  5. Wow, I'm originally from New Jersey and am loving hearing all the place names. Moved from Bergen County (River Vale) but am very familiar with Hackettstown - my aunt lives in that area. And I lived in Sparta for a year.

  8. Also...as to the possibility that you're native (do you mean Native American?), I don't think that's probably the reason you have a sensitivity to gluten. I know plenty and then some of Euro- and other-descent people who have NCGI or celiac disease.
  9. I am so sorry. Most doctors just don't "get it." It's the whole cultural "but wheat is such a wonderful, happy, benign food that there must be practically no celiacs in existence!" thing. (If they even read a paragraph on celiac in med school. I've heard from med professionals that their nutritional unit is extremely short, like, a page short. Don't know...
  10. Thank you. <3 I haven't made a bone broth. I am definitely going to make that. I've been making broths out of pieces of chicken, etc. I haven't started a probiotic yet...I will go get some.

  12. I have not been DXd. But I am without a doubt gluten sensitive at the very least, to the point that by now, I am barely able to function. Yes, when I first related how I was feeling to gluten intolerance, I was angry. I felt that EVERYBODY else could eat "normally" and I couldn't. But recently I've come to a realization. Everybody can't eat "normally...
  13. Good luck and I hope you figure it all out and feel better! We really are like scientific experiments on ourselves in this quest. Eliminate this, try that...It's the only way to know what we can eat and what we can't.
  14. How long have you been gluten-free? If it hasn't been very long, you could still just be bloated/inflamed. If it has been a while, like the others said above, consider other food intolerances. I have discovered I can't do dairy. I do bloat from dairy, but only in my stomach (with gluten, it's my entire body - face, wrists, etc.).
  15. Yup. Dedicated (new) pan and pots, dedicated cooking utensils (also new), dedicated dishes. I will hang in there...thanks for your answer...
  16. Although she's being annoying, I personally believe way more people have gluten sensitivites than are aware of it. Go with it, let her be paranoid, it will make eating there much safer! She could be perhaps a bit of a hypochondriac?
  17. Honestly, they don't pay their employees very much. I probably wouldn't be a very enthusiastic worker either. Not an excuse, but being responsible for my own body, I personally wouldn't trust McD's, even the fries, which could easily be cross-contaminated being handled by gluteny gloved hands.   18. Talk me off the ledge. I am 1+ week gluten-free and 1 week dairy free. And honest to God. I get cramps and D with EVERYTHING I eat. Rice? D. (So I stopped rice.) Cantaloupe? D. Home made soup with well-washed vegetables? Cramps and D. This morning I had eggs and a few well washed strawberries (the eggs were in a dedicated pan, I bought it knew...
