I realize this is a very old thread (or the OP and original responses are old, anyway) but I personally don't mind at all that it was bumped up. I think the OP's dilemma, though old to him/her now, is one many of us face as gluten-free newbs, and the responses have been priceless, at least for me. Okay, listen...I have never been tested for celiac, but I am hypothyroid with every extending difficulty that comes from being so (ugh), and I fully get your frustrations. I feel "done" a lot too. Right now I'm waiting for a lab test slip in the mail (why the hell did they do that? i would have picked it up) and we had a holiday in there...so it may come...

The collander example listed above is probably the biggest problem when eating at someone else's house. People don't use separate utensils, separate pans, separate serving spoons, etc. Most people also think "a little" can't hurt. It's not a very well-understood condition except by people who have it. I'm really sorry you got sick. -

Another thing is, you never know about cross-contamination in other people's homes. Most people don't cook on new boards, with new utensils, etc. when they prepare gluten-free food...unless they're already a gluten-free household or have a gluten-free member (and even then, not always). It stinks, nobody wants to say "no" when someone is urging that special... -

Hey, all. I'm not a diagnosed celiac. I've known for a long time just on how I react that I am sensitive to gluten so even if I'm not a celiac, I know I should not have gluten. But I've been putting off giving it up. I have Hashimoto's thyroiditis and have been doing a lot of research lately because I've just been going farther and farther downhill....

Would eating flax constitute eating grains? I hope that isn't a stupid question. I do eat flax but other than that, no grains at all, ever, or I suffer the consequences. BUT eating my flax-included non-grain diet, I'm doin' great! -
It really doesn't bother me so much because a lot of people are gluten intolerant and don't know it; therefore, even non-DXd celiacs or gluten intolerants -- people who'd never have entertained such an idea -- are getting better, too (as long as they stick to the diet). Also, as a few others have mentioned, it raised awareness...*and* it makes stores start...

OP, can I ask when you were DXd and how long you've been gluten free? Unfortunately, when one has been soooooooooo sick for so long, the thought of it coming back truly is terrifying. I've basically been sick since I was 11 years old. I am now 43. I am JUST finding out what's wrong and feeling better. This issue has run my life for more than three decades... -
'Zactly. "What's behind the wheat-free trend?" Well, probably the fact that it makes so many of us puke and gives us cancer and vitamin D deficiency and additional autoimmune stuff and basically makes our life hell. I mean if they really wanna know.

This is brilliant. Thank you SO MUCH for posting this. I get the very same reaction. It's weird...I didn't think anyone else had it. After a glutening, for about three days (usually worst on the first and second day) I am tired after any meal. Interesting. -
I hate to say it, because trust me, I love junk food as much as the next person, but in a super-busy place like Taco Bell I really doubt you can trust that even the items listed gluten-free are not CCd. Honestly, the chances of someone grabbing a wheat-y flour shell and then grabbing your supposedly "gluten-free" item two seconds later with the same gloves...

He may be doing damage to his body whether he feels "terrible" afterward or not. I always know when I've had gluten because of a few bothersome but not necessarily knock-me-down symptoms. The symptoms are very clear but they would be "worth it" for once in a while if I didn't realize the physical damage I am most likely doing. I don't believe one always... -

Has anyone else noticed that some varieties of Chex cereal are labeled gluten free??? This is the first I'm seeing of it, but then again, I went to a much bigger grocery store today than the one I usually visit. Has anyone reacted to these anyway? Anybody try them and like them? Thanks!
