  1. Thanks for the ideas. I'm doing OK figuring out recipes for just my husband and me but when I have to make something for other people (that I can eat too)that presents a bit of a challenge. I've never been adventuresome with recipes, but I am going to have to learn to be creative.
  2. I'm trying to put together a casserole with chicken, rice, broccoli and cheese sauce. I'm having difficulty coming up with a smooth cheese sauce. Does anyone have a good recipe for cheese sauce? Also any suggestions for additional seasonings.

  7. I have been wondering about some of these things too. Vitiligo and neuropathy in my feet. But I see in Rosetapper's posting that the numbness of the toes has not improved in seven years, so I guess I should just accept them as things I'm stuck with.
  8. And for me, it takes about 2 1/2 days for problems to start. That makes it harder to pin down the source of the problem.
  9. The turkeys we have available here are Jennie-O brand. Their web-site says both their fresh and frozen turkeys are gluten free.

  12. I just read the ingredients in my Maybelline foundation and I had to laugh. Among all the unpronouncable ingredients was one I recognized--caffeine!! Why would there be caffeine in a foundation?
  13. My GI suggested that I use Imodium on a daily basis--as needed. I use one to three daily. Is there any problem with this on a long-term basis?

  15. EnteroLab does stool testing for yeast sensitivity. It cost around $100 (not covered by insurance) but I thought it was worth it to know that that was not one of the problems I had to deal with.

    ARCHIVED Metamucil?

    In another topic someone mentioned that Metamucil is not safe to take. Is this correct?
  18. Don't worry--your sweet tooth can be tamed. Six months ago, if I ate one cookie, I wouldn't stop until I had eaten a dozen (or two). Today I can serve cookies and ice cream to guests and not even care--except to wonder if they wouldn't be better off not having any either.

I keep a detailed daily journal of the foods I eat, the supplements I take and also of the consistancy and number of bowel movements (diarrhea is my main problem), my energy levels each day and also note any little thing that may be different each day.   20. I agree with you, Peter. When I started this, fructose was the first thing I considered (along with gluten for certain family reasons). But was told by a dietitian that my problem definitely wasn't fructose but probably gluten and yeast. EnteroLab testing ruled out yeast--confirmed gluten. Today I decided to test fruit--I flunked the test.
  21. I've been working trying to identify foods I can tolorate for about four months. Have been gluten-free for four months but did not get rid of diarrhea until I went off all fruits two months ago. Today I added 1/3 cup of fresh blueberries at lunch--couldn't resist them. Seven hours later--diarrhea. Bummer
  22. Does peripheral neuropathy in the hands and feet go away as you stay on the gluten-free diet or is the damage permenant?
  23. This topic may have been discussed many times, but a search didn't bring me an answer. Where does caffeine fit into all of this? Is it a problem? I don't function very well without it--very low energy. Do I need to give it up? I don't feel that I am addicted to caffeine because I can eliminate it for several days without getting a withdrawal headache...
  24. My daughter has a major canker sore problem. Her physician finally sent her to Mayo Clinic for evaluation. They diagnosed her as having an iron absorbtion problem. As long as she can keep her iron levels up (difficult to do) she is free of canker sores. But I wonder if she actually has a gluten problem which is interferring with her iron absorbtion.
  25. I'm new on the board, so this may have been discussed many times before. What about the fact that most of our livestock are grain-fed? Does that have an effect on a gluten-free diet?
