ARCHIVED Newbie - If Not Celiacs, Then What? +blood Results
FreyaUSA replied to dmchr4's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Out of curiosity, did these children that got shingles have chicken pox? Sounds like a stupid question, but I'm wondering if kids that get the chicken pox shot can still get shingles. Anyway, make certain your daughter has a good multi-vitamin! Other than that, if she's like my picky 10 year old, she will find things she will eat. She may try to make... -
Fruit and yogurt! I ate neither before going gluten-free (though I didn't have anything against them ) and now, it's my favorite breakfast and/or snack. (And, it has to be plain, ff yogurt that I flavor myself. The premixed, sweetened, additived junk turns me off big time.) And fruit, I hadn't realized how sweet it is! Mmm... Oh, and I also eat beans almost...

ARCHIVED Blood Test Results Within Normal Ranges
FreyaUSA replied to dbuhl79's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
This is definitely the problem with the US testing/diagnosis of celiac disease. Here, either you have celiac disease or you are FINE. Isn't this like telling a smoker, "Hey, you don't have lung cancer, why give up smoking?" Just because gluten causes your body to react in extremely negative ways, just because you feel awful 90-100% of the time, is that a... -
I know the BK site says they are gluten-free. Meanwhile, you have to check out your own BK/fast food place. The BK one near me sent an onion ring home mixed in my son's fries (and we had three days of misery.) We no longer go there and because of this experience, I'm leery of all BKs now. So far, we've had no problems with McDs fries and the Wendy's near...

ARCHIVED Typical Daily Menu
FreyaUSA replied to dbuhl79's topic in Gluten-Free Foods, Products, Shopping & Medications
Oh! I sometimes have Cream of Buckwheat cereal. I really like it. In my grocery it's sold in the ethnic Jewish section, not that I know why... Here's something that I tried that came out great (and I bet you could do the same with any cream of whatever cereal) With 1/2 the liquid called for, make a very strong herbal tea of your choice. I've made it with... -
ARCHIVED Side Effects From Going Gf?
FreyaUSA replied to OhNoes's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
When first going gluten-free, many people tend to just cut out all the gluten containing foods, not necessarily replacing them with anything. What you're describing, the energy loss, tiredness, etc., is very common for people who cut carbs from their diets. You're not giving your body the easy energy it's used to! Adding to that, with celiac disease, you... -
ARCHIVED Typical Daily Menu
FreyaUSA replied to dbuhl79's topic in Gluten-Free Foods, Products, Shopping & Medications
I first went gluten-free accidentally by following the South Beach Diet. The first two weeks you have no grains or refined cr*p. I basically still eat that way, though I don't want to lose anymore weight. Lots of whole foods, vegis, lean meats, etc. (Basically, I eat a low glycemic diet, with the emphasis on the glycemic load rather than the glycemic index... -
ARCHIVED Birthday Cakes
FreyaUSA replied to JANELOVESGRAINS's topic in Gluten-Free Recipes & Cooking Tips
Connie, I just made (and tried) the recipe from Allrecipes. It is wonderful! I made 24 cupcakes and made it CF as well as gluten-free by substituting pineapple juice for the milk (I used only 1 cup sugar because of this) and lemon juice for the vanilla. (It baked for 19 minutes, btw.) These are very light and fluffy! (I was going to make the pineapple velvet... -
ARCHIVED Anyone Sick Of "eat Right For Your Blood Type"?
FreyaUSA replied to sashabetty's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
What makes me laugh is how people will swear that the eat for your blood type is true because by following it, they lost weight! Okay, if your blood type says don't eat anything with wheat in it... ...of course you're going to lose weight! Come on, we all know how much junk contains wheat. No donuts? No pizza? And, they lost weight? Then there's the "no... -
ARCHIVED "are You Going To Be So Strict About Gf?"
FreyaUSA replied to sashabetty's topic in Parents, Friends and Loved Ones of Celiacs
Just as people with DH can test gluten sensitive but not have a positive biopsy, other people who test positive only with the IgG anti-gliadan antibodies (thus not receiving the doctor affirmed celiac disease label) can have neurological manifestations of gluten intolerance (I've heard this termed "gluten ataxia" or "gluten neuropathy" in different places... -
ARCHIVED My Attempts To Make Bread :)
FreyaUSA replied to a topic in Gluten-Free Recipes & Cooking Tips
In Bette Hagman's, More from the Gluten Free Gourmet, she has a recipe for CRUMPETS. I made the recipe using her flour mix and it was very good. It calls for 1-1/2 c gluten-free flour mix. I then made it using 1/2 c chickpea flour, 1/2 c soy flour, 1/2 c fine ground corn flour, added 5 Tbs ground flaxseed (a heaping 1/4 c). I use 5 mini loaf pans rather than... -
ARCHIVED Teflon Pots And Pans...
FreyaUSA replied to Sharon C.'s topic in Gluten-Free Recipes & Cooking Tips
I guess this just doesn't make sense to me. Are we talking about teflon that is pitted and chipped or are we talking about the expensive cookware that is available now? I did replace all my cookie sheets and muffin pans, but I would think my pots would be okay (expensive stuff ) I haven't noticed any problems with my pots and pans, btw. But I do have... -
I would suggest you find one restaurant other than McDonalds that you can go to and be certain of getting a gluten-free meal. This might mean finding a time when you can talk to a manager and explain your situation with celiac disease. Once you are comfortable with one or two items on their menus (better if you don't have to special order anything) you won...

What an great board this is! Okay, so I bought some of those lactaid pills (store brand, actually) and, for the first few days ate them whenever I suspected something I was going to eat had lactose in it. It worked great! So then, I thought, I'd check to see what actually was giving me problems, testing and such. Now, I know, if I'm going to have something...

What coffees are NOT gluten-free? I had thought that we only had to stay away from flavored coffees (which I'm doing.) Have I been accidentally zapping myself every morning?

ARCHIVED Pumpkin Pie/apple Pie Crust
FreyaUSA replied to jaimek's topic in Gluten-Free Recipes & Cooking Tips
Mariann, gf4life, I found a tortilla press! I bought it at a little Latino market today. It weighs a TON. Iron or heavy aluminum, I'd guess. $7.88 I'm so happy! Tomorrow I'm making tarts. Now, three questions. How thin do I press the crust, what temperature do I bake them at and for how long? (I'm just so excited! The people at the market thought I was nuts... -
ARCHIVED Pineapple Velvet Cake
FreyaUSA replied to Sparrow78's topic in Gluten-Free Recipes & Cooking Tips
This looks like the same recipe I was given by a friend of mine with an autistic son. It's my kids' favorite cupcake recipe, all three of them, which NEVER happens. I usually top mine with premade cream cheese frosting (Pillsbury's is gluten-free and very good.) -
My kids love donuts! (I won't mention myself ) But, what is a donut pan? I've never heard of this before. Where did you get yours? (I'm a firm believer in gathering as many kitchen gadgets and things as possible.) I'd love to try this recipe as a special treat one day. Thank you for posting!

ARCHIVED Family Gatherings At Restaurants
FreyaUSA replied to SofiEmiMom's topic in Coping with Celiac Disease
Maybe do something special for the new parents? Call them up (mentioning how angry the aunt was and that you certainly didn't mean to upset them - don't mention the aunt because really, who cares now if you upset her?) and tell them because you had to miss this opportunity to be out with them, you would love to bring dinner over to their house. My bet is... -
ARCHIVED Do You Get A Reaction From Every Bit Of Gluten?
FreyaUSA replied to Mballerina's topic in Coping with Celiac Disease
I consider myself very sensitive, but for me that means after eating even a small amount (one crumb is enough) half an hour later I'm hit with a migraine. My daughter is about the same, but rather than a migraine, she's throwing up half an hour later. I wonder if Richard isn't right. What you describe sounds more like a reaction people allergic to peanuts... -
I hope this doesn't start sounding like "diet wars!" Lol! I HAVE to point out that South Beach is NOT a low carb diet. It's a GOOD carb diet. I eat lots of carbs everyday. Mainly carbs, in fact, because with my gastro probs, I've lost the ability to eat almost all meats without some upset (I can have a little -- like 4 ozs --chicken, turkey or fish a day...

My family and I (four of us who are intolerant) went to Logan's Roadhouse today for lunch. We'd been before and we've collected several bits of information... Bbq sauce is gluten-free Grill seasoning is gluten-free Ranch dressing is gluten-free Cheese is gluten-free Soups, all, are NOT gluten-free My son had a grilled steak, loaded baked potato...

My healthfood store is Healthway. They have a policy (here anyway) that if you are GI and buy gluten-free foods, you get a 10% discount.

ARCHIVED Gluten Related Neurological Conditions
FreyaUSA posted a topic in Related Issues & Disorders
I've been reading up on the neurological effects of gluten sensitivity by some people. It appears that elevated IgG alone along with a positive HLA DQ2, DQ8 or DQ1 marker are being recommended for a gluten free diet as well by some doctors studying this aspect.
