  1. Yep, I've baked with the chips and had no problems. I won't buy the chocolate bars though. I don't eat things made on shared equipment with gluten ingredients.
  2. I've had the blood sugar issues for years, but I'm definitely noticing the bloating from sugars more now. sb2178, watch out for tapioca starch too. That one upsets my stomach. I thought it was the sorghum but I stopped having problems when I switched to baking without tapioca starch (sub in arrowroot starch or all potato starch). Of course I rarely eat...
  3. That's what I read as well- they produce a chocolate bar with malted crisps on the same lines as their other chocolate bars and squares so there is potential for CC. The chocolate chips and cocoa powders are produced on a separate gluten-free line and are safe.
  4. True. But IMO every time I eat something that I haven't prepared, I take a risk. I've been glutened at a PF Chang's when ordering off of the gluten-free menu. I've been glutened at my parents' house even when my mom thought she was cooking a gluten-free meal. Some of us don't wish to take the risk very often, hence the home-cooking.
  5. I can't eat a lot of refined carbs. They mess with my blood sugar and metabolism. I tend toward reactive hypoglycemia, so if I eat something sugary with no protein/fat to balance it out, I will be a shaky, dizzy, sweaty mess in a couple of hours. I love quinoa and brown rice as sides since they have some protein and fiber to balance out the carbs. I also...
  6. No kidding. Fall semester of last year was hell for me. I had on/off problems for 15 years, nothing serious enough for a doctor to take me seriously, but last September everything went to hell in a handbasket. And again, the doctor went on and on about how rare celiac disease is, and how I was probably just so stressed out as a grad student that i was making...
  7. I don't know. Some people swear by Kinnikinnick but I haven't tried them yet. I usually either eat mine with a knife and fork or between two slices of Udi's bread (or between two slices of homemade bread, but it's been too hot to bake lately).
  8. Yep- Rice Krispies have barley malt in them. I don't know why they need it, but there it is. I didn't have cake on my birthday either. I had my mom buy vanilla ice cream and hot fudge for sundaes since I'm way excited to be able to eat dairy again without being sick.
  9. Yep. My husband has been amazing with this, and even he has done things like pull a hamburger bun out of a bag and then grab cabinet doors/fridge door/condiment bottles without washing his hands- not five minutes after I've reminded him to wash his hands after he touches the bread. And the bread ALWAYS gets crumbs all over everything. And then I have to scrub...
  10. It was probably the grill surface. That's enough to do it for me.
  11. I'll second that. I haven't been able to make a from-scratch pancake batter that is as good as Pamela's. You can also use it to make Open Original Shared Link. I'm not a huge cake fan but I do like carrot cake, and this was really good. My gluten-eating husband and parents also gave it a thumbs-up.
  12. I'd eat pizza. I don't miss bread, I never particularly liked cake, I have a recipe for gluten-free choc chip cookies that are better than my original gluten recipe and I can find decent gluten-free pasta and beer. However, I have yet to find a truly satisfying substitute for pizza. There are decent gluten-free pizzas available and I can make my own,...
  13. Yep. My mice are mostly black instead of white, but otherwise they live in conditions like those described. They're in a temperature-controlled, well-ventilated room and a vet tech checks them regularly to make sure everyone's healthy. And it's true, they do choose one corner of the cage and sleep in a big pile.
  14. I'm 5'0". I stopped growing (height-wise) at age 15. My mother is 5'4" and her mother was 5'7". Granted, there are short people on my dad's side but I'm the shortest of all of them. Now that I think about it, I was of normal length/weight when I was born but by my first birthday was way down on the percentile chart for both height and weight. I was always...
  15. I second the rice cakes with peanut butter. That was my breakfast this morning. On another celiac/gluten-free forum, several posters commented that they used Asian rice wrappers to make rolls filled with anything from fresh fruit to cheese and veggies to leftover meat from dinner. I haven't tried them but I like the idea and your daughter might have...
  16. The specific (or Fab) regions of the antibodies are specific for gluten (or whatever the target protein is). The nonspecific or Fc part (the "tail") of the mouse antibodies used in ELISAs is usually IgG due to the original immunization of the mice- I'm guessing the adjuvant (inflammatory substance that helps the person or animal immunized mount a stronger...
  17. I'm seeing two possibilities here. One- your own immune system was totally wiped out by treatment and replaced by one derived from your sister's hematopoietic stem cells. So in essence, you have a new immune system, one which isn't (currently) set up to react against gluten. So right now, you probably are non-celiac. -But- Two- If your sister was...
  18. I've got autoimmune disease on both sides of the family. Mom's side is rheumatoid arthritis and autoimmune thyroid disease (mom has neither), plus I learned recently that one cousin avoids gluten for health reasons and one of my mom's older sisters avoids wheat whenever possible because it "doesn't agree" with her. Mom has had unexplained iron-deficiency...
  19. I think in some cases it could be fructose malabsorption. That can cause a lot of GI distress.
  20. I have the same problems with blood sugar spike and crash, as well as indigestion from the carbonation, but I still drink it as an occasional treat with no gluten-related problems.
  21. IgA, IgE, and IgG are different types of antibodies produced by the body. IgA is released into the mucosal layers (e.g. gut lumen) and usually acts to neutralize toxins, bacteria, etc. before they can get into the host. IgE binds to antigen (usually allergen) that is on the skin, gut wall, lung surface, etc. It then triggers mast cells (and others, but mast...
  22. Yes, they do all use antibodies. They don't all measure antibodies. ELISAs use specific antibodies to measure levels of any protein, including gluten or other antibodies. Here's a brief explanation: Gluten in food is probably measured using a standard quantitative sandwich ELISA (I say probably because I don't know for sure). In this assay, an antibody...
  23. Topic: Five Guys only fries potatoes in their fryer. I ate there (bunless cheeseburger and fries) and had no problems other than a temporary bout of indigestion from the grease and soda.
  24. There are two types of ELISA tests. The one you have mentioned is the clinical test for antibodies against ingested or environmental proteins. That is not the test used by food manufacturers to determine gluten levels in foods. There are indeed tests that directly measure gluten levels in foods and these are the ones that people refer to when they are discussing...
