  1. Thanks everybody. You gave me some ideas to work with.
  2. I have that cookbook too. It's a really good reference.
  3. I need ideas for protein snacks for when I have a blood sugar low. I need something I can carry with me. Also needs to be low fat and low salt, so things like cheese and jerky are out. I'm not a big fan of commerical bars, but am open to recipes for homemade protein bars. Sorry to sound so picky but I'm getting tired of almonds and am running out of ideas...
  4. Lisa Lundy has roll recipes in her book that call for baking powder instead of yeast. There is one that we really like. I just looked and I didn't see any loaf recipes however. The book has a really long title -- The Super Allergy Girl Gluten-Free, Casein-Free, Nut-Free Allergy & Celiac Cookbook From a Mother Who Knows. She has some different recipes...
  5. Our main meal of the day is lunch. I'm going to throw together some fried rice from leftover roast and frozen veggies. I always include the egg and make it spicy like my college roommate from Thailand did.
  6. I have good luck with either sorghum flour or brown rice flour. I think the brown rice is crispier but the sorghum is a really pretty brown. Other than that I fry chicken the way my mom taught me. I dip in egg/milk mixture then in flour with lemon pepper and paprika -- paprika helps with the browning. I double dip to get a nice thick crust. The key to...
  7. Love spaghetti squash here too. You don't want to overcook it though -- that's when it gets mushy.
  8. I got a really good deal on ripe peaches so we have peach cobbler. Just used the recipe from my good ole Betty Crocker cookbook with a few substitutions. I had forgotten how good cobbler is.
  9. My husband helped get me through the "there is nothing left to eat and I'll never be able to cook again" phase by making a list of foods I could still eat. Even with other restrictions there were still many things left that I could eat. I started out slow with stir fry and lots of salads, but now I can make just about anything gluten free. Focusing on what...
  10. I don't have recipes -- I just wing it. Usually start with milk (I use almond, but use what you can tolerate) and bananas (usually frozen). Then I just add whatever strikes my fancy. Sometimes fresh or frozen fruit. Sometimes pumpkin and pumpkin pie spices. My favorite is dark chocolate. I add flax seed meal to all my smoothies for an extra nutritional...
  11. A have a couple of ideas that are variations on fruit -- but they would be something a little different. I make a drink in the blender that is like a slush with fresh or frozen fruit. I use enough water to puree the fruit, then add ice to make it really thick. We like to eat it with a spoon. My favorite combination is peaches and strawberries, but you...
  12. I try to always keep homemade soup in the freezer. But my favorite quick meal is stir fry. I keep Boneless/skinless chicken breasts in the freezer. I also use frozen veggies (either stir fry blend or large cut varieties) if I'm in a hurry. If I have chilli in the freezer I sometimes put it over microwaved sweet potatoes. Bob's a big salad lover, so I...
