  1. I really love the Schar baguettes. You crisp them up in the oven before eating, and they taste JUST like regular French baguettes. The problem is they're hard to find and expensive (about $7 for two small baguettes). WalMart often carries their regular soft rolls, but I don't like those nearly as much. Open Original Shared Link
  2. Yesterday was sweet & sour pork with stir fried veggies. Gluten-free sweet & sour sauce (can't remember the brand name), added chopped pineapple and onion, simmered on the stove Pork cut into cubes, dipped in egg, rolled in corn starch, and then fried in a wok until golden brown Celery, onion, carrots, broccoli, garlic, ginger, and bean spouts...
  3. I lost about six pounds the first week of being gluten free. The I discovered those tempting gluten free snack foods, like cakes, crackers, breads, and Pirate Booty (I'm a total addict to that stuff!). After about a month of eating those I put on all the weight I had lost plus about 8 pounds. Now I've cut all of that processed stuff out, and I'm trying to...
  4. Are you sure it was the chicken soup that glutened you, and not something before you started feeling ill with that bug? I was glutened for the first time last week, and it started with what I thought was a bug. After a couple of days those buggy symptoms went away and were replaced with more typical gluten stuff, like stomach issues, headache, disconnected...
  5. It is SO relieving to hear about these stories of other celiac/gluten intolerance folks who have also struggled with anxiety. Thank you so much for sharing them! I remember having anxiety attacks as young as 4 years old, as well as hyperactivity and severe temper tantrums. The doctor suggested it was food-related (yay!) but said the cause was actually...
  6. The change in water drinking makes a lot of sense. A lot of balance and vertigo problems can be caused by a fluid imbalance in the ear, often caused by fluid retention. I've had some vertigo spells, and my doctor said that I probably have Menieres disease, which is an inner ear disorder that can be exacerbated by water retention. I have no idea if it...
  7. Oh that sounds so familiar! My problem was that people started to think I was stupid, add to that all the time at work I missed and people thought I was stupid AND lazy. No one wanted to hear "I'm sick, but no doctor can find what's wrong with me. Can I have another day off?" Where I work if you miss more than three days due to illness a doctors note is required...
  8. I started feeling better after a week too, but not completely healed. It's been over four months, and I sometimes have setbacks, but the healing is still continuing. The first things to disappear were the D and the headaches, and the energy came back very quickly too. But the anxiety part, although reduced, is something I'm still struggling with. The brain...
  9. I'm not an expert, but wanted to give my two cents. I've never been officially diagnosed with celiacs, but cutting gluten out of my life was the only thing that solved all of my varied health problems. I don't think there is any benefit to being officially diagnosed - if cutting out gluten solves your problem, then you have an answer. That was good enough...
  10. It's very possible that the past damage to your ankle has caused permanent damage, and that could cause you to keep re-hurting it. When I was about 11 I twisted my left ankle really badly, and it was black with deep bruises and very swollen. An x-ray showed that it had a small fracture. Since then it has continued to give me problems. When I was a teen...
  11. I had a sore jaw for years too. My dentist said it was TMJ, and took my wisdom teeth out to try and fix it. It didn't stop the pain or stiffness though. Very probably a gluten reaction. Like you I've had lots of different symptoms, and every now and then someone will mention something in this forum and it'll be another "AHA!" moment where I can link another...
  12. I love taking hot baths, so I'll definitely be trying that idea! I used to take low-dose Xanax, but it didn't do much. It helped me sleep, but the anxiety would still be there when I woke up. The only thing that has ever helped is going gluten free. There's an old thread that came up in a search that recommends taking daily fish oil. That makes a lot...
  13. Hi All, Before I went gluten free I frequently went through episodes of extreme anxiety and panic attacks, sometimes lasting for several months at a time. The panic was mostly irrational, but would increase over any little piece of stress life threw at me. This anxiety was so bad that I would gladly replace it with the worst physical pain I had ever felt...
  14. Pepto did nothing to help my gluten-related D. I never found anything that helped...other than quitting gluten.
  15. Since going gluten-free I can't drink coffee anymore. I used to occasionally experience an over-caffeinated feeling with coffee, like jitters and trouble sleeping. But recently a single cup of coffee will make me feel ill, and the caffeine symptoms are so strong that they worry me. No more coffee for me. Do you think this might be because my body is now...

ARCHIVED How To Trust Doctors Again?

Lots of people on this forum have had bad luck with doctors, and I'd like to know how you ever managed to trust another doctor again after years of misdiagnosis and hurtful comments from supposedly educated professionals. It wasn't until I gave up on doctors altogether that I tried elimination diets (on the advice of a co-worker), and found the gluten link...
  17. I had almost exactly the same symptoms as you, missed a LOT of work, and also the same battle with doctors. It's so depressing when you know you feel ill, and these experts with years of medical training look at you and call you a faker. Many of my coworkers also though I was faking when I missed work, which really hurt. The problem with Celiacs is that the...
  18. I also gained a LOT of weight. My weight gain started in 2006, and by 2012 I had gone from 175lbs (a healthy weight for me) to about 275lbs!!!! I put on 30lbs of that in just two months in 2011 when my doctor prescribed an anti-depressant that didn't agree with me (she was picking at straws trying to figure out what my problem was). I tried and tried to lose...
  19. Stress fractures in the feet can be linked to Celiacs? Do you have some more information about that? I've dealt with stress fractures (specifically in my left foot) for SO many years, and I never had a clue that it could be linked to gluten. I just read that line in your post, and it was like a lightbulb went off.
  20. Yes on number one. I've had a wide range of health problems for about 10 years, and all the specialists I went to weren't able to offer a solution, and I didn't get any relief until I stopped eating gluten. But looking back now I can see symptoms stretching all the way back to childhood. Definitely no on number two. I had stomach issues for years, so what...
  21. Human ancestors used fire to cook food since well before we evolved into our current "Homo sapien" physical state, so I'm not sure why beans wouldn't be included.
  22. Can anyone recommend a good gluten-free multi-vitamin? I've tried a few, but keep having bad reactions to them. Even though they say "Gluten Free" on the label, I feel glutened a few hours after taking them. Is there any reason why a supposedly gluten-free multi-vitamin would do this? I don't really understand how these supplements work with the body...
  23. I had both migraine and sinus headaches, usually multiple times per week. Since I went gluten-free about 4 months ago, I've had two headaches. I used to go through so much Excedrin that I'm sure it wasn't healthy. I was also treated for GERD, and haven't had any of those problems since going gluten-free either. Seems to be a common theme. I used...
  24. Their gluten free section is...interesting. In my area they only highlight gluten free options that are also in the low calorie section. There are other things on the menu that are gluten free or can be easily adapted to gluten free (steaks for example), and I'm not sure why they aren't marked as options too. The service at both of my local GC locations...
  25. Whoa! Don't bite my head off. I did say that it was an old thread and the recipe may have changed since then. How is linking to an old thread "spreading rumors"? The fact is, those processed cheeses have lots of ingredients, and may or may not contain gluten. It's going to depend on the brand.
