So many of the recipes I see call for brown rice flour (or regular rice flour). I would rather avoid this if possible. I once saw a chart that compared different gluten-free flours and was amazed at how many more carbs the brown rice flour had over the others. I agree that the FDA DOES need to force companies to disclose manufacturing processes on labels. I just have to clarify that, as it stands right now, companies only have to label for the top 8 allergens when they are an actual ingredient. From what I have read on here, yes, gluten sensitivity can cause symptoms just as serious as celiac. I have read some stories of people in serious condition and they don't actually have the common "celiac gene." I am gluten sensitive, not celiac, if that info makes any difference here. I went to the dentist yesterday and discovered my two back lower molars are cracked. They both have enamal fillings in them. My first batch of xanthan gum was NOW brand. It was a really fine powder. Since I couldn't find it next time I purchased, I have bought EnerG brand. It is a little more granular. Does this difference affect baking results? I'm still new enough at baking gluten-free that I don't know if my flops are my fault, the recipe's fault, or the ingredients' fault...

I don't know if this is your situation, but I just posted in another section about buying teff from Azure Standard. I found out after I got it today that it is repackaged by them before sold...on the same equipment as their other grains, which include gluten grains. High chance of CC that won't be taking. Maybe check out the source of your teff? -

I happened to contact them. They do just repackage their products, which they get from other suppliers. I had to rule them out because I also have to consider nut allergies in our home.
