jenvan- spices... I believe no spice mixes are allowed, but single packaged spices are definately encouraged. cheese- I eat swiss and mild cheddar. no shreaded cheeses in bags are allowed because of the potato starch you mentioned. Look at the cheeses in brick form. I definately stay away from canned anything, so I don't eat the canned beans....

I am thorougly CONFUSED, so SCDers please help. Okay, in breaking the vicious cycle, it says canned fish in WATER/OIL is legal, but soy products are ILLEGAL, so I am unsure as to if I can eat canned tuna in water because it contains soy!!!! Sometimes I just get hung up in the details, but I guess with this diet you can never be too careful!

As a gainer myself, I also had hypothyroid and since getting that straightened out, I have lost +/- 10 lbs. I just try to fill myself on all of the fruits and vegetables I want, but I make sure I eat protein at every meal and dairy (yogurt for me!). I am not much of a plain yellow mustard eater, so with my tuna I eat spicy brown mustard. There are only like 4 ingredients and it is all natural without the loom of the "spices" ingredient (I hate that because who really knows...). I forgot to ask the SCDers if anyone used bottled mustard from the store. I thought I read in the book we could, but then later I read about mustard powder, so I am not sure what to do. I just happened to be skimming the book yesterday and I read that it was lega to eat canned tuna? Starkist tuna has vegetable broth in it which contains soy, and for some reason I thought it was NOT gluten free, much less legal on SCD?

Just had to mention how cute he was.... also, I don't know if I mentioned this but I did awesome on my Optometry test and will be entering Optometry school next year most likely at UMSL (MIssouri- St. Louis)... lol

I was wondering if anyone has completed their first year of the diet and has tried to integrate in some of the "illegal" foods. I know the book says that once you are on this diet, then you shouldn't revert to all processed and "nasty" foods after a year on the diet. I am not sure if it will just not let you feel good or if it will get those bad bacteria...

You will continue to feel better and better and I am very happy that you started the diet. I wish everyone who had celiac started out with this diet because I think some people forget what it feels like to feel normal. I know someone posted the other week saying what percent they feel most days and the average was like 60%. I feel 110% each and every day...

Corrine- you definately are not the odd one out. My GI specialist insisted that I did not have any problem with gluten at all because I was a gainer. I basically had to self diagnose the gluten intolerance thing myself. SOme doctors aren't up to date on the current celiac trend from skinny emaciated celiacs to overweight ones. -

I make my own yogurt. I was not losing weight eating all of the cheese like I was before, so I needed a good calcium source. I really like the yogurt and have improved immensely on the diet since getting a yogurt maker.

I have not tried the custard. Does that require DCCC? I have never purchased that or ever seen that in a store before.
