  2. I've found Manny's corn tortillas here in our store, looked them up at the company's website and they should be gluten-free. And LaTortillaFactory makes gluten-free teff tortillas - check the www.latortillafactory.com, I'm almost sure they are rice-free as well. PS: I still haven't found any starch free sour cream and gluten-free jerky here.

I can't say I'm obese, but one of the effects of undiagnosed celiac disease in me was gaining weight - to my 105lb I added about 25lb fat while losing muscle and not able to reverse this process, which was very unusual. Now after less then 6 months on gluten-free diet I'm still overweight but it gets better as my body recovers and fights off other health...
  4. Most celiacs I know use flax seeds as a "healthier" substitute to xanthan or guar gum. Just grind a spoonful of seeds and add a little hot water. In sweet cakes you can add shredded apples to the mix. (I have three apple trees in my garden, so I use them often.) The last few year before I was diagnosed (this year) I had problems with gaining and then losing weight unpredictably and with no explanation (stress, diet...) - usually 3-4kg in a single week, then lost some of it, in total I gained over 15kg but lost a lot of muscle at the same time. I tried to work out as I was used to, but I was steadily loosing my strenght...

  7. Hi, I just moved to Dawson City, Yukon. I'm originally from Europe and to be honest, I have hard times adjusting to the canadian-style gluten free diet. If anyone of you have time and patience to answer my probably trivial questions, I'd be really grateful. Have a great day everyone! Pavla
