ARCHIVED Back From Croatia And Italy!
love2travel replied to love2travel's topic in Coping with Celiac Disease
How lovely this is, "talking" to my friends again! This is one great thing that has resulted from my celiac diagnosis. -
No problem. Am going to do some catching up here (I've been on a blissful vacation) but will certainly post some of my favourites here.

The What's For Dinner Tonight Chat
love2travel replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
Sylvia, thanks! It feels good to be back with my gluten-free family! It is also nice to be missed. -
Almost always make my own. Tried it once at Boston Pizza (I was desperate) but found they use the same pans/utensils as their regular pizza (at least at this location). On a recent trip to Venice I happily enjoyed gluten-free pizza at a gluten-free restaurant. They don't have buckets of toppings like we do here.

ARCHIVED Gluten Free In Venice-Italy
love2travel replied to GFinVenice's topic in Traveling with Celiac Disease
Yes - I know all about it although I have never been in Venice during that time. We had a fantastic recent trip to Croatia and Venice! Our next trip is already booked for May. -
ARCHIVED Back From Croatia And Italy!
love2travel replied to love2travel's topic in Coping with Celiac Disease
Thanks! It was absolutely brilliant. I could easily fill at least 309 pages with descriptions but will not bore everyone with the details. -
ARCHIVED Favorite Desserts

ARCHIVED Favorite Desserts
love2travel replied to Tabz's topic in Gluten-Free Recipes & Cooking Tips
Great gluten-free angel food cake is actually quite simple to make. I think I posted a recipe on here before - if not I will find it. It really is very good. -
Thankfully there are many classic desserts that are intrinsically gluten free including creme caramel, pavlova, semifreddo, Eton Mess, panna cotta...of course many include dairy, though, which is not great for everyone. These are the types of desserts I tend to make most often. They often sound fancy and tricky but they are not.

ARCHIVED Favorite Gluten Free Flour Blend?
love2travel replied to joyfulmommyofmany's topic in Gluten-Free Recipes & Cooking Tips
I never use purchased blends but do my own thing. My favourites include millet, buckwheat, teff, corn, sweet potato, garfava, amaranth, sorghum, coconut and almond flours. Of course they have different properties. I often like to add flaxmeal to breads, pizza crusts and crackers for more fibre. -
ARCHIVED What Are You Cooking For Thanksgiving?
love2travel replied to freeatlast's topic in Gluten-Free Recipes & Cooking Tips
Hi, Marilyn! When did you find you are now tolerant to dairy? How awesome is that? I found I easily tolerated dairy while in Europe without any issues at all. YAY for US! -
Our trip went extremely well. Prior to leaving I was deeply concerned about flights, etc. and the havoc travel causes on my chronic pain (and fibromyalgia). However, a few miracles happened - on the longest flight there (Toronto to Frankfurt) four seats in a row became available so I grabbed them and was able to lie down for the entire nine hours! It is...

ARCHIVED Gluten-Free Chili
love2travel replied to Heather Anne's topic in Gluten-Free Recipes & Cooking Tips
I've never made chili that has included gluten but I like to add roasted chili peppers - I do this in the oven or reconstitute dried chiles such as chipotle or mulato. Adding some grated bittersweet chocolate tempers the heat a touch and adds a bit of sweetness (as would brown sugar, molasses, maple syrup, honey...). Chocolate is my secret weapon in chili... -
The What's For Dinner Tonight Chat
love2travel replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
Back from our FABULOUS holiday to Croatia and Italy! I have a month of posts to catch up on (later). I made for tonight: Pulled Pork gluten-free Flatbread with Rosemary and Fleur de Sel Crudites with Green Goddess Dip -
ARCHIVED Melatonin Rules For Sleep Issues
love2travel replied to imracin68j's topic in Related Issues & Disorders
Valerian root did nothing for me but my insomnia is so incredibly severe. Definitely not resolving yet after being gluten-free for seven months. -
ARCHIVED Question For Scott Adams
love2travel replied to fweeby's topic in Gluten-Free Recipes & Cooking Tips
Hi! How much sugar did the recipe call for and how much did you use? Using a lot less sugar can make a huge difference in texture and crumb. -
ARCHIVED Can I Use Sour Cream Instead ?
love2travel replied to MyMississippi's topic in Gluten-Free Recipes & Cooking Tips
It definitely depends on the recipe and the type of sour cream you use (i.e. full fat, low or no fat). The variations make huge differences in recipes. And how is it to be cooked? Reduced? Baked? The flavour is also changed. For example, if it is boiled it can become very runny. I personally never, ever use condensed soups (hate 'em) so always use... -
ARCHIVED Undiagnosed And Still Sick... Could This Be Celiac?
love2travel replied to SilverClaerity's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
They only took 2 samples? That is ridiculous - you need at least 8-11 for accurate results. It is possible you had a false negative. Perhaps. -
ARCHIVED Going On Vacation Wednesday...
love2travel replied to love2travel's topic in Coping with Celiac Disease
How wonderful to have an apartment so close to the Acropolis and Parthenon! Wow. I cannot wait to hear all about the trip - I am a travel fiend. I know what you mean about bad days - they do happen too frequently. But I am also amazed at how distractions can enable one to forget about pain for a moment. Schar is an interesting company - some... -
ARCHIVED Is Glutino Bread Good?
love2travel replied to BeFree's topic in Gluten-Free Foods, Products, Shopping & Medications
Glutino "Genius" bread is my favourite, even more so than Udi's - the pieces are larger and have better texture (not to mention much cheaper!). However, I do not like their other bread products. -
ARCHIVED Going On Vacation Wednesday...
love2travel replied to love2travel's topic in Coping with Celiac Disease
You are welcome! They are a great aid. -
My fibro can be so debilitating. I have eliminated soy and aspartame but have not noticed any difference, nor have I noticed any difference eliminating gluten. Even eliminating nightshades for a month did not do a single thing (perhaps I must try for longer). I also have tons of trigger and tender points, myofascial pain, costochondritis, herniated discs...

ARCHIVED Going On Vacation Wednesday...
love2travel replied to love2travel's topic in Coping with Celiac Disease
I used a combination of www.CeliacTravel.com cards (free but a donation is happily accepted) and added a bit extra on preparation (i.e. a blurb on checking stocks in risotto for example). I had my husband laminate them and carry them to each country. -
ARCHIVED Going On Vacation Wednesday...
love2travel replied to love2travel's topic in Coping with Celiac Disease
Thanks! I will be taking along some Genius bread as the gluten-free bread there (Schar brand) is very, very bad. It is like a cross between cardboard, drywall and crazy glue. However, I did read that recently they came out with fresh bread that you heat. Will have to try that. Will be going to a certified gluten-free gelato place in Venice as well as... -
ARCHIVED Going On Vacation Wednesday...
love2travel replied to love2travel's topic in Coping with Celiac Disease
Thanks so much! The weather forecast looks pretty perfect. We have not yet been to Athens but really want to. Where else are you headed? I honestly think that Celiac is pretty much a non-issue for travel. It is not even on my radar because it was so easy last trip. But then we have a house there so purchase groceries to cook at home. However, we did...
