  1. Hi! I sure hope your chicken pot pie works for you. This morning, on my fourth attempt overall, I finally created some cornbread that I actually enjoyed eating and will serve to family in a little while. I understand your frustrations, at least partially because I was a home ec major and used to bake several times a week, always from "scratch". Well...
  2. Hi, sorry you're having so many problems right now. I don't know anything about the rest of the problems, but the caffeine in the BC powder could certainly be responsible for your insomnia. Some people are very sensitive to caffeine. Maybe you are one of them? I hope someone else has some answers for you and you get better soon.
  3. Hi! Has your thyroid been tested? Having a problem with thyroid is pretty common with celiac and several of your symptoms could be related to underactive thyroid. I have to agree with Gluten Dude about being patient. We all WANT to heal quickly, but our bodies don't always do what we want, do they? Also, it's possible that your gluten sensitivity has...
  4. Hi, again, Shayori. Two cookbooks (for multiple food intolerances) that work well for me: Free for All Cooking by Jules E Shepard has lots of good information and fairly easy recipes, the other is Cooking for Isaiah by Silvana Nardone. It's gluten-free and dairy free. Another good book for information is the gluten-free bible, but the recipes do have...
  5. Thanks for the suggestion. I'll try them. My attempts to bake (and I LOVE to bake - was a home ec major) have had dismal results. Not only do I have to be gluten free, but also casein and egg free. The texture of my baked goods, so far, leaves a lot to be desired. But, I'll keep trying. Thanks, again.
  6. What do I miss most? - Really good bread, still warm with a crisp, chewy crust and soft middle. - Pizza and pizza "bones" (the outer crust that people sometimes don't eat!! ) - flaky biscuits - cornbread - brownies I have to quit. This is torture!!!!!
  7. I'm a little reluctant to respond because you're not going to like what I have to say. First, your life just changed. You have found out what has been making you feel bad, but I think maybe you're still doubting that this is a long-term thing. You can get to feeling better, but it will take a TOTAL commitment on your part, not just kinda sorta half...
  8. I think reaction time can vary a lot from person to person, even from one exposure to the next. Are you sure it's lactose that is causing your problems? Maybe it's casein, the protein in dairy products. Maybe you could stop all dairy for, say, at least a week, and then try some. That wouldn't tell you if it was lactose or casein you are reacting to, but...
  9. To put it simply, casein is milk protein. That is a different substance in milk than lactose, which is milk sugar. A person can be intolerant of one, or the other, or both. It sure sounds from your description that you have a problem with at least one of them. My suspicion is that if you keep "hammering down" the yogurt, you will continue to have problems...
  10. My reaction is pretty much the same from everything on the "gotta avoid it" list. For me that includes gluten, dairy, soy, eggs, yeast, several spices, and turkey, and other things to a lesser extent. Even a hint of those things and it's a must to be close to a bathroom for several painful hours. So, it's not easy, but it's a must to be ever vigilant....
  11. Just curious. If you're allergic to dairy, why are you still eating yogurt? Doesn't it cause you lots of problems? I do understand about family members giving you grief. I've been told my whole life that my gut problems were all in my head (doctors and family). Finally, we have tests that can prove it.
