  3. Simona, I intended to make it yesterday but I had a lot of pain (chronic back pain). However, I see my chiropractor and have a nice long massage scheduled for this afternoon.   5. Hi! I, too, live in Alberta. My husband and I drive three hours to Edmonton for culinary weekends because there is NOTHING even close to where I live. Edmonton is very good for those of us with celiac. My favourite restaurants there include Corso32, Red Ox Inn, Wildflower Grill, Madison's Grill, The Marc...I feel safe at all those places.   6. It is a lot of work for either gluten-free phyllo or gluten phyllo. I've done it and love making it but then I enjoy challenging things.
  7. I do lots with eggs - Eggs Benedict, omelettes, quiche, scrambled... I make pizza and freeze an extra crust for convenience.   10. This happened to me; my chiropractor told me to eliminate anything containing aspartame (mostly for my chronic back pain). Perhaps aspartame bugs you? Don't forget that the longer we are gluten free the more sensitive our guts can become to other things.

  12. You will find that a stand mixer makes ALL the difference in gluten-free bread making. If you like making pasta I highly recommend the pasta attachment (if the mixer is a KitchenAid).

  23. We have nothing even remotely similar where I live. I have never seen a dedicated gluten-free restaurant outside of Europe although I know of them as I have read about them (would have to travel hundreds of miles). I'm sort of jealous of those who have access to bakeries especially!
  24. I'm curious about the diet coke. Do you not have it because it contains aspartame? Or is it a weird brand that actually contains gluten for some reason?
