  6. Stabilized flour just means that it has undergone a process (won't describe it as it involves chemistry and it was not my favourite class in university!) to enable the flour to be stored for a much longer period of time than unstabilized flour. I just store my flours in the freezer.

  11. Some bean flours would be good substitutes although not as strong as soy. BUT it is certainly worth a try! Why not? Have you tried garfava flour? It is a combination of garbanzo and fava beans - my favourite bean flour by far. Doesn't taste "beany" to me. Good recommendation.   17. I've heard that many do not like GFP French Bread mix. Sorry you had the same experience. The breads with soy are sadly the best I've had and I think it partially due to the soy because defatted soy flour is very strong (one of the highest protein flours there is) which gives great chew and texture. Alas...I am now not eating soy on a trial basis...

  19. I am blessed with two big pantries - one downstairs that is large and one in the kitchen that is a walk-in size. One of the reasons we bought this house! Lots and lots of storage.
