  4. I use the recipe from Elana's Pantry - I love it. I do make a couple substitutions ... coconut oil (liquified) for the grapeseed and honey for the agave.
  5. You can definitely make your own Lara bars - takes just a few minutes in the food processor and they are amazing!   6. Roasted chickpeas? Super easy and cheap. So Delicious coconut milk yogurt, rice cakes with soy cream cheese, bean dip. You could make muffins using something like Pamela's baking mix as the base to cut back on the number of ingredients you need.

  8. So I was reading another thread and noticed that a lot of you bake your own bread ... what recipe are you using? I was looking for a tried and true one. I've tried a few mixes and not been happy with the results - very dense and/or a weird texture. My son likes Udi's for sandwiches, but it can run almost $6 a loaf.

It was surprisingly easy - Blended 1 c cooked rice, 4 c water, 1 tbs vanilla and about 1.5 tbs honey.   18. Interesting the timing of this discussion. My son is on a gluten-free diet for his autism. He can tolerate occasional gluten just fine as long as it isn't several days in a row or too much.   20. Agree with the pp about Elana's Pantry - her stuff is so easy and really good. I make the chocolate chip cookies for my son a lot and I actually like them better than the gluten version. Also the Spunky Coconut (www.spunkycoconut.com). My favorite is her vanilla bean cake recipe. I usually do that for my son's birthday cakes.
  21. Have you tried cooking with almond or coconut flour? Has a lot of fiber and protein so you might react less, but can still have muffins and breads and such.
