  2. I second (third? Fourth?) the vote for Udi's bread. It's the closest to "regular" bread we've found. Also really love the Bella baking mixes - we do the multi-grain. I know it isn't white, but I'm not gluten free (my son is) and I still love this bread. There's a roll recipe included in the recipe, and even though there are a few steps to it it isn't...
  3. Muffins made with coconut flour? You could do pumpkin or squash muffins to sneak in some veggies.
  4. Have you seen this website? www.elanaspantry.com. I really like her paleo bread recipe. She has similar recipes for banana bread and pumpkin bread although I haven't tried those. I also do the breakfast bread. I love it because there is no flour at all - uses almond butter as the base. I've never tried to eliminate the egg but if you read the comments...

  6. Thanks everyone! Based on your comments, I think I'll stick with my Tinkyada. My son is the one who is gluten free, and he's super picky.
  7. Hi - My Publix used to carry Tinkyada pasta but now they stopped. Now they just carry DeBoles and Notta Pasta. Can anyone tell me how these are? I hate shelling out a lot of $ for an expensive gluten free product and then have it be a dud. If neither are good, then I can make a special trip to the health food store.
  8. I do this too! Sometimes I make them in the morning to send in my son's lunchbox. I'm with you ... if I make a big batch I wind up eating way too many.
  9. I always do the Vanilla Bean cake from the Spunky Coconut (www.spunkycoconut.com) for my son. Always a hit.
  10. Here's a recipe I do all the time ... a can of mashed beans, a beaten egg, bit of salt and spices and form patties, then pan fry in some olive oil. Also wondering if soup might be a possibility - can of gluten-free broth, throw in some frozen veggies and maybe a chicken breast. Maybe scrambled egg based dishes in the microwave?

  12. We just got "Eat Like a Dinosaur" and I love it! They do paleo. It's directed at kids but some of the recipes are really easy and fast. I have sticky notes (what I use for "I want to try that") on just about every page! Also really like the Spunky Coconut's grain free cookbook.
  13. Perfect - thanks! I should have added that to the mix you are supposed to add 1 c water, 1/4 c oil, and 2 tbs honey or sugar.
  14. I've never had good luck doing a 100% substitution with my homemade almond meal, but that might be b/c it tends to be my leftovers from making almond milk. I usually sub it for part of what the recipe calls for (maybe 25% or so), then use commercial for the rest. Cookies seem to be a little more forgiving of my almond meal than breads and such.
  15. Here's what came to my mind - finely cut up Applegate Farms hotdogs, homemade chicken nuggets, bean dip/hummus on gluten free crackers and coconut milk ice cream. Amy's has a frozen gluten free/dairy free mac and cheese too.

  17. I got it at our health food store. It's local, not sure if something like Whole Foods or TJ's has it. I saw it on Amazon but you had to buy at least 4 - I know buying in bulk expensive gluten free products that you haven't tried before can be scary though.
  18. I made Bella multigrain sandwich bread today and it was amazing! After I tasted it, I actually went and dug the wrapper out of the trash to make sure I didn't buy a gluten mix by mistake. I highly recommend it!
  19. I really like the cookbooks from the Spunky Coconut (especially the first one - pink and white cover) and Elana's Pantry (the Almond Flour Cookbook). Only thing is that it has more of the baked goods recipes (muffins, quick breads, etc.) than actual dinners but there are some great dinner/lunch recipes in both. Like the others said, I tend to use the internet...
  20. I don't know if anyone else has found this, but I have had better luck with making my gluten-free baking products smaller. So instead of regular size, what if you did "mini-pancakes"? Another thought ... are you using Bob's Red Mill almond flour? I use Honeyville - buy it in bulk from Amazon. Bob's is very coarse. I've had much better luck with Honeyville...
  21. Agree with what others have said ... the liquid-flour ratio is WAY different for coconut flour. I just made a birthday cake for my husband Friday and the recipe called for 6 eggs and only 1/3 c coconut flour. Check out www.spunkycoconut.com. Love her recipes - her banana bread is incredible. I like it better than the gluten version, and sometimes bake...
  22. This strategy may not work for you since you say that he won't eat ANYTHING. But when we give something unpreferred to our son, we always have something at the same time that is highly preferred. One bite of the unpreferred item, then he gets a bite of the favorite. Works really well for him. My other thought is could he be in a cycle? Ate something...
  23. I have never tried this so not sure if it will work ... but I was listening to NPR once and they were interviewing a cookbook author. She suggested boiling (for several hours I think) one of those jugs of unfiltered apple cider. Said it would eventually turn into jelly. I've been dying to try this, but of course once I heard the interview I hadn't seen...
  24. Any possibility that it's not physical - that it's "behavioral"? I put the behavioral in quotes because I'm not trying to say that he's doing it to be stubborn or anything like that. But that the new foods may taste differently to him and he's sensitive to texture, for example. I was wondering if an OT with a speciality in feeding programs might be helpful...
