Did your mom clean the owen before baking the gluten-free cake? I had similar problems after going gluten-free and it took me over a year to find the culprit - cross-contamination. I am very sensitive and many things that would never even cross my mind as possible trouble-makers will make me sick. Eating food baked in "glutened" owen is a big no-no for me... -

Can't help with gluten-free inhalors, just wanted to say that Pulmicort made me sick too. Nothing serious, just persistent neuro issues - cramps in my forearms and similar stuff. I don't use anything now and I'm fine. -

I voted no but I too have problems with some meats depending on their origin. Cc might be part of the problem as things got better after I started washing eggs well before putting them in the fridge (chicken eat wheat and lay eggs in straw) and washing all meat before cooking (to avoid cc from breaded stuff). For the same reason I stopped buying minced meat... -
I was thinking exactly the same. On the other side, I too get sick from some milk brands while others are perfectly ok.

Does the swelling get better or worse during the day? I used to have terribly swollen fingers and ankles before going gluten-free and I only got rid of it after being completely gluten-free. The slightest gluten exposure and my fingers are swollen again. Things that make it worse in my case are eating late (3-4 hours before going to bed) and drinking too... -

I can't help with the tests, but if you suspect soy, dairy or peanuts to be a problem, then avoid them strictly for at least a few weeks (4-6). If the symptoms disappear, add them back one at a time. You don't really need any of those three to get enough protein. Just (nixtamal) corn and beans alone will provide you with enough protein and all important... -

As a chocolate-lover allergic to almonds, I totally agree. Can you eat other nuts? You can substitute almonds with hazel nuts, walnuts or whatever is cheapest where you live - like poppy seed. -

1) Yes, this definitely does sound like gluten. 2) You can try eating wheat-free rye bread or something else containing rye/barley but not wheat to see if it is gluten or just wheat you are reacting to. -
That's an interesting info. Thanks for posting it. I have a grinder too and never had problems with quinoa tasting bitter, even if it was ground very fine. I rinse the quinoa with boiling water 3-4 times and dry it before making the flour, so maybe that is enough to get rid of the saponin. eggs, fish and milk also belong to main allergens and they don't need to be on the labels (at least in some parts of Europe). I did react to some wines (in Canada and Mexico) exactly the same way I react to rye and wheat-based alcohol. I get cc from being intimate with my dh. So no kisses after eating gluten and he has to wash his face and hands when he comes home. (The whole household is gluten-free.) Even like that I usualy get itchy rash when he kisses me on the cheek withing several hours after eating gluten.

In my case the onset of symptoms is 1/2 to several hours after glutening, duration depends on how much gluten I ingested (or breathed in) - several weeks to several months. In july I accidentaly ate a bag of gluten cookies (the gluten-free package looks exactly the same, same name color... just the ingredients list differs) and I only started getting better... -

I was diagnosed with casein intolerance (IgG antibodies) while being tested for gluten/celiac (which tested negative). I'm extremely sensitive to gluten, but I don't avoid casein much. I use polenta whenever my recipe calls for coarse-ground flour. It works well for me, but I've never seen a cornmeal in my life, so I can't tell the difference. Isn't polenta just italian word for cornmeal? :-)
