good luck with that! I've lived just north of Ann Arbor for nearly 4 yrs and have been gluten and various foods-intolerant for 3 1/2 of that. I haven't found any docs that is very knowledgable on the subject yet. But perhaps I just haven't found them. I get tired of going from doc to doc/appt to appt and just try to modify my needs on my own more. With...

I'm jealous! When my food intolerances kicked in I lost a good, solid 6 pounds! Like you, I could stand to lose 80 (or more). You would think that suddenly not eating processed, grains, dairy, rice, nuts, eggs.......I could go on, that I would weigh 90 lbs in fast order. But NO! Perhaps you are subconsciously eating less or have changed your eating more...

ARCHIVED Constipation?
jststric replied to glutengal's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I have always been a meat eater, but became much more of one once all my food intolerances kicked in. It was the few safe things for me. I found that sudden shift into more protein made me constipated also. Make sure you get plenty of veggies and fruit and try not to o.d. on the meats. Also, if you are suddenly getting alot more iron in your system, that... -
ARCHIVED Allergic Reactions To More And More Foods!
jststric replied to MomOf2PrettyGirls's topic in Related Issues & Disorders
I'm so sorry! I know EXACTLY how you are feeling though! Three years ago I was going thru the same thing. I finally narrowed all my trigger foods down to wheat, dairy, eggs, nuts, beans, rice. I did the allergy testing and none of those showed up, but two or three other things did and I had never been bothered by those things. I was encouraged to read... -
I like the idea of asking the catering company about gluten-free choices. I have alot of other intolerances/allergies also, so if it were me, I would simply eat well before attending and perhaps taking a small baggie of snack food so I could add a beverage or two and feel good about socializing.

ARCHIVED Any Ideas For Dairy Substitutes?
jststric posted a topic in Gluten-Free Recipes & Cooking Tips
I have been very intolerant of dairies for years and then all my gluten issues (and many others!) popped in about 3 yrs ago. I have done OK substituting soymilk and tofus for most of my dairies in cooking/eating. I have recently been told I have way too much estrogen in my body and was given a prescription for progesterone (I'm also 50 and peri-menopausal... -
ARCHIVED More Food Issues Than Gluten
jststric replied to Shoshannah's topic in Coping with Celiac Disease
I also am very intolerant of dairy, eggs, nuts, beans, rice, peas, and some spices such as chili powder and anything very hot. Yes, its a pain!! I don't know what to tell you to help make it livable. It's not easy. It's just something you have to get used to and find a mind-set that your diet is very limited. One thing you might consider is cross-contamination... -
ARCHIVED Problem With Gluten Free Breads
jststric replied to tfrankenberger's topic in Parents, Friends and Loved Ones of Celiacs
I cannot have alot of gluten-free products because I'm also intolerant of dairies, eggs, rice and beans!! Rice and bean flours are staples to the alternatives of gluten flours. And alot of breads have dairy/casien and eggs in them! So, finding a bread that is gluten-free, bean-free, rice-free, egg-free, and dairy free......just doesn't happen, lol. I... -
ARCHIVED Cheapest Place To Buy gluten-free Foods Online
jststric replied to Becci's topic in Gluten-Free Foods, Products, Shopping & Medications
It has been MY experiene that after looking at many sites for gluten-free foods, that most run the exact same price as I find them in the stores! It could be that someone else knows more than me on this subject but I have been looking around. I have concluded that the upside of shopping online is that you can get quantities that may be more than a small... -
ARCHIVED Xanthum Gum Vs. Guar Gum
jststric replied to TotalKnowledge's topic in Gluten-Free Recipes & Cooking Tips
Knox gelatin? What kind of baking and purpose do you use that in? I haven't yet learned how to bake/cook much with the different flours, etc. It's overwhelming to me. Any great tips or secrets to make it easy? -
ARCHIVED Gluten Free In Chicago
jststric replied to Lawspike's topic in Traveling with Celiac Disease
I have not been ALL OVER Chicago at all, but I can highly recommend Webber Grill downtown in the Magnificant Mile!! They do alot of their cooking on large Webber Grills....so its all made-to-order, fresh and grilled. Decent prices (or WAS, about 5 yrs ago) and very nice servers. Best wishes....and when you return let US know what you found!! : ) -
ARCHIVED Wheat Free Shrimp Paste?
jststric replied to munchkinette's topic in Gluten-Free Foods, Products, Shopping & Medications
lol, I didn't know there was such a thing as shrimp paste! I guess being from KS it didn't come up alot in recipes, lol. Unfortunately, "making it yourself" is something most of us have become very familiar with. Trial/error and experimenting is the name of the game...unfortunately. But, it's kinda fun to finally figure something out and get it right... -
ARCHIVED Crackpot Theory?
jststric replied to Jonbo's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Interesting theory! I think back on when things started happening to me and realize it was right after we had to move away from WI for a second time and I didn't want to leave. We've moved all over the country and moving certainly was nothing new to us. Didn't think I was THAT upset. hmmmmm................. -
I feel your frustration! Not only is glutens in the weirdest things, but I think milk is in even more weird places! You simply need to read the labels of absolutely EVERYTHING. It takes awhile to catch onto and you will "grieve", if you will, the loss of being able to enjoy some foods you used to love. But after awhile, the symptoms you suffer simply...

ARCHIVED Celiacs Absorbing Iron?
jststric replied to Sparkle1988's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Interesting correlation! I used to have a very healthy iron level and donated blood regularly. But two or three years prior to discovering I was gluten-intolerant, my iron level started dropping and I can no longer donate blood. My doc says its not anemic, but runs on the very low side of normal. She had me taking an iron supplement but I eventually had... -
ARCHIVED Frustrated, Hungry And Need Help Super Sensitive People Please Respond
jststric replied to littletsunshine's topic in Coping with Celiac Disease
I have found that the prices of those specialty items don't differ between Walmart and more upscale stores such as Whole Foods. So, price comparing is kind of a waste of time. THe biggest problem is supply. I have found that the same prices are found ONLINE also but you can find amazing things you'll never see in the few stores here/there. I think the... -
I've read that breakouts can be as far as 15 days after being "exposed". That's A LONG TIME to wait and wonder!! Be sure to journal and keep track of everything you eat so that you can gain a clue about how fast your system typically works, how much you may have been exposed to and how badly you were affected and simply what may have bothered you. If you...

ARCHIVED Why Can't People Understand?
jststric replied to RideAllWays's topic in Coping with Celiac Disease
I would agree with the statement that if they don't live it themselves, they simply cannot understand. My husband, try as he might, DOES get it, but every so often even he lapses, lol. I'm 50 and only had my issues about 3 yrs now and I had to go tend to my father while he was dying and my mother simply could not understand either. She thought I was making... -
ARCHIVED I Got Glutened At Bonefish Grill
jststric replied to Jeanniebug's topic in Gluten-Free Restaurants
I'm so sorry. I've eaten at Bonefish a few times and always had very positive experiences. My problems are multiplied with dairy and egg and egg intolerances also. But I ask questions and try to make good decisions. Granted, we can't always control things even in doing all that. Hopefully, this experience taught some kitchen help and/or chef a lesson... -
ARCHIVED Celiac Day At Bavarian Inn - Michigan
jststric replied to StrongerToday's topic in Gluten-Free Restaurants
Wow, that's fabulous! I wish glutens were my only intolerances so I could go. But eggs and dairy makes most gluten-free events like this still off-limits for me. Thanks for the info tho! -
ARCHIVED How Long To Heal A Leaky Gut?
jststric replied to pchick's topic in Food Intolerance & Leaky Gut
I'm not sure about the burning in the lower back but its not going to be unusual for all the different grains and such to cause gas for some time. I believe I had a leaky gut...my docs knew nothing about stuff like this. So, I was acting on my own after lots of time and research online. My doc DID say I needed to put more of the good acidophilus you find...
