  1. If you took the blood test without eating gluten, you could have gotten a false negative, because you weren't having the immune reaction the test is looking for. People report various reactions to gluten, so your having trouble sometimes but not others doesn't seem out of place to me. The bottom line is, you can't eat gluten-free in the military. Jax Peters...
  2. Hi! I think it's great that you want to get healthy. My first question is: have you seen a counselor? Even if you're not still binging and purging, a counselor can help you get your mind around how to treat yourself right and be kind to yourself during a process that is far more mental than it is physical. In terms of food, most people recommend 6 or...
  3. I'm not sure what she's referring to, but when I buy them, I just heat them in the microwave or pop them in the toaster oven for a bit to soften them up. I don't fry food, ever, but you could.
  4. Thanks for the advice! I'll give it a try. I've been meaning to go by Wal-Mart to see if they have the new Betty Crocker goodies, anyway!
  5. I wasn't anemic, so no, not everyone is. If you don't like your doctor, shop around! People say that calling it "celiac sprue" means he's hopelessly out of date, and in some cases I think it does. My doctor calls it that, too, though, and he's been great about helping me with this. He's learning too, and willing to do what it takes to help me heal. So, you...
  6. Yeah, I never buy the seasoned stuff. This is just me, but shelf-stable meals-in-a-box freak me out. I've bought Uncle Ben's regular, non-seasoned, long-cooking rice and been fine, and also Mahatma. I haven't heard about rice being processed with wheat like oats are.
  7. Shouldn't all rice be okay, if it's not one of those shelf-stable flavored mixes? I've used whatever was on sale at the grocery store and never had a problem. Have I just dodged a bullet?
  8. I'm glad you're feeling better! I was on Topamax for about a year, and then I started having really horrible side effects from it and had to go off. Also, the doctor never told me it cancels out birth control. Fortunately, nothing unexpected happened, as it were, but I was very annoyed at not having been told. I have to go to the chiropractor for exactly...
  9. I like the bread mixes! I also like Pamela's and Gluten Free Pantry mixes. I haven't tried any other BRM products yet, but I have some, so I'll re-post when I do.
  10. I'm guessing going gluten-free isn't going to stop my migraines. It's been six weeks and I still get them sometimes. Sigh. I'm happy for all of you, though!
  11. Right - I never said rice was LOW in carbs, just that it's got added nutritive value in the form of fiber and protein. She was looking for healthier grains in addition, I believe, and weight loss advice. I did not mean to be misleading in my response, I apologize.
  12. I'm going to ask my doctor about this and report back, but my understanding is that gluten acts as a neurotoxin, which is why some people have seizures if they're undiagnosed. I'll check it out, though.
  13. I second the proposal to get the blood work done. Super-easy, and then you know. You can decide for yourself whether you want to then proceed to the endoscopy if the results are positive, but at least get the test done! Also, have you seen a neurologist? They might run some other tests (even if you do have celiac disease, that doesn't mean you don't also...
  14. Daphnelia: We have the same breakfasts! Weird! For lunch, I like to make salads. If I don't have time to chop things, I'll make a turkey (Boarshead) sandwich with gluten-free bread (ONLY home made, though - I have never been a bread snob, but I can NOT stand store bought gluten-free bread. I've tried lots of kinds and just can't deal with them) and have...
  15. I'd recommend looking for complex carbohydrates, like brown rice, quinoa, teff, millet, and flax (and products made from these, like brown rice flour and pasta, quinoa pasta, etc.). Whole-grain carbs give you fiber, not just sugar and starch. Also, some vegetables are starchy (like green beans, corn, peas, and potatoes) and tend to have less nutritional value...
  16. It should! The bottom line is, I think, that you a) coat the chicken with some liquid and then roll it in some powdery substance that is seasoned to your taste. Before I went gluten-free, I'd dip shrimp or chicken tenders in barbecue sauce or EggBeaters and then roll it in crushed Fiber 1, and watch as my boyfriend ate almost everything and left none for...
  17. You could just coat the chicken in something else before you roll it in the corn flakes, like barbecue sauce, that would also give it more flavor.
  18. Can you order them on Amazon? You'd probably have to order cases of six at a time, but maybe you could split them with someone else, or just, you know, stock up?
  19. I'm not sure about dates (though that e-mail makes them sound safe) but you could substitute raisins, I'd imagine. Also, I believe all Sweet Energy dried fruit is gluten-free, but you should probably double-check.
  20. Well, it's important that you have a balanced diet, with fat, complex carbs, and protein at each meal. Be sure you're eating several small meals a day to keep your blood sugar stable, and find ways to add healthful but calorie-dense things to your meals (olives, avocadoes, peanut butter - all of which are good for you). I believe Ensure shakes are also gluten...
  21. African Americans definitely get celiac disease. It is pretty evenly distributed across every ethnic and racial group (with the possible exception of the non-diasporic Japanese, who seem to get it less). Your doctor doesn't sound like s/he's that up to date on things. If I were you, I'd consider going back on gluten and getting an endoscopy, but that's entirely...
  22. I second all of the above. Amaranth is also great.
  23. Coke, Pepsi, and Dr. Pepper are gluten-free because they don't have gluten-containing ingredients and aren't processed on any cross-contaminating machinery. They are, of course, terrible for you, whether in diet or regular form (I say this as someone who occasionally caves and has a Diet Coke because they do clear up my headaches). They're essentially chemical...
  24. Hi! You've gotten some good advice here, but I'll throw my two cents in anyway. My first cent is to advise you to decide whether you can really stick with a low-carb diet in the long run. My dad has been on the yo-yo for the last ten years with Atkins, and it's not improving his health, to say the least. If you want to do a specific program, Weight Watchers...
  25. Might you have been reacting to the chemicals in the smoothie? The only thing that's really calorie-free is water, and to get anything else close, it needs a lot of chemical intervention. I don't do well with that kind of thing at all. I tried some calorie-free preserves from Walden Farm once out of sheer curiosity and felt really sick after.
