  1. I have to eat breakfast every day or I starve until lunch. I eat 2 eggs, whisked together in a bowl and then nuked in one of those egg poacher-style containers. Usually I add some lean ham (pre-cooked) and mustard on gluten-free, dairy-free bread. That gives me protein, fat, and carbs. I find with the combo, I easily stay full until lunch.
  2. I make mine with dried rosemary tucked in, minced garlic on top, and generously sprinkled salt. (And olive oil.) They are wonderful. I made mine tonight with pork tenderloin. Amazing.
  3. Brown rice with garlic, Earth Balance, mixed veggies, and a cut-up chicken breast. I might add some more seasonings but I might just let it stand. I do so love garlic ...
  4. Buckwheat, edamame, tuna, olive oil, garlic, onion, mixed veggies, curry powder, chili powder, and cumin.
  5. Teriyaki tofu with onions, celery and green beans over "ancient grain" mix cooked in veggie broth.
  6. Bacon, steamed spinach, and "buttered" toasted gluten-free/CF bun as an open-faced sandwich. Super tasty.
  7. Teriyaki pork with steamed veggies (I love steamables!)
  8. Seared scallops with olive oil, garlic, and steamed veggies over gluten-free pasta.
  9. "Ancient Grain mix" made in veggie broth (with extra veggie broth and some veggie oil added) in the rice cooker with shallots, garlic, and jalapenos, then spinach wilted over the top and a can of tuna mixed in at the end. I am all about the canned fish for ease of cooking.

This may be gross to everyone else, but I made 1/2 bag of California mixed frozen veggies, 2 tbs chopped fresh shallots, 1 can of salmon (drained), and a couple big squirts of wasabi mustard. I nuked the shallots with the frozen veggies, then added the salmon and wasabi mustard and stirred. Simple, easy food with...

Curry rice with steak, as follows: long grain brown rice cooked in chicken stock with turmeric and curry powder, chopped shallot + minced garlic + frozen peas + frozen chopped green pepper steamed in chicken stock on the rice cooker, chopped hard-boiled egg whites, cubed steak leftovers (marinated in soy sauce, roasted red pepper flakes, garlic, and shallots...
  12. Steaks marinated with soy sauce, garlic, shallot, and red pepper flakes since yesterday. Steamed broccoli with a bit of olive oil and some garlic salt.
  13. Yes. I was heartbroken when beer was no longer my friend. I had so few years of enjoying beer ... but at least I do like red wine. I don't particularly like harder alcohols, so I'm left with only wines as my sources of ethanol. And red is my favorite! But at least there can be some variety by adding white. And for New Year's: CHAMPAGNE!
  14. Yeah, tequila is NOT my friend. I prefer red wine. That's easier to drink more slowly ... I tend to die a little every time I meet tequila.
  15. I'm cooking this hot and sour soup recipe to use up all my Christmas dinner turkey leftovers, along with some other things I had sitting around (half a package of tofu, an onion, some dried mushrooms, 3/4 carton of chicken broth, the end of a bottle of soy sauce, etc).
  16. I like my chili like that too - more like a veggie soup than a traditional chili. Only I do add some beef sometimes. Was it too spicy for him? Sometimes kids are more sensitive to spiciness than adults. Although I assume you've made this for him before and you know his tolerance levels...
  17. Buffalo burgers ... maybe bison? I can't remember which one you can buy in the store. Whichever one is not an endangered species is the one we're eating!
  18. Bacon! I actually only ate bacon for dinner tonight. Sometimes it's great to be an adult.
