You can use potato starch or arrowroot starch in place of tapioca flour... which is essentially just a starch. Though, if you can find it, Tapioca Flour is really a great addition to your gluten free baking. -

I posted this recipe a few weeks ago. It's from the Bob's Red Mill site. It uses coconut flour and rice flour, but the biscuits are out of this world- flakey, soft, creamy! PLUS they don't taste like coconut, so they would be good for any recipe. I found the flour at a local store, but you might have to order it direct. I would try finding it local first... -

To replace teff flour you can use the same amounts of brown (or white) rice flour. To replace millet or amaranth use sorghum or quinoa flour in the same amounts. I hope that helps. -

It's hard to find things to keep you full. The key is protein and fiber. I eat the Bob's gluten-free Mighty Tasty Cereal, which keeps me full for a few hours (not sure if it would last 6- that's a long time). I think you should definately ask her before baking a gluten-free cake- as well as let her know that you don't want to bake a gluten cake. Brides can be very particular when you least expect it- even when you know them well. I am not sure how to tell if Baking Soda or Baking Powder have gone bad- other than having your baked good not rise. Your cookies might be flat if they were over mixed or if the dough sat too long. Since you're just getting started, you might try a flour that is already mixed to the right blend. You could try the Bob's mix (www.bobsredmill.com) or Authentic Food's Multi-flour Blend (mentioned in a different thread- baking success) that works well. There are recipes for blended flours. We use Bob's Red Mill flours all of the time. Sometimes we buy Ener-g, but I am happy with the Bob's all purpose mix- it just saves time. They have the best brownie mix ever!!! I know some people can have problems with Bob's, but we never have and they have so many choices. -

I have contacted the company direct several times and am assured that the products are produced seperately and batch tested. My daughter does not have reactions to their products, though I am sure it does depend on your level of sensitivity. I use Xanthan Gum with no problems, but I have heard of other people being sensitive to it. I have called and spoken with people at Bob's and they have assured me their products are safe and produced separately. Some people are just so sensitive that even if a product tests below 20 ppm, it is still too much. It sure would be nice if they would get some legislation... -

I read this in an article and thought I would pass it along~ Bards Tale Beer (a company in New York) is now producing gluten free beer made from malted sorghum and roasted buckwheat. It's only available on the east coast right now, but hopefully it will be available to all of us soon. I miss beer so much and am glad to know that I might have more someday... -

I really enjoy using Carol Fenster's "Special Diet Solutions". We have to be gluten and dairy free- this book has a lot of great recipes that are also free of yeast, refined sugar and eggs! Bette Hagman's books are good too! -
