Coconut flour sucks up moisture like a sponge so it definitely does require more wet ingredients. It's one of my favourites so will post a few recipes you may like... -

Hmmmm...may be either a bad batch (but you should be able to smell rancidity prior to baking) or it may be personal taste. I actually quite like sorghum but of course in moderation. Weird that only 1/4 cup of sorghum would give such an icky reaction so it seems like it is off. Maybe try it with millet - millet has a very nice, almost cornflour flavour... -

Glad you mentioned that - boxed cake mixes are such a turn off for me - definitely will not be getting this book! Love to bake/cook from scratch. The Culinary Institute of America's gluten-free baking book is good - it includes recipe for cannoli, yeast/other breads, eclairs, bagels and so on. One of my favourites! Also like Annalise Roberts' book. -

The last bread I made was almost too moist - weird. It lasted a week (I wanted to see how long it would last). In fact, the problem I have with some breads is that they tend to be moist and dense rather than dry and crumbly. I'll be careful of the drywall pizza - will ensure it's gluten-free! -

You're not asking for more than anyone else would! I am making a double layer coconut buttercream cake with coconut buttercream filling today - will post that recipe if it is as luscious as it seems! I love lavender, too, in moderation. I make my own herbes de provence blend with lavender. In France many do not use lavender in the blend but I like it!! It IS daunting, no doubt about it! BUT once you learn more about what flour does this and what flour does that it really helps. Isn't that the truth! Udi's does it for me in a desperate pinch but I have to be pretty desperate to eat bought bread products. That is so true! I would rather be proactive and safe than sorry. Plus my goal is to have ZERO gluten, not 10-20 pppm. That means nothing to me. I am trying so hard; in fact, at the dentist today, I did not even have fluoride treatment as it was not guaranteed gluten-free. If I am going to be stringent, it is going to be 100% all the time.

Whilst toaster ovens sure are convenient for many things, they definitely do NOT replace an oven. Think of many techniques such as braising, roasting standing rib roast or chicken, or oven-searing many cuts of meat. But you're right - they do have their purpose.
