I was thinking about the chocolate chip problem and remembered a video that I saw on this website: www.lillianstestkitchen.com. She makes her own chips - melts pure chocolate, adds some agave, spreads it on a cookie sheet and freezes for a few minutes to harden, then cuts it into tiny chunks. I like this bread recipe and I'm not even gluten free - Open Original Shared Link It does not taste like "regular" gluten bread but I like it anyway - it's shorter and I think it almost has a nutty taste - but it goes together in minutes and is fairly healthy which is a bonus.

You could always try to go gluten free diet and see if it helps and then go from there. I can't imagine how it would hurt her in any way? I'm probably biased b/c I bf'd my son for 2 1/2 years. I was really glad that I had the opportunity to do that. -

If you want something sweet, I second the recommendation for Elana's Pantry. Are you OK with nuts? She uses mostly almond flour. I make her chocolate chip cookies often and they always come out great. She also has a recipe for brownies using mostly almond butter that might work for you ... I haven't tried it but I read the reviews they were almost 10... -

I have never tried to make gluten-free mac and cheese before and I have some questions. I want to use Tinkyada pasta. In the past, I would cook the mac and cheese al dente and then I put it in the oven to bake. Would I do the same with gluten-free pasta? Maybe add just a touch more of coconut oil? I've subbed coconut oil in a lot of recipes and haven't had a problem with it being dry but I was always subbing for other oils, not butter. But you could also try grapeseed oil. My other thought is that coconut milk is much thicker than regular milk so you might be getting less liquid there. You could add a... -

My first thought is the Kraft cheese packet since it was touching the pasta - maybe some cc. Annie's makes a gluten free boxed mac and cheese - I get mine in Target for a lot cheaper than the grocery store. Also Amy's has a frozen gluten-free mac and cheese that we keep in the freezer for emergency dinners. -
There are a couple here ... Open Original Shared Link I think the orange chocolate chip ones look good! I have not tried any of her scone recipes, but I've made a lot of things by her and they almost always turn out great.

There's also a gluten free version of the Cake Mix Doctor cookbook. You can use the Betty Crocker as a base and add ingredients. I really like the orange cake recipe.

Not exactly what you are looking for but there's a recipe on the Spunky Coconut for "5 Minute Mac and Cheese" using cashews in the sauce. My super picky 4 year old eats it. Also not sure about Panko exactly, but when a recipe calls for bread crumbs I just run the heels of my Udi's bread through the food processor. Works really well. I've also done crushed...
