  1. Happy birthday and may God bless you today!

  2. Yes - really thin - like thin pie crust would be. I don't particularly like the Chebe breadsticks. I just use the mix for pizza dough or these "cups." One secret I found is that you have to work with it a little more than regular dough. My mama always told me not to "overwork" my dough, but it's hard to do that with Chebe. I roll it out, ball it up and...
  3. Forgive me if I have posted this already: I take bread dough - I like to use Chebe garlic breadstick mix or Pamela's Biscuit Mix, but anything will do - roll it out and cut cirlces with a biscuit cutter, lay the circles into mini muffin tins and bake on medium heat for about 15 minutes. You can use these for any meal of the day. Some examples: For...
  4. I will get to the bottom of this. ------------------------------ And yes - I do have symptoms - severe ones - when I eat gluten. I realize that some people don't, but I do and that's a pretty good indication to me - if I don't get sick after eating something then I assume it's safe.
  5. I think Wal-Mart is going to do the "Gluten Free" labeling.
  6. *Ask them if they would perfet to drink very fresh new battery acid, or older somewhat used battery acid.* LOL!!! Thanks guys for the response to this post. I was kinda thinkin it was a little silly to think you could eat a "younger version" of wheat and that be ok. I mean - it's still freakin wheat! Anyways! Tiffany, how did you get so...
  7. I've seen the list of "safe" brands on here (I think it's Kaiti who posted?) but I was wondering what that meant. Ok, for example, if a product from one of those companies contains maltodextrin, am I safe in assuming that's from a gluten-free source?? Please clarify. I'm still confused.
  8. This is me totally. I've ran a stoplight, almost been in countless accidents, zoned out in meetings at work...you name it. The "brain fog" was the FIRST symptom I had that led me to find out about Celiac. I remember I had a test in one of my college classes and (I've always been very studious, but) I could NOT concentrate to study. I would try to read and...
  9. ...anything with peanut butter is great. I understand about the carrot sticks. I never can get full eating raw veggies! I'm addicted to Seneca Granny Smith Apple Chips right now - they're like potato chips, but not. They're actually not even much healthier than potato chips, but I trick myself into believing that if it's from an apple it has to...
  10. FYI - Just got some Multi-Symptom Rolaids - helps with gas too! SO GREAT!!! I'm going to use these from now on.
  11. I actually had this same question. The Mexican Tortilleria here uses the Maseca corn flour to make fresh tortillas with and we eat those quite often. I've never gotten sick from it, so I'm assuming it's safe - And really yummy! I'd like a recipe for tamales if you can share??? My hubby has been bugging me for MONTHS to make him some, but I'm a little...
  12. celiac3270, you're so awesome to do this. I know it must get tiring, but could I pretty please have a copy as well? Email is kristen_varney@yahoo.com Thanks SOOOOOOO much!! MWAH! (That's a kiss!)
  13. I've been wondering about sprouts for awhile, and a post from em2005 about supplements reminded me that I should ask this here b/c it might benefit other people as well. This is a quote that a company sent her: "...All the grasses and sprouts in greens+ are harvested at a tender age before any gluten is formed. You can rest assured the product contains...
  14. We've eaten at several places in Buckhead and I haven't had any problem - but I usually get salads when I go out. Bah! I'm not a lot of help.
  15. For the first six months of our marriage, hubby and I lived on beans and rice. Wal-Mart has pinto beans for $.50 a can - cook those on low with a piece of bacon for an hour and it tastes like my mom's beans that she would slow cook all day long! But it gets old...FAST. I think that was my motivation to learn to get creative with my shopping/cooking. Now...
  16. I posted this elsewhere, but it may be easier for people to find here. I can elaborate if anyone is interested. These are all uber easy recipes. ---------------------- Dinner ideas: *Ground turkey or beef salisbury steak with garlic mashed potatoes and green peas *Tinkyada pasta, either penne or fettucini, Classico Alfredo, Grilled Chicken, chopped...
  17. allergygrocer.com You can search by allergens. Wonderful site.
  18. I think I posted this somewhere else, but it's so yummy I'll post it here too! For the meat (we use ground turkey), mix with Manwich (yep, it's gluten-free). Put this on top of corn tortillas with a sprinkle of cheese and the following salad mixture: Shredded lettuce, chopped tomatoes, mayo or miracle whip, dash of salt and Mrs. Dash - Mix all this...
  19. Ahh! Hope I'm not too late in replying to this for you to cook for your guests. So...scramble the eggs, put em in the bottom; cook the bacon (I put it in the microwave on several layers of napkins - less greasy that way - or use turkey bacon) crumble it and put on top of the eggs; cover with shredded cheese; put in the oven (say on about 400) until the cheese...
  20. I was pretty thin before celiac disease - about 118 lbs (I'm only 5'3ish). I got up to about 148 at my heaviest (before being gluten-free), but now I'm more like 130 (I've been gluten-free for nearly 2 yrs now). I feel healthier than I've ever been, but I definitely don't look like one of those stick-thin models. I'm quite curvy and I kinda like my new figure...
  21. A lot of times, vermicelli is made from wheat. You may want to check that. However, there is also rice vermicelli (I just found out). But yes, it does sound that you have been glutenized. I'd stay away from the Asian Mart - I don't trust ours anymore. Stick to simple things...plain rice, veggies, meat - watch the marinades and sauces. This board has plenty...
  22. I can't wait to try this recipe for buns, but I was wondering...what brand of hotdogs do most people use? I've always been skeptical of hotdogs b/c it's just a mix of so many different things. But my hubby loves them and I would like to be able to make them without any worries.
  23. So I went to my local supermarket today to pick up some corn meal and gluten-free flour to make the cornbread I've been craving for a week. Got home - was SO excited - opened up the corn meal - BUGS! Opened up the gluten-free flour - more BUGS!! Apparently they don't sell a whole lot of this stuff, so it sits on the shelf for quite awhile. It wasn't...
  24. I'm 23 and from GA - I don't check this board a lot, so I'm a little late replying. I just wanted you to know that it does get easier. I found out about Celiac when I was about halfway thru college. It was hard at first b/c of all the fatigue and brain fog. I had to totally destress my life - which meant giving up my editor position with our college newspaper...
  25. My Mother-in-law sent us a huge package of these for our anniversary. I didn't get sick at all - they were totally YUMMY!!! We had an assortment pack - burgers, filet mignons, boneless strips, etc. I looked for gluten info too, but couldn't find alot. I thought about writing to the company, but since I didn't get sick I wasn't too worried.
