I've noticed a lot of these recipes call for brown rice flour. Is that because they're trying to be healthy, or is it because it tastes better in these particular recipes?
I find brown rice flour much less gritty than white rice flour and the baked product less crumbly.

We've only used real maple syrup for the last 30 years ... and never refrigerated it. I don't refrigerate ketchup either... never have.

The dor put me on the Lame Advertisement also. But it has gluten in it so i cant take it. Had reaction after the first pill
Wait... Lame Advertisement has gluten??? I was going to ask my doctor about it! Anyone else have gluten reactions?
I quit smoking for 14 years... and then last summer I "vacation" smoked after several glasses of wine. What a dope. It's been almost a year and I promised myself and hubby that I'd quit before we moved (from PA to AR) later this summer.

Homemade all the way. I don't even use flour often. Just hot milk and cheese and bread crumbs from my Manna from Anna bread. Yum!!

I'm one of the exceptions. When people ask me what the symptoms of celiac disease are... I always say, "Unexplained weight loss..." as I look down at myself and add, "Um... I didn't GET that one."
Granted, my celiac disease was diagnosed very quickly... only had symptoms for about 3 months and was diagnosed w/ blood tests.
Then I totally OD'd on the foods I was allowed to have to make up for all those I could no longer have... and gained another 20 lbs!!
I'm a good 25 lbs. over what I'd like to weigh (and we're not talking bikini weight here... just normal for my height and age... and have been trying to concentrate on exercise and strength training.

Wegman's carries a brand of gluten free pretzels that I'd defy any wheat eating person to tell the difference betw. them and regular pretzels!

I love to bake too. I've found Gluten-Free Baking Classics by Annalise G. Roberts to be the best combo of flours for baking and every recipe I've tried has been a winner!!

I don't have DH, but I'd just tell people to come w/ me into the bathroom a few times. They'd believe I was the Queen of Sheba to get out of there!

I'd sure go next year, but I'll have moved to the Ozark Mountains by then. My daughter wanted to snag the lady they applauded for heading up the volunteer gang... to volunteer next year.

Yea, they were really pushing their big "G" on the labels. Interestingly, both my daughter and I started to read the ingredients, out of habit, and were surprised to see Modified Food Starch. I've read different opinions about it, but we tend to just avoid it, assuming that if it doesn't specify the kind of starch, that it's not allowed.

I got a bottle of BBQ sauce (the lady was telling me that no other BBQ sauces are gluten-free... so what have I been using for all these years??), a bottle of basting oil w/ all sorts of spices in it, and a Greek marinade for chicken. Pamelas gave me a box of chocolate biscotti. The gift bag had all sorts of goodies in it.
Most interesting was a little sample of melba toast from a baker names Ina Garden, which you know, if you watch the Food Network, is REALLY close to another chef's name.
I've said it before, and said to the lady from Wegman's... I've had the best luck w/ store brands for things like BBQ and spaghetti sauce. Their ingredients are more REAL (no high-fructose corn syrup) and often gluten-free.
I asked if they'd ever heard of a gluten-free hoisin sauce? She said she'd check up on it and call me!

I did desensitization shots for terrible hay fever for years. They helped A LOT.
Thankfully, the allergies got less and less over the years till they're mostly nonexistent anymore. I don't have to take anything.

My daughter and I went. It was pretty neat. The anchor from CNN who has Celiac was a host and she asked all Celiacs to raise their hand. It was so cool to see about 250 hands shoot up. WE ARE OUT THERE!
We don't have any other issues besides gluten, so we ate like little piggies. Food was delish, booze was free, and we got a whole bunch of freebies from Pamela's bakery and a huge set up Wegman's had there, plus the gift bag of all sorts of goodies.
My only disappointment was the $20 raffle tickets. I understand that it was for a good cause, but $20 for ONE raffle ticket?
We met some super nice people and had a ball!

Personally, I don't eat anything w/ MFS in it unless it says MFS from corn. If it simply says MFS, it's not for me. Better safe than sorry!
And there ARE some weirdos on here. But there are also so many people who have taught me so much. There's not a question I've ever had that couldnt' be answered by all these knowledgable folks. I can't express my appreciation enough!!

Before diagnosis, my all-time favorite food was homemade bread (and butter... that counts as one food, right??). I still miss it terribly. Manna from Anna bread mixes are one of the best I've found. I make a loaf maybe once a week and use some of the batter to fashion a few rolls w/ English Muffin Rounds. I slice the bread and freeze it and make sandwiches for work.
The Gluten-Free Pantry's Sandwich bread isn't bad either. I make it w/ my Kitchen Aid mixer and slice and freeze it.
I'd kill for a real bagel and a real hot dog roll... seriously.

Well, if you don't have kids right now... it's at least about a year away. I'd take the job and save as much $$ as you can! You'd lose your flexibility, like you said, but you'd help your financial situation!

I was a nurse in a former life. Then got a degree in English and worked in Medical Publishing for about 10 years (editorial stuff). Now I investigate medical insurance claims. Sometimes it's routine, but catching insurance scammers is the highlight of my job... and holy cow... are they out there!!

Middle of July sounds like a long time to me! Can you find another doctor in your area that could see you sooner? You should eat gluten before you see the doc because otherwise your test will come out false-negative. The doctor will do a blood test and then probably an endoscopy. It doesn't hurt and you're asleep the whole time. A colonoscopy is actually not that bad either. The worst part is drinking the solution before

Wow... when was the last time you made an appt. w/ a GI doc? A 2-month wait is NOTHING!
I too gained weight after going gluten-free. It was my own fault tho, as I sort of OD'd on all the yummy foods I COULD have so I wouldn't be so upset at all the foods I could no longer have!! I lost 25 of the 35 I gained and will struggle for that last 10 for the rest of my life, I'll bet!

I never gave my babies cereal either, as it seemed to me the ground up box w/ vitamin drops on it probably had the same nutritional value as the refined crap they sell as cereal. I gave them smashed up fruits and veggies at about 6 months while still breast feeding and later some tofu and yogurt.
I stayed away from "allergy prone" foods like eggs and citrus and wheat till they were at least a year old.

Unfortunately, I've had bad luck w/ most of the "chains"... Ruby Tuesdays, Applebees, TGIF... you explain and explain and they either don't get it or aren't willing to accommodate... or worse... swear they ARE accommodating and you find fried chinese noodles at the bottom of your salad... "Oh... THOSE have wheat in them??" I just don't go there anymore.

I saw Jenny McC. on Oprah. At first I was a little put off by her almost "my son is cured" attitude... but the more she talked the more I was fascinated. The most chilling point for me was when Oprah asked her if she had an idea how her son's autism occurred... to what did she point to as the cause??
She said she was at the doctors when her son was about 2 to have his MMR vaccine and expressed her concern to the doctor, "I've heard this vaccine is the one that might cause autism." The doctor blasted her and said there was no scientific evidence and she had to have her kid vaccinated! She said that she said a prayer and had it done... and then she said a few month laters she WATCHED the life go out of her son's eyes. She said ANY mother would see it in their own kid too!! It gave me goosebumps!!!
She wasn't saying that vaccinations aren't necessary. She just said that the "one size fits all" method of vaccinating is not good. Don't know what the alternative is, but I was mesmerized by what she was saying!
