We've had them bring out the ingredient list from the taco meat box at Taco Bell and Del Taco and the beef has wheat protein listed in the ingredients. Nothing fried there is good because they also fry the flour tortillas for the taco salads in the same oil. The chicken is OK. It can take a while. My daughter was 13 when diagnosed so she had been ill for a while. Our pediatrician said 6 mos. for recovery. Oh for a big hunk of sourdough bread...... there are those days...... I think mostly I feel terrible for my daughter though because I'm an adult, I've gotten to enjoy all the now forbidden foods at some point in my life before my diagnosis, while she's only 14 and having to deal with going to school or slumber parties where there is nothing she can eat.....

Couple of ideas. My daughter continued to have stomach issues after going gluten-free and the Dr. said irritable bowel syndrome is common in people with celiac so you might look up IBS triggers and try cutting out some of those foods. Not sure how old you are but I started taking a natural estrogen supplement and wow, did it upset my system!! Goodluck...

My daughter, 14 was sooooo thin prior to her diagnosis from malabsorbtion (sp?) issues but now that she's gluten-free, she's putting on weight and starting to fill out some. Recently we ate at a BJ's restaurant, eager to try their gluten-free pizza. When I asked the manager about how it was baked, he said it goes in the same oven as the rest of the regular pizza.
