  1. Thanks, everyone! The gluten-free Betty Crocker recipe triggered my memory that I have the Gluten Free Cake Mix Doctor Cookbook, so I used that as a base and made the peach cupcakes. Huge hit - sent some home with them. I did not know that there are gluten-free rice krispies now - that's going to have to be my next experiment b/c that's something I can...
  2. Hi - We are having some friends over this weekend for a BBQ. Their son (age 5) and my son (3) have different food intolerances and I'm trying to think of an easy, kid friendly dessert that will work for everyone. My son can't have gluten and only limited dairy, their son can't do nuts or chocolate. Most of my go-to dessert recipes have nuts or chocolate...
  3. Hi - We just returned from a cruise on the Disney Dream and I wanted to let people know how accommodating they were with my 3 year old's diet. He is on a gluten free/limited dairy diet not b/c of celiac but b/c of his autism. He's a picky eater because he also is sensitive to texture and won't eat meat. We could pre-order pretty much anything that he...
  4. Hi - I was looking for some gluten free crackers for my son. He really liked the Ritz crackers - anything like that which would make a good base for cheese or peanut butter? He does eat the Nut Thins but I was hoping for something a little less "ricey" and looking a little more like a traditional cracker.
  5. Along the lines of what someone else said, could she be reacting to the food coloring? My son gets crazy sometimes after having food dye - he'll start running laps around the house. I don't buy anything with the food dyes any more.
  6. Thanks, everyone! I guess my problem was assuming that Earth Balance would behave the same way as shortening/butter. I made the Orange Bundt cake from the same cookbook and it turned out great so I wanted to try the cookies, especially since the cookie recipes in that cookbook are so easy! I guess I either need to stick to finding recipes from scratch...
  7. I tried to make the snickerdoodle cookies from the gluten-free Cake Mix Doctor Cookbook, and they were a mess! They came off the sheet in crumbs. The recipe was basically Betty Crocker yellow cake mix, egg, butter (I used Earth Balance sticks to keep it dairy free), cinnamon, and some sugar. I kept trying different things on subsequent batches - greasing...
  8. We do the "impossible pies" sometimes ... I add Applegate Farms hotdogs and some cheddar. We tried to make pizza crust using the bisquick and my son hated it
  9. Hi - Anyone have a favorite corn cake recipe? I picked up some local corn on sale at the farmer's market and I'm trying to find some creative ways to introduce veggies to my veggie-hating preschooler.
  10. Re other allergens ... one of the cookbooks I have gives you the recipe, then in a sidebar tells you how to make it dairy free. I found that really helpful. When I'm looking for cookbooks, I look for one that has at least a couple of recipes that are super fast and easy. I don't mind more complicated recipes when I have time to cook, but I like having...
  11. I made the Fresh Orange Bundt Cake tonight and it came out great! It didn't rise as much as a gluten bundt cake but was still very good (and easy).
  12. I made the peanut butter cookies the other night. They were super easy, although a little dry straight from the oven. But really good the next day. I'm going to try some of the other recipes in there, but one thing I don't like about the book is that a lot of recipes call for instant pudding or flavored gelatin. I try to avoid food dyes with my son...
  13. LOL baby zombie heads. Now I can't get that image out of my head. I make blueberry muffins with a mixture of almond meal flour and rice flour. I have never actually baked with Bob's - used it to thicken sauces and in pancakes and they came out OK.
  14. I have a very picky eater too. Some things I give him ... Applegate Farms hotdogs (they make an apple/chicken sausage too), muffins that I make from Namaste muffin mix and add pureed veggies and 1/2 c applesauce, scrambled eggs (we have this for dinner at least once or twice a week), gluten-free cereals like Gorilla munch, bean patties, "Impossible pies...
  15. We live in Orlando so we go to Disney fairly often. We mostly go to Magic Kingdom b/c my son is 3 and that's his favorite. They have a lot of gluten free options. They sell gluten-free cookies in the bakery on Main Street (can't remember the name!) and several of the counter service places had things like Amy's mac and cheese and gluten-free pizza options...
  16. We went to the one in Orlando. It was right after they introduced it so it's possible the kinks weren't worked out yet. Or we were all just being too picky!
  17. Hi - We are going on the Disney Dream in August. I was wondering if anyone had any experience with this line? My son is gluten free/mostly casein free not b/c of celiac but b/c of autism. Unfortunately b/c of his autism he is very sensitive to food textures, so he won't for example eat meat. At home I'm able to work around his idiosyncracies (sp?)...
  18. OK I experimented and this worked pretty well. I let the almond meal sit in the fridge for a day or 2 uncovered so it would dry out a bit. Then I cooked one of my muffin recipes that was really heavy on the almond meal flour (2 cups) and subbed my almond milk leftovers for a little over half the regular almond meal flour. It came out really well! I think...
  19. So I guess we are the only ones that didn't like it! I found the crust really "ricey" and it was VERY expensive. My son, the one who is gluten-free, wouldn't eat it. We ordered a white pizza and I think it was $17 for a medium. Having said that, I really do appreciate them doing that. It can be so hard to eat out gluten free, so I'm glad to see more...
  20. Stupid question ... can I sub the almond meal leftover from making almond milk in equal amounts for almond meal flour? Is it kind of the same thing? I have several muffin recipes that I make regularly calling for almond meal flour and it would be so nice to be able to substitute.
  21. Where can I get San-J's? Regular grocery store or do I need to make a trip to the health food store? We have been using La Choy's but I don't like the way it tastes.
  22. Hi - Lately we've been making our own almond milk. I've been using the leftover almond meal to make chocolate chip cookies which my 3 y.o. son adores, but I'd like to change it up a bit. Anyone have any good casein free recipes? I looked online but so many of them seemed really complicated!
  23. My son was diagnosed with autism at 18 months. Stomach issues are VERY common with autistics - it is theorized that these stomach problems can aggravate autistic symptoms. Many parents have tried a gluten free/casein free diet with their autistic children and had incredible results. The problem is that a blood allergy test may not reveal a sensitivity to...
  24. I second the recommendation for Earth Balance. I haven't used them in cookies from scratch, but made the mix from Cherrybrook Kitchens with it and they turned out well.
  25. Like others said, I would look at the dairy too. We noticed when he was younger that whenever we gave my son cow's milk at night he always woke up crying. You could always cut it out for a few days and add it back in if you don't see a difference. For yogurt you can try So Delicious coconut milk yogurt (they also make an "ice cream"). We use Earth Balance...
