I agree, it really is important to get enough good fats in your diet too. We have become conditioned to avoid fat, but it's just as important as all the other food groups. While I'm so sensitive I don't really trust anything unless it has been prepared in a certified gluten free facility and has the symbol: the black circle with G F inside it. Same here. I can't tolerate many things temporarily until my intestinal lining heals. In my case, on top of gluten, I also get the same reaction right now from rice, corn, eggs, and nightshade plants (potatoes, tomatoes, peppers). I have been using So Delicious coconut milk for months or a Trader Joe's brand with similar ingredients.
