I've become a compulsive flour buyer (a new member of Flour Buyers Anonymous? ) Yesterday I found, and bought, Urad Flour from an Indian market. Today it was Yam Flour from an Asian market! Does anyone have any suggestions on what to do with either of these? Urad seems to be a type of tiny bean. Yams are, well, yams. Help! I'm running out of cupboard space...

I would definitely look into the enterolabs test for your daughter, but in the meantime, a very easy way to find out if gluten is her problem is to simply remove it from her diet. She may notice a difference in just a day or two. When I went gluten-free (without consciously meaning to,) two weeks later I was a new person. It is strange that something so easy... -

Lol! I just threw away a box of frozen gluten-free waffles because, imo and my daughter's, they were horrible! I love the cereal (my favorite!) but the Mesa Sunrise waffles are on my never to buy again list. Oh, the flax ones are great! (As are the banana and the cinnamon apple, these three are the ones my kids all like the best.) -

I'm mildly hypoglycemic (without diabetes as an added bonus, at least) and your reactions sound pretty typical of this. I can't let my blood sugar drop out or I'm a wreck. I use fine ground corn flour in a mix to make sandwich rolls and banana bran muffins. They turn out really nice! The mixture is 1 part each: fine ground corn flour, chickpea flour and soy flour. This flour is not extraordinarily fine, it's more like the rice flour from Bob's RM in texture than regular flour, so I always mix it with other, finer flours. However...

I often wonder this, too. Being on these boards makes me think there are more people like me (and my kids) than maybe there are. Then, this last weekend I went to a holiday party where there were only about 100 people. Guess what? There were 4 people (including me) with celiac disease. We were all stunned. Random sample and it was 1 in 25. -
Yesterday I made sandwich rolls that I usually use a mixture of equal parts chickpea, soy and corn flour to make with just quinoa flour. I use an Oster delux 2-lb bread and dough maker. It has 8 different bread settings, one is "bake" where it will start baking immediately, one is "quick bread" that will mix then go through one rise then bake (what I usually use.) Nancynet, I've been using DaVinci brand of flavored sugar free syrups (sweetened with splenda,) I called the company and they are all gluten-free. Just because he didn't test positive with the biopsy doesn't mean he's not gluten intolerant/sensitive or even just in the beginning stages of celiac disease. I think that is one very good reason why Enterolabs testing is better than the biopsy, thier tests let you know if you are intolerant/sensitive. Otoh, does he have pretty typical symptoms?
