ARCHIVED Vegetarian Meal Ideas
love2travel replied to alex11602's topic in Gluten-Free Recipes & Cooking Tips
I have used white rice flour as it is neutral, a blend of brown/white rice and quinoa. They all work. I used to make ricotta spinach gnocchi that did not require much flour at all but since I have eliminated dairy have not done that lately. Hope to reintroduce dairy again, though. Oh, yes. Have tried a touch of potato flour, too. You probably do the... -
ARCHIVED Where Do You Crock?

Fun topic, Karen! So far I have only used mine in a house or outside on the deck - not as a chick incubator (although we did a lot of that on the farm when I was growing up - we'd bring baby chicks that were dying into the house to put into the warm oven - wait - that doesn't sound very good, does it? But it worked!). We were going to take it with... -
The What's For Dinner Tonight Chat
love2travel replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
We're having duck again tonight but differently. This time I am searing it (keeping the fat for roasting truffled fries) and eating it with a roasted plum sauce. Divine. Am making funky sweet potato fries and grilling zucchini with mint vinaigrette. If we had leftover risotto I would be making arancini! Next time... -

I can never sit more than a few minutes - have not been able to for nearly four years. When I need to go somewhere further than half an hour away my husband must drive as I need to lie down. In restaurants I must go to the bathroom to stretch every 15 minutes. I cannot sit to watch TV but lie down. When I weed my flowerbeds I spread out blankets on the... -
ARCHIVED Perfect Gluten-Free White/sandwich Bread
love2travel replied to MerrillC1977's topic in Gluten-Free Recipes & Cooking Tips
Stabilized flour just means that it has undergone a process (won't describe it as it involves chemistry and it was not my favourite class in university!) to enable the flour to be stored for a much longer period of time than unstabilized flour. I just store my flours in the freezer. -

We cannot get KA flour here, either, so will be doing some experimenting as well. -
ARCHIVED Does This Look Like Dermatitis Herpetiformis To You?
love2travel replied to MerrillC1977's topic in Dermatitis Herpetiformis
And here I have not been paying attention to the DH board because I thought it was not applicable. I was diagnosed with celiac disease in February and have been extremely dilligently gluten-free ever since. It is so interesting that when diagnosed I thought I was nearly asymptomatic but have since found that is not the case at all. -

My husband and I are booked to go to Croatia and Italy in 12 days so I may not try it until we get back. But we may not be able to go now because I have just hurt my pelvis and hips and literally cannot sit more than 5 minutes (am lying down typing). If I cannot sit more than a few minutes how on earth can I sit 25 HOURS? (I am including airports and... -
ARCHIVED Does This Look Like Dermatitis Herpetiformis To You?
love2travel replied to MerrillC1977's topic in Dermatitis Herpetiformis
Whoa! That looks like a rash I had about three years ago except mine looked like it was almost stained purple underneath. It was very itchy and burned a lot and appeared on my thighs and behind my knees. I attributed it to the new oil my massage therapist was using but now am wondering if it was DH. I have always had eczema, too. Could this one-time... -

Some bean flours would be good substitutes although not as strong as soy. BUT it is certainly worth a try! Why not? Have you tried garfava flour? It is a combination of garbanzo and fava beans - my favourite bean flour by far. Doesn't taste "beany" to me. Good recommendation. I will try it soon and compare it with that made with defatted soy... -

ARCHIVED Very Good Multi-Grain Bread Recipe
love2travel posted a topic in Gluten-Free Recipes & Cooking Tips
We've sure been talking about bread here a lot lately! With good reason. Just want to share a good multi-grain recipe with you. It uses teff and flax meal. Teff is one of my favourite flours. So far I cannot find ivory teff so use dark teff. Too much dark teff can be strong but this recipe does not require much. Teff is the flour used in injera... -
ARCHIVED Does Eating Gluten Make All Celiacs Sick?
love2travel replied to alexsami's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
You're welcome. When I first joined this board I was SO grateful for all the help I received - the amount of information here is incredible. Your damaged villi certainly can recover; in fact, they can in the vast majority of people. I was told it can take between 2-5 years for that to happen. Of course recovery will be quicker in some and longer in... -

ARCHIVED Does Eating Gluten Make All Celiacs Sick?
love2travel replied to alexsami's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Sadly, no. I did not have any GI symptoms but my biopsies showed severe damage to my villi - they were totally flattened. I was told I have to be all the more vigilent for that reason. Don't forget that once you are off gluten for awhile many people seem to become more and more sensitive if accidentally glutened so we could still get hit hard in the... -

I've heard that many do not like GFP French Bread mix. Sorry you had the same experience. The breads with soy are sadly the best I've had and I think it partially due to the soy because defatted soy flour is very strong (one of the highest protein flours there is) which gives great chew and texture. Alas...I am now not eating soy on a trial basis... -

I am blessed with two big pantries - one downstairs that is large and one in the kitchen that is a walk-in size. One of the reasons we bought this house! Lots and lots of storage. In winter you will be so happy about the pesto. Glad you got more from your CSA! Our "garden" is the raised beds my husband built for me so I could continue growing things... -

Do you need a specific test for Hashimoto's or is the TSH bloodwork the required indicator? Had my physical and bloodwork done in August and was told my thyroid was "normal". -

Thanks for starting this thread! I knew you would. Commercial crusts I have tried: Kinnikinnick - man, what can I say? Just plain wrong. Wrong flavour, wrong texture. Rating: 2/10. OK. Maybe a 3/10 for effort or up to 5/10 if grilled. Udi's - very crispy but as it has a neutral flavour it takes toppings well. The crust itsels is... -
ARCHIVED Horrible Insomnia Rant (With A Question)
love2travel replied to HopefulMama23's topic in Coping with Celiac Disease
I understand your frustration! I have had chronic insomnia for my entire adult life but it has become worse the last few years due to severe chronic pain. It is so rare that I sleep well - it probably happens once every ten days or so. When it does I rejoice because the difference it makes is so miraculous. There are many nights I do not even fall asleep...
