  1. Here's a stretch, lol! I have been gluten and alot of other food-intolerant for about 3 yrs now. In that same time-frame I have had real problems with my memory. Granted, I'm 50 and its not uncommon for women at this age to suffer with memory problems while going thru menopause. But it just hit me and I'm wondering if there could be any sort of correlation...
  2. good luck with the allergy tests!! I have not been diagnosed as Celiac either and when I did the allergy tests, none of the foods that suddenly was a huge problem for me showed up on them! A few that I didn't seem to have a problem with at all did, but not the ones that did. Go figure! My docs couldn't explain anything except perhaps a shift in my hormones...
  3. I don't know that lowering your fat content will solve your problem, but everyone is different. I started out being lactose-intolerant before my gluten issues kicked it. I was living in WI at the time (LOVED all my cheeses, frozen custards, etc.) and as it kicked in only choice items was bothering me. It took years for all of it to be a problem. ANd I...
  4. well, I wasn't gluten-intolerant when I was pregnant and I didn't breastfeed. But my first thought was iron or iron supplements or medications. Alot of iron or taking iron supplements will tend to constipate one. And some meds will. Are you taking any of the above??
  5. you are right. If one is familiar with cook, however, it is common for "browning" meat before cooking. It seals in the juices and gives the meat a nice brown appearance. Anytime you have a thick sauce, assume its because of flour. If it weren't added, sauces would be broth-like. Yes, it can be accomplished with cornstarch and other agents, but most commonly...
  6. THANKS FOR THAT INFO!!! We've been on one cruise but it was before I started having all my food issues. We've would LOVE to go again but my eating needs is what was stopping us! I have alot of other food intolerances besides the glutens but maybe if they just know ahead of time. I HATE being so high-maintenance! : P
  7. I have had the best experiences from brands that are small and Latino. I get alot of problems with cross-contamination (I'm guessing) in plain tortilla chips but found a brand that is small. They don't do all the flavors that alot of the companies do. Bingo! And the Masa is the same. Small, Latino company brands.
  8. I think you have to live this to get it. I have to be equally careful about cross-contamination. I know some people in my family (fortunately, not hubby) are sympathetic but also think I'm overdoing it and just being high-maintenance.
  9. between your issues and your daughter's, you have all of my issues pretty much covered! Add rice to the two of you and you have me. It does make things very hard! I wish I knew how to help you get perogies....I'd LOVE to have some too! I am still trying to learn to cook A LITTLE for me. I think I would use my Ancient Harvest Quinoa pasta and then mix...
  10. my first thought is that could you possibly be intolerant of other things too? I have discovered I am intolerant of rice also and thats an alternative that is usually used when making something gluten-free. My only other thought is that perhaps they don't do all the cleaning that's necessary to be "certifiably" gluten-free between their making of the...
  11. Two things. Is the food she is eating being checked for glutens in the ingredients, in spite of it normally being considered a Ok food? There are alot of lunchmeats, etc that has filler glutens in them in you least expect it. Did she give them a list of Ok food and they are simply serving her those without looking at the ingredients? There's glutens in...
  12. You are so sweet to want to be such a thoughtful hostess! You need to find out, first, if gluten is her only issus. Many Celiacs have multiple foods that bother them. If she's like me, she doesn't want you making a fuss over her but feels obligated to eat things served because they don't want to hurt feelings. Sticking to good, whole foods is always safe...
  13. My body turned on me about 3 yrs ago and after alot of trial/error and research on my own in addition to dr. appts., I believe that leaky gut is the result of food intolerances. For me, it seemed to be what I noticed more than anything at first. It took healing that leaky gut before I could focus more on the food intolerances. I found that doctors don...
