVED Rice Milk .002% Gluten From Barley
Beth in NC replied to BarbaQ's topic in Coping with Celiac Disease
Rice milk has gluten? I hadn't checked into it yet but was planning to now that I know I'm lactose intolerant. Wow! -
Yes, the nonstick pans can DEFINITELY be a problem. I can understand them still wanting some gluten containing products (it's the other way around here...I'm the mom with celiac disease and my husband and teenage son are ok), but she needs to get rid of ALL the cookware that could be an issue. Old non stick pots/pans, collanders, toaster, porous items like...

ARCHIVED Butcher's Section Of The Grocery Store
Beth in NC replied to Beth in NC's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Oh, Shay! I hope you do ok. I was just telling a lady at church that I felt like getting some goats for milk, cows for beef, a few chickens for eggs and meat...Guess I'll need a rice paddy too! Our absolute favorite place to eat is a local Mexican restaurant that we USED to frequent at least twice a week. The waiters and owner know us and many of... -
ARCHIVED Butcher's Section Of The Grocery Store
Beth in NC posted a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I got super frustrated yesterday as I was waiting for the butcher to wrap up a couple tilapia fillets for me. I only asked for a couple, since it will be just my hubby and I this week at home. This is only my second shopping trip since being diagnosed. I was looking at the long tray of fish, different fish on each tray in the meat case. Then I saw it... -
ARCHIVED Is This Lactose Intolerance?
Beth in NC replied to Beth in NC's topic in Food Intolerance & Leaky Gut
I just turned 45 and I honestly don't know how long I've had this. My GI doc thinks several years? I read somewhere that another member of this board went really bland at first...chicken, potatoes... I've done that this afternoon and evening, mainly just to calm things down. I think I'll stick it out like this a few days and see if my gut returns... -
I am on day 10 of being gluten-free. Initially I began to feel my energy return and my chronic constipation of as long as I can remember, disappeared. I did get glutened 3 days ago, I think, because my energy level plummeted, I was ataxic and my fibro pain increased. I'm still have not gotten back to where I was a few days before. Now I am having D. ...

My GI doc is in Raleigh and I've been pleased so far. I just went in with some weird abdominal pain up under my left rib cage and an ultrasound that showed fatty liver disease. He examined me and encouraged an endoscopy to see if he could find a cause for the pain, since a portion of the stomach juts over to the left or maybe referred pain. I don't think...

ARCHIVED First Gluten Reaction
Beth in NC posted a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I've only been gluten-free for a week and I have felt better since the switch. First thing I noticed was that I no longer have chronic Con. that requires supplements twice a day. I'm all on my own now. The other main thing is that my energy has been slowly improving. Sometimes all day, sometimes only half a day, but even if I'm having "fibro" pain, I... -
