  1. OK - you've convinced me! I still cannot believe I have never had one. I even do sous vide for crying out loud! You had me at osso bucco...
  2. Yes, in this situation you certainly could use Bob's Red Mill gluten-free AP flour because the end product would have the properties as in a regular cake. This cake is a fairly dense one (but in a good way!). If there is no Xanthan gum in the mix add 3/4 teaspoon. Be aware that the texture may be a touch different than regular cake but the difference may...
  3. I make all sorts of incredible meatballs and meatloaf often. Made some honey garlic meatballs the other day with veal and pork. It is a great combination, as is veal, pork and beef (chuck). I always soak gluten-free bread cubes in milk until very soft - this really makes a difference in the texture. Then I add grated fresh nutmeg for a sort of elusive...
  4. And all over Europe you can get cake-flavoured gelato.
  5. I know the cookies you mean - I can work on it as I love a challenge!
  6. It's hot today so: Grilled Shrimp 3 Ways Grilled Zucchini Ribbons with Vanilla Bean Vinaigrette and Fleur de Sel Grilled Potato Rounds with Mint and Almond Pesto Strawberry Banana Flaxmeal Muffins I made yesterday when it was cooler.
  7. There is complaining and then there is venting and discussing. I do not think you are complaining! I know I was a little because my pain happens to be extra excruciating today (I always lie down to type). Cannot stand to do the dishes - but then that makes me thankful for the dishwasher and at least I have dishes to wash! Many in poverty do not. There...
  8. Interesting. My hair stylist was shocked at how much greyer my hair is at my last visit compared to the one before. I wish it went the other direction!
  9. I know chronic back pain having been in an accident 3 1/2 years ago and each day is a struggle. The pain is non stop as you know and it is nearly impossible to sleep due to pain in every position. I, too, have tried over 20 kinds of painkillers with zero help. I must lie down at least half the day and have extreme difficulty sitting, etc. I could not...
  10. I really feel for those of you who have this struggle on top of everything else. Thankfully my family and friends have been extremely supportive and ask lots of questions to gain a better understanding of things. They all really want to help, not hinder me so I am blessed. Usually when I go to family homes I get asked to do the cooking as I love...
  11. Marc, I use my whip for whipping eggs but never for breads. As a baker I find that unusual for bread. It will change the texture and structure of the product. I use my dough hook frequently for very stiff batters (i.e. the pizza crust I like best that you can actually KNEAD!). Sylvia, I think I will avoid soy next. It would be worth it to decrease...
  12. Greg, I empathize with your pain. You and I are nearly the same age and my pain is debilitating on a daily basis. However, much of my pain stems from an accident I had 3 1/2 years ago from which I have not recovered (herniated discs, degenerative disc disease, myofascial pain, rotator cuff injuries) as well as fibromyalgia and Rhematoid Arthritis. To this...
  13. Though I am not a Brit I do have British blood and have been to the UK many times. Man, I totally understand what you mean about mince pies, sausage rolls, sticky toffee pudding...I really miss Steak and Ale Pie, Banoffee Pie, Chicken and Leek Pie and Cornish pasties as well. Oh, and the fish and chips at Whitby! I can imagine the sublime time you had...
  14. I made some lovely strawberry banana flaxseed muffins this morning (which you can make low fat with apple butter replacing the oil).
  15. Sorry about the soy - it unfortunately is key in the recipe due to its protein content which adds wonderful structure to bread. Defatted soy tastes far less strong than soy. I cannot get it in my town, either, but in the city three hours away. Darn it - I wish you could try it but I understand that you cannot! Perhaps if I stopped soy my chronic...
  16. You have done an incredible job keeping up with your gluten-free lifestyle in spite of these enormous stressors. Way to go! Hopefully things turn around for you very soon.
  17. Chicken and gluten-free dumplings or pasta. Once when I was not feeling well I made focaccia (does not take long) and polished off the entire 9" round of it in one day myself but it was sooooo comforting! I always make and keep popsicles in the fridge to ensure I remain hydrated. I also enjoy roasting a big Yukon Gold potato and filling it with yummy things...
  18. Each year I read around 300 books as I am like a sponge and love to learn as much as I can about as many topics as possible. Favourite topics of mine include food, history, ancient archaeology, religions, travel, geogrpahy, horticulture and so on. However, I am now into 18th and 19th century English literature, both fiction and non fiction. The distinct...
  19. I am making several finger foods for this evening: Honey Garlic Chicken Wings Grilled Prosciuotto-Wrapped Chicken Wings Grilled Red Peppers with Bagna Cauda Crispy Garlic Roasted Shoestring Sweet Potato Fries Baked Apples Stuffed with Pecans
  20. Thank you for being happy with me! It is remarkable that so much can be done in a relatively short timeframe. Hopefully this is an encouragement to others to keep keeping on.
  21. Your description of your "friends" is frightening. I cannot fathom the absurdity of their trying to force you to consume gluten! That is NOT normal. Others have offered excellent advice. I echo the notion that gluten-free food can be absolutely amazing. Many of the best dishes one can enjoy are naturally gluten free, anyway. It is true that there...
  22. Ditto on the above. I am glad I got tested because I am one of those people who just need to know. I was also in denial so bloodwork and subsequent biopsies were ample proof for me to go gluten free once and for all. Far better to do it now than go off gluten for a year then go on a gluten challenge only to feel ill. Though gluten never has made me...
  23. Three weeks - you are doing well! So glad you are not as sick as you had expected to be. My challenge was for nearly four months but as I did not feel sick from gluten it was easy for me. I was lucky. How long were you told to do the challenge for? Hopefully you will get answers not just regarding celiac but also any other issues.
  24. You're right - I did! My attitude really was poor, that is for sure. It took me about two months to get my head wrapped around the whole thing. It is funny looking back, wondering if I was going to be one of those people who could sincerely say it does get easier and I am! It does!
  25. You obviously planned ahead! I have not been to the US in ages but when my in-laws go for the winter they stock up and bring back gluten-free Worcestershire, etc. as well. It is sickening how much cheaper things are there, too!
