  1. What are common neuorlogical manifestations of gluten intolerance? I can't find much on the web, only a brief vague reference.

    Google schozophrenia and gluten! There have been tons of studies where gluten was taken away from whole wings of hospitals or whole units of prisons with remarkable results. And read "To Good to be True, Nutrients Quiet the unquiet Brain".

  2. RRRRR typed it all up and then lost it. OK so I'm going to Traverse City for three days on a business trip. I emailed the celiacs support group from that area and they sent me a list of 20 restaurants that are celiacs aware and most had gluten free menus. We also contacted The Great Wolf Lodge and Bowers Harbor Inn who both gracously agreed to cook for me to my specifications. I love my job! I will also be packing nuts, rice milk ect in the car just in case.

    Is it possible for you to contact a support group in the area you are visiting? I was freaked out when I first got this assignment but now I'm excited! Bowers Harbor Inn has a ghost and we've all been instructed to dress nice so she will welcome us into her home. What a gas!

  3. Loved the unsweetened almond milk but it had enough soy lethicin (sp?) to upset my digestion. I really like making my own almond milk when I can find unsalted almonds. Westsoy rice milk is cheap and easy to find. I just don't like that rice milk on cereal is just carbs on carbs, bad for my sugar. But when everyone else around here is eating ice cream, I have cereal.

    I don't drink any kind of milk. It's to expensive and I don't need to extra calories. I drink a couple onces of juice in a huge glass of water. And I take vitamin D and calcium in the morning with my coffee.

    About the muscle pain.... the damage to your intestine prevents you from absorbing nutrients and minerals like magnesium and iron. Low mag causes cramping. Low iron causes restless leg. I would try supplements. And forget the dirt nap, celiacs aren't quitters. Welcome to our world, the lastest figures say that we constitute 1/3 of the world not the 1 of 133 that you must have read a million times in the last week.

  5. Are you just tired or are you really concerned that what you are learning won't apply to your future?

    If you really have an interest in horticulture you could take a few classes in that area. Agri-tourism is one of the few growing fields here in Michigan. People will drive from three states away to pick fruit to haul back home. And then there are the folks who are into localvore - eating just those things grown within 100 miles or their home. I'm not sure how this is viewed in other parts of the country but here stores are labeling Michigan products because people are willing to pay extra for locally raised eggs, fruits and veggies.

    There are opportunies out there, I would just encourage you to follow a path that holds your interest. A few years ago I gave up a really good paying job because I just couldn't stand it anymore. For a couple years I worked low paying jobs, one that I really liked and a couple that were just paychecks. The one that I really liked turned into an opportunity that will eventually pay better than the one I left. In the old job my attendance was horrible, in the new job I rarely think of missing a day. No one can greet my customers for me, I have to be there for them.

  6. I bought coconut oil at the health food store once. Used it in baking and even to fry eggs. Between olive oil, coconut oil or lard I couldn't decide which one was worse on eggs <_< . I finally got use to the taste of olive oil and don't even notice it anymore.

    I'm wandering, so back to the point ....We found that keeping coconut milk in the fridge so it stays solid works pretty well and is less expensive than the oil for baking.

  7. I love the 90 second yummy bread made in the microwave in those little plastic containers that are shaped like bread. You know the ones with Dora the Explorer on them, I found them at the dollar store.

    It's so easy to mess around with the recipe to get something that you like.

    We've been making "cinnimon toast" by making the bread with apple sauce and cinnimon before bed.

    Just got a dedicated gluten free toaster a few days ago. I still can't do butter but the kids can. I've been using jam on mine.

  8. Our doctors were willing to DX on positive response to a gluten free diet (and negative response to screw ups :blink: )

    My Dr. wrote the dx down on a prescription pad. I keep this in my purse and have pulled it out to show relatives and co-workers who joked about my illness being all in my head.

    You may want something like this for in-laws, out-laws, ex's new girlfriend, teachers, doubting Thomas's.....

    Also something to keep in mind. Homeschooling is legal in most states. Some people choose to keep their children home until they are old enough to understand and control their own diet. We used the Calvert system for awhile. It was very well put together and easy to use.

    You are not alone, you have us. If there is anything we can do to help, please let us know. There are a lot of great guys out there who are also celiac or are just caring enough to want to understand. It isn't even an issue in our house, all shared meals are gluten, soy, dairy free period and my BF who has no allergies does most of the cooking.

    He loves us :D

  10. Different foods have different amounts of gluten in them. As an example, I've read that whole wheat bread has more gluten than white bread. The amount of gluten it takes to cause a reaction is different for each of us. For some a bread crumb is a killer, others will take the bun off a hamburger and eat the meat. I'm from the "a crumb is a killer camp" and can't stand to watch my co-worker eat a newly bunless burger. I just know it cannot be ok for him to do that but ............ I'm not his Dr. or his Mom.

    Also, most of us ate glutened foods and sustained damage to our intestines for years before we had obvious symptoms. Just because you aren't sick doesn't mean you aren't hurting yourself.

  11. Dairy does this to me. For a long time I thought my hip was out. I went to two chiropractors. The back pain went on for several months before I developed obvious dairy intolerance, then dairy protein allergy, soy protein allergy, allergies to many other favorite foods. Looking back it seems the celiacs was causing leaky gut.

    Since going gluten free I've tried small amounts of dairy twice. Both times the back pain that feels like my hip is out came back. I have not had that pain without the dairy in all these months not even when accidentally glutened.

    Is there a relative on his side of the family who will listen? I've found my ex-mother-in-law who never liked me to be a great asset. When my ex has visitation it is usually in her home. She looked celiacs up (probably with the intention of proving I'm nuts) and has decided that my younger son, the one she is closest to, probably has it. So now it's all about cookbooks and how to protect the children. It is different for us because my kids are old enough and independent enough to speak for themselves. But there have been a lot of issues where I had the kids go talk to grandma if dad was being difficult. It's dirty and underhanded but it works!
