  1. Yes, definitely! Far better than commercial.
  2. That is true - it makes a HUGE difference. My palate and tastes are extremely varied and I love the very exotic. I could easily cook different meals each day for a couple of years without every once doubling up recipes. It does help to be adventurous and creative. My ideal Thanksgiving dinner would be a lot different than most! It also helps having...
  3. I have not been back to Rome since my celiac diagnosis this year but Italy is incredibly aware of celiac disease; in fact, it is mandatory that everyone gets tested for it by the age of either 5 or 6. I had no problems in Italy whatsoever in May and we will be there again in a few weeks. I did find I was not able to have gelato very often but did enjoy...
  4. That will NEVER happen with me. I for one will ALWAYS live to eat. I just love food far too much to eat to live.
  5. It certainly IS a difficult disease to deal with, especially at first, until it becomes second nature. Believe me - I had my share of bitter moments starting out myself! Food is a HUGE part of my life. I love it. I am obsessed with it. I did not think I would ever get to the point to say this but after six months it does not bother me nearly as much...
  6. So far these Kind bars are amongst the very, very few processed gluten-free things I have fallen in love with. I am a cook-and-bake-from-scratch advocate but sometimes you just need a quick snack (like today!). SO glad I read about them.
  7. The trip is 3 weeks away but I just re-injured my back yesterday and literally cannot walk. My husband had to take the day off work to help me walk to the bathroom, etc. The pain is horrendous so I am lying here with my laptop trying to distract myself. Hopefully our trip is a go! It would be a pity to miss out on Europe (it has happened already twice...
  8. My husband found Kind bars for today! He bought me one of each variety available. After trying just one I wholeheartedly agree that Kind bars are vastly superior to Lara bars (for my personal taste). I am very impressed! They will be perfect to travel with.
  9. From what I have heard/seen/read Krakow does indeed sound like an amazing place. Please let us know what your restaurant experience is like. The gluten-free restaurant is very impressive indeed! I am excited for you. I did not venture out to restaurants until I was very comfortable with it (and am still extremely picky where I go which is rare as I love...
  10. Although I am definitely not vegetarian, I have made some pretty intriguing spanky vegetarian dishes so I would be interested in a veg thread!
  11. Wonderful! I like to cook outside the box and infusing honey is such a simple way to add tons of interesting flavour.
  12. It is quite funny, isn't it? My husband just loves little experiments like that. He sort of feels like a spy. I haven't eaten at a McD's for at least 12 years (never liked it, anyway) and especially now would not trust it one little bit!
  13. It is cute, isn't it? At times I even added green shoestring licorice to mimic seaweed.
  14. When I was eating gluten I had no obvious symptoms at all so I cannot compare glutening to symptoms I have recently had when eating dairy. I was so hoping I would be one of the lucky ones who could tolerate dairy! Symptoms suddenly appeared after five months gluten-free. Anyway, my symptoms started suddenly and include MAJOR D, heartburn, vomiting, stomach...
  15. After being gluten-free for five months I sadly found I cannot tolerate dairy but am really hoping I will be able to re-introduce it later! I keep a food diary and it became abundantly clear after eating certain cheeses and drinking milk that I quickly got ill.
  16. My chiro told me to eliminate aspartame and I did so in January and have thus far noticed absolutely no difference. How long did it take for you to notice a difference without aspartame?
  17. You should be consuming the equivalent of 3-4 pieces of bread a day for about 3 months for best accuracy. I actually went nearly 4 months. It is sad that no one has thought to inform you of such important details. I really hope it goes very well for you!
  18. I have been extremely diligent for six months since my celiac diagnosis and got glutened accidentally once early on to my knowledge (a company had briefly changed its labeling). But our household went gluten-free immediately, I NEVER eat at fast-food places or chains and have also managed not to eat at others' homes or functions (yet). We have no children...
  19. How intriguing! I have not yet been to Krakow but my husband and I own a house in Croatia and want to visit Poland soon (we are still in Canada at this point). Some of my ancestors came to Canada from Poland. Will you be in Poland long term? It is awesome that you have a selection of gluten-free products there. I always wonder about different countries...
  20. You're welcome. It just makes sense to me that it could take quite a long time because most of us have likely had celiac or gluten intolerance for ages and ages! So, I am just giving my body all the time that it needs without rushing it. Of course my doctor and dietitian may not know everything there is to know about it but they seem very knowledgable...
  21. No - not for bloodwork but for the gut to be healed to the point of a regular person's gut. My bloodwork just came back and my numbers went from off-the-charts-high to negative in five months only! But that is just an indication there is no gluten left. My gut is sensitive and there is still much healing to be done (which I have found with this new dumb...
  22. I was told by my dietitian and doctor not to expect to be fully healed for 2-5 years! Six months seems awfully short to me.
  23. It's strange but I did not feel sick from gluten at all. Have been gluten-free now for six months and the last month suddenly have been quite ill and have determined I cannot tolerate lactose (hopefully this is temporary). Who knows? I may have other intolerances as well...
  24. I've mentioned this before but will mention it again. Last month I found a distilled rice wine vinegar in an ethnic food store that had "WHEAT" on the bottle!!
