ARCHIVED Butter Substitute For Baking
Kelleybean replied to Kelleybean's topic in Gluten-Free Recipes & Cooking Tips
Thanks! Coconut oil seems like a good choice ... not worried about fat when I'm making recipes that call for a stick of butter anyway -
ARCHIVED Butter Substitute For Baking
Kelleybean posted a topic in Gluten-Free Recipes & Cooking Tips
Hi - We are going to be transitioning my 2 y.o. son to a casein free diet in a few weeks. I noticed that lot of the cake mixes require butter - what would be a gluten free substitute? I know that ghee is Gluten-free Casein-free, but you don't bake with it right? -

Can you post the recipe? That sounds good! -
ARCHIVED 2 Questions
Kelleybean replied to Kelleybean's topic in Parents, Friends and Loved Ones of Celiacs
Thanks everyone! I think I have some chocolate chips in my pantry - I'll have to give that a try. I know that the M&M's are special for him b/c I have never really given him candy. Poor kid has been ridiculously excited about those darn M&M's - stayed dry all day for them! Hopefully something else will be just as effective. Definitely going... -
Hi - Two very different questions. My son turns 3 in March and we are in the process of potty training him. He is autistic so in the initial stages we really need to rely on a good food reward for going in the potty. We've been using M&M's which have been pretty effective but I really don't like him to have the dyes. Can anyone recommend a gluten...

Kelleybean replied to glutenjunkie's topic in Parents, Friends and Loved Ones of Celiacs
Hi - We started the gluten-free diet about 6 weeks ago for my son (he will be 3 in March). I have not noticed any change yet - it might be too soon though. I'm so glad that your daughter is doing well! -
ARCHIVED What To Make In A Pinch?
Kelleybean replied to Darwin's topic in Gluten-Free Recipes & Cooking Tips
Yes, but not gluten free. I don't think it would matter though. If I were doing black beans I'd probably throw in some crushed gluten-free tortilla chips with the bread crumbs, and maybe do cumin instead of the Italian seasoning? -
ARCHIVED Anybody Taken A Disney Cruise?
Kelleybean replied to anna34's topic in Traveling with Celiac Disease
I'm curious too b/c we're taking one earlier this year! I suspect that they do a good job, especially if they know ahead of time. We live in Central Florida and go to the theme parks quite a bit and are really accommodating. I even wrote them a letter thanking them after one of our visits. -
ARCHIVED What To Make In A Pinch?
Kelleybean replied to Darwin's topic in Gluten-Free Recipes & Cooking Tips
Can you do egg? I keep the stuff for bean patties around for when I haven't made it to the store. 1 can northern beans, rinsed drained and mashed, 1 tsp Italian seasoning, 1 beaten egg, enough bread crumbs to make the mixture thick (I keep the heels of Udi's bread in the freezer). Shape into patties - I do 4 - and pan fry in a little olive oil. I top... -
ARCHIVED Simple Stew Without Processed Ingredients?
Kelleybean replied to cO-ol's topic in Gluten-Free Recipes & Cooking Tips
This might not be exactly what you are looking for but here's a recipe for Brazilian Black Bean Soup. Super easy and cheap. It is WAY better the next day b/c the flavors have time to blend so sometimes I'll make it a day ahead. 1 tbs olive oil 3 c onion, chopped 8 cloves garlic, chopped, divided 1 carrot, diced 3 tsp ground cumin 2 tsp salt 1 red... -

TH - sorry to get off topic but can you tell me how you make your rice milk? I've tried making almond milk but not rice milk yet and have been wanting to. -

ARCHIVED Any Ideas For "disguising" The Texture Of Meat?
Kelleybean replied to Kelleybean's topic in Parents, Friends and Loved Ones of Celiacs
I agree that meat probably isn't necessary - I was actually a vegetarian for a while and mostly cook meatless meals. It would help if my kid would actually eat a veggie that wasn't pureed! I guess I keep wanting to go to meat b/c I want to open up his meal options a bit. Right now he has scrambled eggs for dinner several nights a week. I guess there isn... -

Hi - My son has been on a gluten-free diet for about 3 weeks now. He does not have celiac but he is autistic. I am REALLY struggling to come up with a variety of meals from him, and have been relying excessively on PB&J and gluten-free macaroni and cheese. He has always with rare exception refused meat. I've tried chicken, hamburger, salmon, steak... -
ARCHIVED Dairy Free "cheese"?
Kelleybean replied to Kelleybean's topic in Gluten-Free Recipes & Cooking Tips
Thanks! I'll have to see if I can find Daiya ... -
Hi - Can anyone recommend a good dairy free/gluten-free "cheese"? Is there anything out there that even comes close in texture, melting, flavor, etc. to regular? My son is OK with soy but we are trying to cut back on dairy as much as possible. Thanks!

ARCHIVED gluten-free Food Too Expensive... Tips For Feeding Family?
Kelleybean replied to GFMomma711's topic in Parents, Friends and Loved Ones of Celiacs
We also do beans a lot b/c my son absolutely refuses meat - regular beans and bean patties. Very cheap. I will also give him a scrambled egg and a side of sweet potatoes more often than I should admit! I know what you mean - gluten-free bread is ridiculously expensive. I'm lucky in that my son is the only one who is gluten-free, so a loaf of Udi's lasts... -
ARCHIVED Pizza Crust And Pasta Suggestions?
Kelleybean replied to Kelleybean's topic in Gluten-Free Recipes & Cooking Tips
Thanks for the mac and cheese recipe - I've actually been looking for one. Mac and cheese is a favorite of his, and I figure it might be something I can sneak some veggies in. We tried the glutino pizzas and also went to Mellow Mushroom and he rejected both. I was especially bummed about the Mellow Mushroom because I was hoping it'd give us a restaurant... -

Is Worcestershire sauce gluten free? If so, my simple recipe might work: brown one pound ground beef and drain fat. Add 1/3 c ketchup, 1 tsp Worcestershire sauce, 8 oz frozen mixed veggies (I use the carrots, peas, and corn combo). Spoon into baking dish. Top with mashed potatoes mixed with 1/4 c shredded Cheddar. Bake at 400 for 10 minutes until heated... -
ARCHIVED Baking Cookies Specifically Chocolate Chip
Kelleybean replied to Marlie's topic in Gluten-Free Recipes & Cooking Tips
Sounds like you are doing from scratch, but if you want a mix I made the Cherrybrook Kitchen chocolate chip cookies earlier this week and they were really good. It called for a stick of butter, so I guess it's hard to go wrong! -

My son loves these. We just do the basic cream cheese or peanut butter, but you could also use it to make mini pizzas. -

ARCHIVED Pizza Crust And Pasta Suggestions?
Kelleybean posted a topic in Gluten-Free Recipes & Cooking Tips
Hi - My 2 y.o. son is very new to being gluten-free and I'm still experimenting. Can anyone suggest a good pizza crust, either pre-made or a mix (haven't stocked my kitchen yet with all the flours to do from scratch). I tried using gluten-free bisquick but it came out very sticky and very difficult to spread into a thin crust - what my son prefers. ...
