  1. I thought about nightshades, but I'm able to eat potatoes with no problems. It's one of my staples in fact. So far, I can eat meats, eggs, peanut butter, potatoes, white rice, white rice crackers, corn products, lettuce, carrots, oranges, tangelos, strawberries, blueberries. I am very tired of my limited food list! I know I have problems with fructose...
  2. I think my bloating, pain, and burping may be from the tomatoes I added back in 2 days ago, but thought I'd ask about casein, too. For 8 weeks or so, I had been eating only lactose-free dairy. I took ALL dairy out for one week. Added it back 7 days ago. If I'm sensitive to casein, symptoms would have shown up before this, right? (Please say "yes"! I'd...
  3. He's an amazing doctor! He's absolutely brilliant and could be typecast in a movie as a research scientist. He also said that he routinely gives vitamin B12 to people who's levels are considered normal (like 240) and sees improvements. Said that he thinks the current minimum recommended level is too low for many people. I love that he listens to patients...
  4. My neurologist just diagnosed me this week with celiac despite negative bloodwork and no biopsy. I brought him a written record of what I did for my gluten challenge (eating it for 4 days) and what my symptoms were. He already knew about my low vitamin D levels and my neuropathy, and he was the one who told me to try gluten-free. I asked him if he thought...
  5. I saw the unedited version, so my reply is based on that. Honestly, if you were a friend of mine, I'd advise you to think VERY hard before getting more involved with this woman. I can understand one unplanned pregnancy because things can happen, right? But that number plus her ignoring a medically necessary diet speaks of a recklessness or irresponsibility...
  6. Thanks so much for everyone's help! I have flours, cookbooks, and pizza pans on order and being shipped to me. I'm going to get a stone soon. I figured I can at least cook the frozen pizzas on the pans until I get a stone. (The kids' favorite frozen ones are 40% off or something at Sprouts right now!)
  7. I am a member of that group, thanks! I just thought i'd get the celiac point of view. I met with a dietician last night, and she's encouraging me to start testing foods and see how it goes. I really look forward to the cookbooks I ordered and the flours. It's hard to make the kids gluten-free bread from the mixes I have and not be able to try it...
  8. Thanks for everyone's suggestions. I didn't think about the gooeyness of the crust dough. I haven't made one from scratch yet, so no experience with it yet. I have a couple of gluten-free baking cookbooks and some flours coming my way, so probably next week. (The nerves in my legs are shot from a gluten challenge I did, so I decided to avoid baking for...
  9. I'm 42. I already had a colonoscopy to rule out Crohn's and IBD. I had gone to a GI for constipation and lower, right abdominal pain. Before the colonoscopy, I called my GI to ask him to check for celiac while he had me under, and he said that he saw no reason to do the procedure since I didn't have any signs of celiac. (I have constipation and not diarrhea...
  10. Despite my bloodwork being negative, my neurologist insisted I try gluten-free for my peripheral neuropathy. I just did a 4-day gluten challenge on my own, and he was right! Now I'm trying to figure out if it's MORE LIKELY to be celiac vs intolerance. I will NOT eat more gluten to get a biopsy, so I know I can't know 100%. (Though I wonder if being gluten...
  11. I read something about bad breath on a food intolerance list I'm on. One person mentioned that diabetes can cause odor. Another mentioned this link: Open Original Shared Link (low carb diet causing bad breath) I personally don't know anything about this topic, but thought I'd forward this info in case it helps...
  12. Putting the issue of cost aside, would a pizza/baking stone or a pizza pan be a better tool to use for pizza? I have 4 kids ages 4 - 12, so I'd prefer to have 2 pizzas in the oven at once. I'm not sure if you can have 2 pizza stones in the oven at once?? For a pizza pan, I'd either get a Cuisinart non-stick one or a Lodge cast iron one. For a stone...
  13. Thanks for the suggestions. I made the pasta in an unscratched stainless steel pot I had scrubbed VERY well. Brand new strainer only used for gluten-free food. I only used butter on the pasta and have since used buttter with no trouble. Another reason I suspect brown rice is that I had a lot of burping (unusual for me) when I first went gluten-free. ...
  14. I definitely do not tolerate brown rice. The first few weeks I went gluten-free, I could eat it without much trouble. But about 5 weeks into it, I reacted to Tikiyada brown rice pasta - 2 days after eating it, I had bad stomach pain for 2 days. I waited a couple of weeks and ate one serving of Lundberg brown rice to confirm that that was indeed the culprit...
  15. She had one a little while ago that I think was caused by hormones due to its timing. BUT it only lasted a day instead of 5 days like the ones she had before going gluten-free. She's going to stay gluten-free for awhile to see if it helps next month as well. Just this week I determined that gluten definitely causes my neuro symptoms (did a gluten challenge...
  16. I bought several of these dining cards and love them! Open Original Shared Link The color coding is very nice, and they're laminated. I keep one in my wallet. I also like her grocery guide. It fits into my large purse.
  17. Please do! My 7yo would love you for it!!!
  18. If you want a mix, my kids tell me that King Arthur bread mix made a good loaf of bread. It worked out fine and was my first bread to make. (I get stomach pain from eating brown rice, so I couldn't eat it the bread myself since there's brown rice flour in it.) My kids are very picky, so I was thrilled that it worked! I also found the customer service...
  19. Here's a link to Nature where you can view the scientific article's abstract: Open Original Shared Link I may buy this one (costs $32 to view the full article) since my GI woes and increase in neurological problems started when I took Accutane 2 years ago.
  20. I was going to wait a day or two to start my challenge but figured it made sense to go ahead and try! LOL! I took your advice and ate gluten twice yesterday (too late to do it 3 times when I read this) and once this morning. My stomach symptoms pre-elmination diet were gas, bloating, pain, and constipation (chronic pain in lower right abdomen due to back...
  21. I did think of one thing to add. It take take up to 2 or 3 days for a reaction to set in after you eat a food you don't tolerate. I discovered that two days after I ate brown rice pasta I had bad stomach pain. Waited a little while, then tested brown rice - same reaction and same timeframe. So what you eat right before you feel bad may not be the food...
  22. I just called them and got the "We do not put any gluten into our products, but we can't guarantee our suppliers haven't, and since we don't test for the presence of gluten, we don't recommend Gas X for those with celiac" answer. I asked if she had listed what the flavors or starch contain, and she said it was not listed. So who knows?! Gas X chewables...
  23. I haven't used Gas X since I went gluten free because I'm wanting to keep track of my reactions. Decided I could use one tonight. glutenfreedrugs.com listed Gas X as safe. I ate a chewable one and then found that many people here say they have gluten! Do they still have it, or is this old info? Would it be in the starch? It's too late for me to call...
