  1. Wow - I cannot imagine. That would be difficult. I teach cooking classes and am getting into the swing of some gluten-free classes. Aside from the occasional pizza I cannot even remember buying frozen convenience foods. I've loved cooking since I was 6 so it's engrained! You have my sympathy as you are in a tough spot, that is for sure.
  2. You're right about the bottom line. As of tomorrow (when I get gluten-free multi-vitamins) I am done with Centrum, too. It's not worth it to me - I'm SO strict with everything else that it is not worth taking a chance. My husband will be on Centrum from now on - we have 10 bottles (they were half price with expiry dates into 2013)!!!!!!
  3. You always need an acid in vinaigrettes so if you cannot have vinegars try orange, lemon, lime or grapefruit juice (and zest) with your neutral oil. You can also use some apple cider. You'll also need an emulsifying agent such as dijon mustard. Some finely minced shallots are also lovely in vinaigrettes. Add a touch of honey, agave or maple syrup or sugar...

  6. A while ago I called La Cocina about their corn tortilla chips manufactured in Manitoba and was told they were gluten-free. However, a few days ago I received an email from them informing me that the only flavour that IS gluten-free is Fiesta and that all other flavours contain gluten in their seasonings after all!   7. So sorry to hear this! We have zero gluten-free restaurants within about three hours' radius of here except a Boston Pizza that does serve gluten-free pizza (not too bad, actually). I have no reaction when glutened so have no clue whether it is TRULY gluten-free or not. Thankfully I would rather cook, anyway, but not everyone has the time or inclination...

  11. I'm wondering the same thing as I've been taking Centrum! I emailed the company first and was told some are gluten-free (will check to see if I still have that email). Perhaps I will need to change to Jamieson or something...

  13. Totally agree with making it from scratch. I have yet to find any even decent bought pizza crust so make my own (thin and thick crust). All the yummy charred bits! Mmmm...more like the real thing than bought (but then I practically live in the kitchen!).
  14. Udi's is my favourite purchased bread but I always make my own gluten-free breads now as I am definitely not satisfied with bought stuff. Blech!
  15. Surprised no one has mentioned risotto yet! There are so many combinations it's not even funny, from wild mushroom with pesto to Milanese to fresh herb and toasted pine nuts and on and on...   16. My sister was told after during scope that she most likely had celiac disease - turns out she is gluten intolerant. So, I decided I had better get tested as there are a few distant family members with celiac disease. Turns out I'm another unlucky one! My doctor, husband, family and I were all shocked. But now the lifestyle has more or less become routine...
  17. That is my understanding as well - it is severe for all of us. I am one of the silent celiacs who finds it very difficult - what if I am using a product that is causing serious internal damage and I have no idea? Scary and sobering thought.

Food is my life in many ways as I teach cooking classes, test recipes for various magazines, and cater (or USED to cater). It SUCKS!!! I also hate being in the spotlight in a bad way. It is expensive and it seems unfair. If I had a choice I certainly would not be doing...

  22. Microplanes are amazing to grate nutmeg, citrus zest, Parmesan, chocolate, etc. I own a few. My huge granite mortar and pestle are irreplaceable for making pestos, sauces, grinding spices. Not only that, it is just plain fun to use! My spice grinder is awesome for grinding small batches of flax seed, almonds and, of course, whole spices.
