    How long did you stay on the "Intro" diet. Also, where did you get your calcium from if you started introducing cheese 5 weeks into the diet?
  3. My GI says he thinks I have IBS, not celiac, but I am 100% certain that I cannot handle gluten. Just wondering if anyone else in same boat....

I just sort of jumped in it (I ordered the book- it ins't in yet...) and everything I have eaten has been "legal", but is there some sort of chronological sequence to the way things should be introduced?   8. Thanks all very much for the response. I have had blood tests done and these emphatically showed that I had celiac disease. My levels were 3x what they should have been. The doctor kept asking me if I have any diarrhea, which I haven't... he immediately said, I don't think you have celiac disease, but instead IBS. I was extremely frustrated. I have been...
  9. From my experience, the Dextrin is usually bad. Maltodextrin is another very common ingredient. I stay away from it, always.
  10. I am 100% sure I have celiac, but I just went to a specialist that told me it is most likely IBS. The thing is I GAIN weight when I eat gluten, so I guarantee my biopsy is going to be negative, but the point is, I am still intolerant to gluten, which is the definition of celiac.   11. That is so ironic, skbird. I am 5'10" as well, and this morning weighed 155. I was 149 not that long ago, so it just bugs the crap out of me that I am stuck and cannot go below 155 no matter what. The weight is all located in my lower stomach, so I definately want that to go away!!!

    I definately don't understand why I am gaining weight. It seems like simple mathmatics to me.... don't take in many calories and have your body burn more than what you take in and you lose weight. That has been the most disappointing and frustrating part for me. I am the healthiest eater and don't eat more than 1200 calores daily, but can't get weight...
  14. I definately gain weight and no matter how few calories I eat, I am stuck at a particular weight. I have learned to read my body really well (I self-diagnosed this disease), and I really feel like my metabolism is in slow motion. Anyone else?

I am EXTREMELY sensitive to gluten, so I know for a fact that I would have symptoms even if it was just a small crumb, so to say that everyone can have up to x amount of ppm of gluten and be fine is an overstatement. I have experimented with my body and I know my limitations. I have learned the hard way.... you can never be too careful!!

  17. I eat so incredibly healthy, but I too cannot lose weight. I just feel like my metabolism is in slow gear. I eat very few calories per day (maximum of 1500), but I still continue to gain. After having a gluten attack and blowing up like Shamu's cousin, I will lose that weight very quickly, but then I get stuck at a weight and no matter how much I diet and exercise, my weight won't budge!!!
