  2. Gotcha. Now I am wanting to try things I have never even considered before. I would never have made sausage before (Gluten free for only 9mths) or cooking or baking all different kinds of dishes. Now, it seems like an adventure instead of a chore. I KNOW WHY!!   3. Apple in sausage... I would never have thought of it and it sounds delicious! I saw nutmeg in some of the recipes.. and I was not brave enough to try it. Now I will. Why not already ground nutmeg??

  5. Do you have a recipe? I just improvised from googling it and it's good.. but I am wondering if there are certain spice combinations that are 'standard' breakfast sausage?
  6. If you try bread, my (short)experience is that it is very sticky and like a very thick cake batter. If you can, get yourself a stand mixer, it makes it so much easier. My regular mixer was not going to last and the dough climbed my mixer and glopped up the underside. The stand mixer has made me want to bake!
  7. I just have to tell someone. I have never made sausage before and I have been craving breakfast sausage. I bought some ground pork, tossed in sage, rosemary, thyme, and (of course) salt, threw it in my mixer for 5 mins and IT WORKED! I made little patties and they tasted great! One less thing I 'can't eat'. WAHOO!!

  9. I am SOOO there. I keep making the little mistakes, or careless mistakes. I attributed it to fuzzy thinking which I've had for years. It happens mostly when I am either out and about or in a hurry. Duh.. and then - yes, I feel crappy for a few days or more. I think as time goes by I'll get tired of 'shooting myself in the foot' and I'll be more careful...
  10. I'm in Canada so I looked this up because I'm not familiar with it. It is Gluten Intolerance Group® of North America... I am going to look into this.. we're N. America . Thank you for that suggestion, all. Sometimes it seems to take time for things to sink in... so I finally hear that having some guidelines, rules, and regulations in place is beneficial....

  13. I like them because I can toast gluten toast for my son, the crumbs drop down and I can get the rack clean for my bread. For me it doesn't cross-contaminate. Perhaps it would be dangerous for others more sensitive.
  14. I've decided to have the first ever Celiac/Gluten Free support group meeting in the area around our town (100ish mile radius). I have not struggled to the extent that many have nor is Celiac or Gluten problems well known in this surrounding area.   18. Yes, constipation, night sweats 5 yrs ago, bloating, distention, intestinal discomfort, exhaustion... etc. I gave up on the doctors after 5 yrs of going every few months.. Too many tests for other things came back normal and I wasn't willing to go for blood tests (and eat gluten again) once I started eating gluten free.

  20. I hear you on wait times.. I'm from SK. One of the things that has changed for me in 9 mths is that I went from feeling like 80 to feeling like 35..okay.. 50 (but a GOOD 50) again. It would take me a minute or 2 just to straighten up from sitting and all my joints were sore and stiff. I still have some soreness and stiffness but not anything like I did...

  22. I had a chronic cough for about 5 months before going on a gluten free diet. I would erupt in coughing after I ate any carbs. It has taken a while to disappear but it has. Sometimes I still cough a little if I eat a lot of carbs now but it is a miniscule problem and goes away quickly.
  23. To encourage you, my guess is that you will start feeling better right away since your symptoms are so immediate after eating. You need some of the advanced member input here for sure but.. from a newbie (9mths gluten free) I didn't actually find it that bad.. even though it did seem overwhelming. I started eating from 'the perimeter of the store'. Veggies...
