  5. The shells are gluten-free in Canada. We use them regularly. Old El Paso is a General Mills brand. General Mills will always clearly disclose by name in the ingredients any gluten source in the product. If you don't see wheat, rye, barley or oats by those names, they aren't there.

  7. Despite recurring rumors, MSG is *NOT* a source of gluten. In the US, if any grain (including all the gluten-containing grains) is added to a meat product, it must always be explicitly labeled.

  9. An endoscopy of a person who is following the gluten-free diet should show no abnormalities. Celiac disease will only present villous atrophy if the subject is eating gluten in quantity on a frequent basis.
  10. An influx of gluten just before an endoscopy would not make much difference. It takes considerable time for the antibodies to do measurable damage to the villi. If she has been eating a "normal" diet loaded with gluten on a regular basis then the conditions should be right for a meaningful result.

  17. There is a lot of misinformation, and the MSG myth is one of those cases. MSG is avoided by many people for various reasons, but it is NOT a source of gluten. Never has been.
