  1. Yes, Namaste makes a gluten-free muffin mix. I'm sure it doesn't have to be that brand, that's just what my store had. I didn't try it, but my (gluten eating) husband did and he liked it. Although he'll eat anything so that may not be the best barometer . I'm just glad to have something to add to the list of things my kid will eat!
  2. I've never tried this with gluten free brownie mix, but I've done a simplified version w/ regular. Rinsed a can of black beans in the can then filled with enough water to cover, then pureed it all in the blender. Added it to dry brownie mix and baked as usual. No other ingredients. It was great - you'd never guess that it had black beans in it. Maybe...
  3. No, just added them to the prepared muffin mix. Yeah the chicken is a little weird although he didn't notice. He hates the texture of meat.
  4. I played with a muffin recipe from one of my cookbooks and was able to sneak in some meat/veggies (both of which my very picky toddler tends to refuse). Followed the package directions from the Namaste muffin mix, added 1/2 cup applesauce, about 1/2 c pureed chicken (I cheated and used baby food), a jar of sweet potato baby food and a jar of carrots. He refuses meat (except the occasional hotdog) and veggies unless they are pureed.   7. Hi - We are in the process of transitioning my soon to be 3 y.o. son to a gluten-free diet not b/c of celiac but b/c of his autism. We have limited gluten for a while but now we are fading out the gluten completely. I went shopping over the weekend but I have to confess that I was completely overwhelmed. Is there an easy way to tell by reading the ingredients...
  8. I do roasted chickpeas which is fairly cheap and healthy. Rinse and drain one can of chickpeas, dry them off a little. Add 2 tsp olive oil and sprinkle with some salt and garlic or onion powder. Bake at 450 for 30-40 minutes (until they are dry and brown like nuts). You could also add a bit of cayenne pepper if you like spicy things.
  9. Thanks - I'll bet they have the magazine at Whole Foods so I'll haveto check it out next time I go. We do have one of the blends in our pantry (it might even be Namaste) but I've only tried it for recipes that don't require a lot of flour, like the sweet potato casserole I made for Christmas dinner.
