  1. We were there three weeks. We go three weeks twice each year - each May and each October (we have a house in Croatia with an outdoor wood-fired oven which makes it easy for gluten-free cooking and grilling!). But even we try to eat out some - even grilled fresh seafood. There are zero restaurants I trust in my town, that's for sure. They have no clue...
  2. That is wonderful! Pizza crust is an excellent first thing to try. I posted two of my favourite recipes on here (likely under the Recipe section). One is for a thinner crisp crust and the other on is for soft crust. We've also been grilling pizza lately for the lovely charred flavour. Sounds as though there are some good pizza crust mixes available in...
  3. This is a lean bread which means it has less fat such as French bread, etc. I have other recipes for multi-grain, sourdough, mock rye... Lean Bread (makes 2 8"x4" loaves or 20 rolls) 2 2/3 c flour blend #1 3 c flour blend #2 1 T salt 3 T guar gum 2 1/3 T instant yeast 3 1/2 c sparkling water 6 egg whites Blend #1 3/4...
  4. Are you talking about cookbooks or baking books? Many cookbooks have tons of naturally gluten-free recipes in them or those that can easily be converted gluten-free. Or do they have to be gluten-free books? I have nearly 500 cookbooks so I would be happy to post a list depending on your needs...
  5. Hi! I was born and raised in Saskatchewan and lived there my entire life until just a few years ago when my husband and I moved to Alberta. I did not see any doctors in SK for celiac as I was diagnosed after moving to Alberta so am afraid I cannot help you with that BUT there are great ones in Edmonton. Would that work for you or is that too great a distance...
  6. Remember - no such thing as a stupid question! This gluten-free baking is a totally different thing when it comes to breads, etc. As Simona said you could certainly use any neutral oil such as vegetable, canola or even grapeseed (but grapeseed oil can be expensive). What kind of mix is it? Sorry - am not familiar with mixes. For focaccia bread...
  7. Thank you so much! It has been very difficult because I have been wondering all along whether I have had any accidental glutening by CC or whatever. Obviously not! So, I will continue doing what I have been doing. Thanks for the feedback re sharing my passions here. I know it may seem OTT or extreme sometimes but when you love something so much you want...
  8. Yes, I love this fall weather but dread what happens next. Our winters are sooooooo long with snow from October to April and temperatures often -35 to -40F. Yuck. You got your replacement mixer already? Yay! You must be absolutely itching to use it. I have not tried any mixes but have heard that Pamela's is good. Let us know! Will post the...
  9. True enough about the price! You would be amazed at the animated discussions people have on foodie forums about colour! The debates can get almost heated. It is so satisfying and gratifying to make a decent gluten-free loaf of puffy bread. My last loaf was tall, fat with a tender crumb yet a chewy crust. It rose so beautifully! Making some more...
  10. How wonderful for you! We deserve to gift ourselves every now and then. What colour are you getting? I use mine nearly daily. Our Udi's bread is $7.49 so $4.99 is a bargain!
  11. I can totally understand his losing his ability to feel the dough, knead it and toss it. It must be incredibly difficult for him. One of my favourite recipes is posted on here somewhere (search under my name) - you actually do sort of knead it and press into the pan rather than spread it. It is probably posted under the Recipe section. Tell your friend...
  12. Yes, I know that "cannot guarantee" is vague and must be said but I was concerned with the traces. She told me that in confidence - "...just between you and me." It was all very weird, actually. She advised that as I have celiac I had better not chance it. Doesn't bother me any - I could easily take or leave chocolate but it may help others to question...
  13. Sincere love and kindness from others can get me teary, too, as I find it touching.
  14. Awesome news, Sara! I was wondering how you were managing.
  15. This is actually a test recipe I did for a major culinary website and I am not allowed to publish it until after September 5. Is that ok? I am marking this so I do not forget! So sorry...
  16. Do you have any idea how much your words mean to me? This is so unbelievably kind and caring of you. It makes me SO happy to have inspired someone to cook and bake! What you said indeed brought tears of gladness to my eyes. So, I guess my passion for food shows. This is one of the reasons I love to teach cooking and baking classes. People who walk...
  17. My doctor's office just called and my celiac panel is now NEGATIVE! The number is 3.8 and anything under 7.0 is negative. Initially it was 71 which is off the charts positive. So, just to encourage those who are new - it can be done. I have been strictly off gluten for nearly six months - had this bloodwork done at five to see where I am at. I am...
  18. I recently called re Reece's PBC original and alas - was told that they cannot guarantee no CC or gluten free status. The woman told me there would likely be traces. But that is in Canada - perhaps it is different in the US?
  19. Marilyn, you're too kind! I initially completely cut out dairy when I was first diagnosed for nearly three months then reintroduced it and was fine for ages. Then about a month ago started having serious IBS-like symptoms (that I did not get from gluten at all) so my dietitian wants me to start eliminating things. She feels I am consuming too much raw...
  20. Great advice. Sometimes my expectations are a wee bit high...
  21. You know, I think that's it! I expected them to taste as advertised! I was expecting something completely different. Not that they're bad - they're not - but just not what I thought they would be. I, too, love dried fruits and nuts but to be honest prefer other dessert-y sorts of things. I'm a texture person and love to incorporate crunchy, smooth, crispy...
  22. You replied to my newbie post on my frustrations with trying to find a decent gluten-free bread, and you said you make your own. Do you have a favorite recipe you can share with me? I've made homemade bread for decades and enjoy making it, but from the few gluten-free recipes I've seen this is a whole new way of making bread! Mixes of flours, xanthan gum, etc.--I'm clueless!

  23. I must google Kind bars - have never seen them. Thanks!
  24. Lara bars seem to be beloved by many. I tried one a few months ago and did not care for it (apple, I think). At the grocery store this morning they were on sale for $1.49 each (and several kinds available) so I bought more (we have an upcoming trip to Europe so want to stock up). I tried the cherry flavour and literally had a hard time finishing it! That...
