  1. I'm really going to be looking into it for her and already have posted some requests for some frosting recipes. I think the outward appearance of the cake may possibly be the enticing part and it is usually easy to adapt the frosting recipe to suit. I know there are certain gluten free flour blends that work extremely well for certain cakes and I'm contemplating...
  2. She tells me that she never EVER wants to eat a gluten free cake again. 'They're totally inferior to their wheaten equivalents.' It's sad, and as I said the cake looked so good (it wasn't just the average birthday cake) and so thoughtfully made it looked like perfection in many eyes. Even I had a slightly hard time resisting. But of course I did. She figured...
  3. She was never this bad when on a gluten-containing diet years and years ago. I think, as you mention, symptoms can often become more pronounced once a gluten free diet is being followed and one is glutenned.
  4. Thanks for this, it will come to great use for sure! Haven't had a whole lot of experience in home baking (let alone gluten-free home baking) so I'll give it a go.
  5. Also is it possible that the damage could take up to a year to fix, even if she remains on a strict gluten free diet for the year??
  6. She says that she's never been this ill from gluten consumption in the past. I was quite surprised it got to that point myself, as she has often managed to 'get over it' within a day. I don't know that she has learnt. She said it was just like what she remembered prior to her gluten free days. The texture was very appealing too; but I try not to focus...
  7. I myself am really tired of restaurants falsely advertising gluten free foods. Here in Australia, many restaurants and food service outlets offer gluten free menus. Many of these places then add fine print to disclaim that the items may contain traces of gluten. I am taking a variety of companies to task on FALSE GLUTEN FREE ADVERTISING on my HubPages...
  8. In terms of gluten free, you can never go wrong with long-black! Then you'll know for sure whether it's the impact of gluten
  9. Welcome! And I hope that you too can gain what I have from this board
  10. So good to hear things are coming right for you!! That's great news! Unfortunately I've been down and under the weather lately and I believe it's because the kitchen staff at my residential college aren't taking necessary precautions. They recently got very annoyed with me about the deep fryer situation when I asked them about it (GOOD THING I DID!) and...
  11. Thank you for all your comprehensive replies. Well, the wedding day came; the cake looked so decadent and delicious even I could barely raise the bar for myself, but I managed to resist. The same couldn't be said for my friend. She gave in (which I suspected she might) three days ago and still is not in good shape. She was in agony for about 48 hours...
  12. Here is a picture of a decadent-looking chocolate cake. There is no recipe that I could find for it anywhere, I just saw the picture and thought 'oh, how nice would it be if I could make this gluten free!'. I'm certainly sure it's possible. Particularly as I'm mainly interested in the frosting ingredients and how you'd get such a nice smooth and consistent...
  13. Good point. I believe she actually has been really vigilant. I think (just reading between the lines) that at a recent party she saw one of the 'nicest-looking chocolate cakes ever' (or as she quoted - she didn't give in that night). She dines out a lot, she's not really into making her own food and seeing as though so many restaurants and food service...
  14. She believes that she'll be ok if she only does it "once a year". I'm not convinced though.
  15. I thought she'd most certainly have a violent reaction. She tells me that she plans to do it once, only once. She just wishes to gauge the texture of a normal piece of cake to help with her cooking experiments for gluten free cakes The coeliac society says it takes three weeks for your gut to heal after consuming gluten. I believe this is for trace...
  16. So by what you're saying, is it possible that she might be able to eat the whole piece of cake without her immune system responding negatively or noticing the gluten? I never realised that this is possible...
  17. I have a question: My Friend is Coeliac, What if she decides to eat a piece of Cake? This is her statement: What do you guys have to say? Do you feel that it will only take 3 weeks for her gut to heal should she 'give in' or do you think it could do damage that will take longer to heal (even if only once a year)?
  18. I have the DQ8 gene but not the DQ2. I wonder if gluten free options will decrease in shops as a result? I also think people will go back to eating all the breads in the shop (which contain a multitude of other stuff such as soy flour, preservative E282, etc. and more. People won't even think about food. It will all be about the EASE! EASE...
  19. I don't have the DQ2 gene either. So it won't work for me It will only work for 90% of the coeliac population (i.e. the people who have the DQ2 gene who are affected by the disease). Do you possess the DQ8 gene by itself by any chance?
  20. I might also add that many restaurants I've complained to (about gluten free menus containing a disclaimer) have now resorted to the 'gluten friendly' label. Have these establishments not a clue? THE GLUTEN FRIENDLY TERM IS ILLEGAL in Australia. The business could go bankrupt yet many insist on participating in this whole stupid marketing ploy!
  21. One thing I would like to add to this, however is that here in AUSTRALIA it is ILLEGAL for businesses to advertise food items as gluten free unless they contain ABSOLUTELY : NO detectable gluten, NO oats, NO cereals containing gluten that have been malted. Many food service businesses have 'half-heartedly' come to play recently suddenly offering...
  22. Did you know, that it is estimated that approximately 1 in 67 people have coeliac disease! That means at college there are at least 3 other people who are losing out on their quality of life and limiting our gluten free options for absolutely no good reason at all. They need to listen to their bodies and SORT THEMSELVES OUT!

  23. It's something we've gotta be prepared for. Really talk to the restaurant manager though. It's really important that this is done as many restaurant managers and chefs I find are willing to talk (particularly in the early hours of the afternoon). Hope all goes/went well
  24. Sorry to hear about your glutening. This is always a possibility, though and one which we simply can never fully avoid. I have experienced so many symptoms. Sometimes my mouth gets ulcers along with other things as well It's hard.
  25. No, grains that are processed in a facility that processes wheat are NOT gluten free. Sorry to bear the bad news Have a great day, and best of luck finding grains that are NOT processed in any gluten present facility
