Yes, from all accounts, seems like the best initial advice is to keep it simple. You will find, however, that there is more safe food out there than you realize. Well, lots of great advice here, for sure. I am the Celiac in my house. We do not operate a gluten free home or kitchen, we are just careful and conscious of our food prep. It was a little hairy-scary at first (on both our parts) but now it is old hat. We sort of just have his-and-hers pasta -- I make the spaghetti meat sauce with all the stuff... -

I'm scheduled for a CT scan of abdomen next week and must ingest a solution prior, it is called Readi-CAT. I looked it up online and called the Readi-CAT's toll free number (E-Z-EM, www.ezem.com) to make sure it is gluten free and safe for celiacs. Did anyone mention that you should not use their toaster? If you can't find those toaster sleeves that keep your gluten-free bread safe in a contaminated toaster, you could always just pick up a $10 toaster at a Kmart or something, and just leave it there until your next visit. -

Understandably, a diagnosis of celiac disease would concern most. However the sooner you know the sooner you can begin to heal. You don't want half a lifetime of damage. I'd get tested ASAP. Well since diagnosis last August I've found a couple gluten-free-friendly restaurants in the Denver area, and also figured out a few safe things I can have at our favorite Mexican restaurant. I haven't, however, yet tried our favorite Chinese restaurant. Wondering what everyone's experiences have been with Asian food and typical sauces, etc.

Like someone recommended, you could heat some things up on a grill (gas grill or charcoal). If you don't have one, maybe just pick up a little one, or even a little back-packer camp cook burner. The Hormel Natural Choice hams are gluten free, and it's even on the label. Also Boars Head deli meats (you could just have it sliced thick for your purpose) have it printed right on the front of the package, and I think all are OK. For me, it happens (feeling bad!) fairly soon after ingesting gluten. Usually within the hour, but a couple times has been a few hours later, but has always been that same day/evening. I try to be so careful since I, too, started feeling better within the first week (and especially after the first month) - I just don't want to ruin it (my progress). ...
