I'm sorry, you must be overwhelmed b/c toddlers can be so picky in general so it's extra tough when you add a lot of allergies to the mix. I don't think it's necessary but a stand up mixer is definitely helpful. I have the Kitchen Aid too. At first I felt bad spending the money but I use it ALL the time - like someone else said, sometimes several times a day. I make cookie dough, pizza dough, muffins, etc. in under 5 minutes. Love it. -

We do sunbutter or peanut butter on Udi's bread a lot. I found a recipe using gluten-free muffin mix and add mashed northern beans for protein (I sneak in baby food squash or other veggie b/c I have a little veggie hater). I just got the Almond Flour Cookbook by Elana Amsterdam. I'm loving it! Made her snickerdoodles the other day with some substitutions (coconut oil for grapeseed oil) and they were amazing. We do bean patties a lot. I go ahead and do northern beans from scratch but even canned (rinsed and drained) is inexpensive. Mash and add some gluten-free bread crumbs, a beaten egg, some spices (I usually do Italian seasoning), form into patties and fry on both sides in a bit of olive oil. Also vegetarian chili is super cheap, makes a lot, and freezes... -

I have a super picky 3 year old too - drives me crazy! Some stuff that has worked for us ... Udi's bread has by far been his favorite. But his primary issues are a language delay, social issues (not knowing how to interact with peers), and repetitive behavior (spinning objects, opening and closing doors, etc.). My son is the one who is gluten free and he likes Udi's, but he really hasn't known anything else. This may not help much if you are looking to do a sandwich, but I've had much better luck with quick bread type things (banana bread, pumpkin bread, carrot bread, zucchini bread, etc.) than the white. Love the peanut butter sauce idea - that's one of my favorite things to put on pasta. The Spunky Coconut website has a recipe for "5 minute mac and cheese" that we make sometimes. There's no dairy - she uses cashews to get a creamy sauce. -
