You gotta get you one! Christmas is coming up. (Actually, though, I probably use my pressure cooker more often than the crock pot.)

We had Greek style stuffed red peppers and zucchinis tonight. Delicious, and I figured since it had rice, veggies, meat and cheese I didn't have to mess with sides. DP gave it an A +

I've started using red peppers more since my doctor told me they're the best food you can eat, full of anti-oxidents.

Erwtensoep, traditional Dutch pea soup with smoked sausage and pork chops. A delicious and very nutricious meal-replacing soup for our wet and cold winters. It's so thick a spoon should be able to stay upright in it.

True, it looks like it has been eaten already, but the taste is great ^_^

Recipe:

500 g of split peas

400 g of pork chops, preferably still on the bones

4 gluten-free stock cubes, beef or vegetable flavour

1 bay leaf

freshly ground black pepper

3 onions

1 large carrot (300 g)

1 small celeriac (400 g)

1 large leek

5 sprigs of leaf celery, finely chopped

1 rookworst (smoked sausage) or 400 g of large frankenfurters (won't taste the same, try to get a rookworst if you can)

Tools: large kettle with lid, wooden spoon and slotted spoon

Preparation:

Erwtensoep is best when prepared a day in advance so the flavours can settle. Cook the soup, let it cool and store it in the fridge for a day.

Wash the split peas in a sieve and put them in a large kettle. Add the pork chops (still on the bones) and add 2 liters of water. Bring to the boil. Use a slotted spoon to remove the foam that floats to the top.

Add stock cubes, chopped celery leaves, bay leaf and pepper and gently cook for 30 minutes with the lid on. Occasionally stir with a wooden spoon to prevent sticking.

In the meantime, cut the vegetables. The carrot and celeriac are best chopped up into small cubes. Slice the leek and the onion finely. Take the pork chops our of the soup and cut the meat from the bone. Cut the meat into small cubes and the rookworst into slices. Add the vegetables and the meat to the soup and let simmer for 15 minutes.

As said above, the soup is best prepared a day in advance.

Eet smakelijk! (Pronounced as: ate smah-kuh-luck).

Leftover roast beef, probably smashed potatoes with a drizzle of olive oil, salt and pepper and maybe some leftover carrot fries and I am going to attempt to make my husband mac n cheese with the Tinkyada elbows and extra sharp white cheddar cheese and no cows milk, lucky I love him because I have a feeling it will take a while to get right.

We're having pressure cooked beef shanks, carrots and rice tonight. (Osso Busco recipe, just used a less expensive cut of meat.) DP gets cooking duty next two nights.

Thanks :) Next time I'll post another recipe for an absolute Dutch classic: hutspot. Hutspot is a dish made from potatoes, carrots and onions, traditionally served with either stewed beef or meatballs. I love winter in NL: simple yet hearty meals that really drive the cold away. People on a diet might want to skip these recipies, but I always say that one diet is more than enough for me :P I just excercise and don't snack a lot, so I stay slim.

I've had enough potatoes for this week, so today we'll have steamed rice with cooked green beans and orientally marinated bacon. My BF will want his rice with a sauce, so I'll add a curry sauce for him. Like most Dutch he prefers his potato/veg/meat, in whatever combination possible. This is so well-known in NL that we simply call it the AGV-combination.

I"m totally new to gluten free eating, so i browned up some steak in my new cast iron frying pan with butter. Threw it in the crock pot with some potatoes, carrots, an onions. The potatoes an carrots should be good an the broth should have a nice flavor. Due to healing i wont be having any steak, but it sure smelled good :)

We're having a friend over for dinner, so I'll do my BF a favour and make an oven dish with cheese. (I don't like most cheeses.)

What I'm making today once happened as an accident. I tried to make a dish called Jachtschotel (hunting dish). This is a dish which needs red cabbage, but I accidentally bought red beets. I just used that and it turned out even better. I'll open a recipe topic with traditional Dutch recipes, the Dutch kitchen uses a lot of fresh ingredients which are naturally gluten-free.

Sounds lovely! I adore lamb. It is under utilized/appreciated in my opinion.

Roast chicken, a bit of fabulous thick peppercorn salami, and warm homemade applesuce (Pink Lady apples with cinnamon & cardamon pod.) I'm pretty sure it was a cardamon pod, if not, it was some obscure spice that wasn't labeled from the Indian Grocer. The mystery applesauce was fabulous. DP loved it, but he grew up on applesauce out of a jar. <_<

I think I'll use leftover chicken for a pizza with roasted red peppers, chicken, calamata olives, onion and feta cheese tomorrow night.

My feet are killing me from work! So, a baked potato, and perhaps leftover pasta salad. Carbs and more carbs! :) Why not a glass of wine too.

Tonight is pub night with my buddies, so I might as well have some fries and chicken nuggets :) Last week I've been to a gluten-free convention with a friend of mine. Such conventions are great to find products that local stores don't have. I found chicken nuggets, hamburger buns, ice cream cones with vanilla and chocolate, a traditional "amandelstaaf": a roll of puff pastry filled with almond paste. As if this wasn't great enough: the university of Wageningen showed their latest results: they developed a new kind of bread made from gluten-free oats. These oats have been grown on a field where no wheat has been planted on or near for several years. The bread is deliciously soft, fluffy and tastes just like the bread I remember :)

More of my Roasted Tomato, Garlic and Onion Soup - this time reduced some white wine to a syrup and added that to it.

More Flatbread but I also made Roasted Carrot Hummus this afternoon which goes nicely with it.

Tomorrow we are going to Thailand (well, in the kitchen, that is...).

I didn't get around to roasting the peppers, but we had pizza with chicken, salami triangles, sliced sweet red and yellow peepers, onion and garlic with mozzarella, asiago and parmesan cheese. I made the sauce from an Allrecipes pizza sauce recipe, and it turned out great!

And LOL I'm still not sure what spice I put it that applesauce yesterday, but it was even better today. I'm planning to make more this weekend!

      I don't know how to even begin this or what topic to post this under, so feel free to move it if need be, but I just need a place where I can be honest and I need to vent to people who can relate and who can hopefully inspire me to get back on the right track with my life. This whole gluten / celiac/ testing etc has been nothing but an uphill battle and struggle for me since it began. When I went gluten free years back, it was the hardest thing I ever did, and I did it on my own without much help or guidance aside from this group. I am a foodie and a carb lover and a baker and having to give up so many foods that brought me so much happiness was so incredibly hard for me, but I eventually did it. Even when people encouraged me to have just a little or cheat here and there I didn't give in.  I have since developed uncontrolled diabetes which has complicated all this to say the very least, because none of the breads, flours or replacement foods, that actually taste semi good are diabetic friendly (at least not for me). So I have struggled with eating gluten off and on in the form of crackers and breads and low carb keto foods, even though I know I shouldn't. I do good for a while and then I completely lose control again and somehow justify it in my mind.  Inevitably because of my struggles, I was really concerned about going back on gluten (full time) for the gluten challenge, I mean it gave me an excuse to party hard, and be miserable while doing so, but I was afraid once I did that challenge for 8-10 weeks that I would never be able to give the gluten back up again. And that is exactly where I am sitting at as we speak. It has been an on again off again roller coaster ride of no gluten, gluten, little gluten, no gluten, lots of gluten etc.  I go from buying small loaves of bread and keto tortillas and buns to whole wheat buns and pasta - justifying it somewhat because it is better for my blood sugar issues and that is what is most important. I binge eat some of the foods and then I feel horribly guilty for eating it and then I end up throwing all the gluten food away in a desperate attempt to stop the madness. Then I restart the process all over again at some point.  My joints ache. My stomach is constantly sour. I walk around like I have terrible arthritis or something. My hands are swelling terribly, sometimes I can't even make a fist. I am experiencing numbness and tingling in my hands and weird things with numbness and tightness in my face as well. I am dropping things constantly. I am forgetting lots of things and struggle to recall things. I can't focus on my work. I am having nightmares. I am wanting to sleep all the time. I am bloated and sometimes have diarrhea and nausea, but then other times I am horribly constipated. My  post herpetic neuralgia issues from shingles are much worse now and overall I am just so irritable and angry and emotionally numb.   I know for some it is a simple choice, but I can't be alone in this struggle. Thanks for letting me getting all this out there. I hope someone can scare or encourage some sense into me. It is kind of insane what I do to myself. And I am just tired of dealing with all the food issues and health issues

      Hi Belle, well done for advocating brilliantly for yourself. Looks like you have a good dermatologist on board now to help you go forward. Hope your elimination diet continues to keep you itch free. Sue

      Hi everyone I have just come out of the Dermatology appointment on a bit of a high! Derm said that she does not see dermatitis herpetiformis often but believes everything I said about thinking that I have it. She said it is either that or a wheat allergy - either way, the answer is the same, no gluten. She said that she spends her working life advising people to trial eliminating wheat and diary etc. but they don't do so (I did say that I am equally as guilty and it really got to the point of desperation with me before I tried eliminating gluten. Plus I knew it was not an eczema flare when the little bumps appeared on my skin. She will do a blood and a FIT test for Coeliac but expects both to be negative. I said that I would refuse to do a 'gluten challenge' if she recommended one and she smiled and said she admired me for that, it is not necessary as my evidence was very clear. She did not think a biopsy would be worth doing but did see the bumps on my feet and said that yes, they do suggest gluten/Coeliac/what allergy.  She said that she would like me to be her 'case study' for investigating this so thoroughly myself - and for trying the elimination diet! She does not see dermatitis herpetiformis often. All my bloods that were taken when I was at my lowest point after seeing her were (surprisingly to me) normal. Iron was just a bit low but I have since increased all my vitamin and mineral intake. I did not mention Dapsone because I think I can do this with diet alone now that I appear to have cut out everything that was irritating me (thanks to you guys here). She will give me a repeat prescription of Elocon to use to clear the final areas of sore skin up. I will stay here with you all as we all progress through this.

      I've tried a few bread recipes but I am by no means an expert. However, this recipe is the best bread I've made to date. It uses 3 grains (or their flours if you prefer) and requires a strong blender (like a Vitamix) but no bread machine. I use it to make English muffins or a loaf of bread. The muffins are a little easier to make and the bread comes out in premade portions. It passes the sandwich test and it tastes great over several days (to my taste, store-bought gluten-free breads tend to lose their flavor on the second day) This recipe is pretty flexible in terms of varying ratios or types of grains.  https://www.instagram.com/p/DPDnyaJjpHh/
